Comments (8)Ditto about the salad, most people these days seem to expect and enjoy a salad with their meal. A few months ago, I had some of dd's friends over. I put out a bowl of mixed greens. I have a pretty ceramic popover pan (7 cups, for some odd reason), that I filled with things like: dried cranberries, mandarin oranges, nuts, crumbled blue cheese, etc--sort of a salad bar, but since we were eating family style, the multi-cupped serving piece made it easy to pass the toppings. The guests all loved the salad, and really dug into it. As to the second main dish, I'd go with something lighter, remembering that some people don't eat pork for religious or health reasons. And a lot of people don't eat red meat, either. If the idea is to give your guests a real choice, then I'd think chicken or fish, served in a light style, would be a good choice. There's a good orange chicken recipe that's all over the web--google Orange Walnut Chicken and look for a recipe that uses orange juice concentrate. Comments (97)Christmas Eve is our big family gathering, we include a dinner for 20. We serve buffet style, but sit at dining tables. (I discovered that 20 is the perfect number: 10 at the DR, 10 in the sunroom at two folding banquet tables) We went with a simple dinner menu this year: beef tenderloin, mashed potatoes (two trays from costco, they were great, and pretty in my new red-orange Dansk pan) and a simple Chistmas salad my aunt made. Elegant! Appetizers were made/brought by others: just shrimp w/sauce, an artichoke dip with crackers, and my kids always make the classic Lipton soup dip. Dessert was the most complicated: DH made his mom's Walnut glory cake which calls for 9 count'em 9 separated eggs. But it's not called "glory" for nothing! Our Scandinavian tradition calls for rice pudding which, for the first time, came from my kitchen. It was a tad soupy, but delicious. And folks brought cookies and candy. Christmas morning DH made our traditional "Eggs McDH" and mimosas. We forgot to make the fruit medley, but that's okay. Then we went to my folks' and my brothers met us up there, for baked French toast (made with Challah, best French toast ever!) and bacon. Christmas night is our quiet intimate dinner at home of leftovers, at the dining room table with the party dinnerware. Comments (13)I wanted to follow-up after the party and thank everyone who provided suggestions. The party was a huge hit and all reports are that the food was amazing! After a few weeks of testing options for an entirely pre-made meal here is what we ended up with on the menu: For cocktail hour in the parlor we had shrimp & cocktail sauce, a cheese tray with crackers, warm artichoke dip with sourdough baguette slices, a veggie tray and bruschetta with tomatoes, garlic, basil and parmesan. For dinner we had: salad of mixed greens with red onion, candied pecans, dried cranberries and feta. Entree choices were Chicken Marsala, individual Beef Wellington served with a port mushroom sauce, or Salmon served with a lemon, caper and white wine sauce. All entrees were served with garlic mashed potatoes and roast baby asparagus. For dessert we had a 4-layer chocolate torte or a northwest berry crumble with vanilla ice cream. I rarely post, but I visit this forum often and I just want to say thank you again to you regular posters and advice givers . . .it's always much appreciated! Comments (15)Update: Dad said he wanted matzoh ball soup. He has new neighbor friends he's invited to dinner, and he's been talking up the soup so he wants me to make it. I think that means I am going with chicken for the protein. I'm torn on what to make. My Moroccan chicken recipes are one with apricots which is only slightly orangeish due to being colored with paprika, and the other one is with saffron and peas and golden raisins and is yellowish. I could add some red pepper and cabbage to either recipe. But neither one calls for tomato. I am getting that mixed up with Mediterranean style chicken. Mom has a great recipe for chicken cacciatore which is flavored with mushrooms and rosemary, but my husband turned up his nose at the idea of mixing Italian style chicken with latkes. I don't know, I'm wondering the same thing. Using one of mom's recipes has some sentimental appeal though. I also have some home made plum sauce that I could use, it needs to get used up and is pretty basically sweet and sour but kind of purplish brown, not particularly pretty but again, I could add red peppers and cabbage. I will definitely make a beet salad. I have two recipes for a salad similar to the one you describe Agmass. Both are in the Moosewood Restaurant Daily Special Cookbook. I've made both. One is called Lobio and calls for red kidney beans instead of beets! The other is called "Syrian Beet Salad" and is a basic marinade. I was not too crazy about the taste and texture combination of red kidney beans and walnuts when I made the Lobio recipe, although it looks good! Has to be carrot cake for dessert. My dad is notoriously picky and that's all he would agree to....See Morevoila
