Help Me Choose - Limited Menu for Hosted Dinner

I am hosting a post-recital dinner for my daughter at a restaurant and will be offering a limited menu. I need some help selecting 3 appetizers and 3 or 4 entrees to include. The guests will range from 10 yo to 77 yo. Here are some options:

Appetizers

  1. Butcher's Board Charcuterie
  2. Baked Brie
  3. Tuna Tartare
  4. Hummus w/vegetables
  5. Artichoke Spinach Dip
  6. Duck Flatbread

Entrees

  1. Grilled Cesar with Chicken or Shrimp
  2. Arugula Salad with Chicken or Beef
  3. Boneless Shortribs
  4. Wild Atlantic Salmon
  5. Prime Angus Burger
  6. Jumbo Shrimp & Grits
  7. Slow Braised Pork Shank
  8. Grilled Shoulder Loin of Beef

What do you think would provide variety and please a range of guests? Thanks for your help - this is not my strength and I know many of you are wonderful cooks and party planners!
