I pulled my steaks out of the freezer yesterday morning...

and thawed them in the fridge. I pre-salted them this morning and realize that my schedule around dinner time is a little nuts so I would like to save them for tomorrow. I am a little (okay, a lot) paranoid about meat. Will they be fine to have tomorrow? I didn't have them yesterday because I do like them pre-salted and they were frozen solid so I didn't want to salt them like that. Thanks.

They will be just fine as far as the meat goes in that they won't be spoiled if that's what you mean. They can easily take a few days in the fridge.

If you're asking if they will be OK, texture wise, given they have been salted for two days instead of one.... that I don't know 'cause I don't presalt. My gut tells me they will be just fine but maybe one of the "salters" has a different opinion

Why not throw them into a marinade which will wash the salt off and tenderize at the same time? Just a thought.

Rane_grow, nice looking little melon there. Hope they all mature and what a nice break in the afternoon to cut or bust one open. Dang Farmerdilla! Bet that is a sight to see them shooting the canonball watermelons. No, I have never attended that festival. Cordele celebrates with a watermelon festival every year and maybe one day I will get a chance to attend it. Judging from the looks of them I figure these were the ones left in the field after they harvested the ones for retail. Susan, one of my late bro-in-laws ues to plant yellow meated Moon & Stars and they were quite tasty. Have never tried the Stargazers. Pat, never too late to visit your dad in Florida... and go shopping in a farmers market... buy a couple of nice melons and relive some of your childhood days. The drought pretty well done in my butterbeans, but recently I plowed them and added more nitrogen in hopes they will make a second crop of beans. That GREAT insurance company is Liberty Mutual. The claims inspector who came out could not have been any more helpful. I must also say that our volunteer firemen are the best. They came back and ran their extension cord to a neighbors to run the sump pump till the electrician could do the wiring for it. We are having some very wet weather. The electrician was there from 10am till 7:30 last evening. Came back at 9 today and is still there.

I KNOW EXACTLY WHAT YOU ARE LOOKING FOR!! The Knob Shop is an ebay store and they also have a store in Walker, MI. Their prices are VERY reasonable! They sell 3 different finishes of ORB and 1 finish is ORB with dark, matte finish (no highlights)! I ordered some knobs and pulls and I got free shipping since I ordered over 25 items. When I received them, they were very nice. However since my cabinets have a dark walnut stain, the matte finish blended in too much and I thought a highlighted finish would look better. I returned them hassle free, I just had to pay for return shipping. I shipped them back in the same small flat rate box for around $6. The owners are very nice. You can call or email them and they will help you find what you are looking for (if you don't see it in their online catalog). I've done a lot of research on cabinet hardware. ORB varies SO much and it is often hard to tell what kind of finish is in the picture. The Knob Shop specifies the type of ORB finish the item has which is very helpful. LOL, reminds me of one of my first days working at a deli many moons ago. Someone ordered a bologna hero. I needed to start a new loaf, so I trimmed off the end, cut off some outside wrapping, sliced, assembled, and sold the sandwich. Later in the day someone else ordered bologna and another clerk took the order. I watched as he cut back the clear plastic "shrink-wrap" that I hadn't noticed. I still laugh, thinking of the poor guy who had to peel all that plastic out of his sandwich. We never heard about it that I know of, so I assume the customer wasn't a regular - and probably didn't become one!

I didn't even think about the salt thing. Maybe I'll rearrange things today and just do the steak thing today. Mostly it's because of the baked potatoes. I have only just started salting my meats.

I also would get that salt off the steaks....it will draw out a lot of the moisture.
Pre-salting works on large chunks of meat like a whold bird or a rolled rump roast, but not so well on the cut side of the meat!

I don't pre-salt either, so I can't conjecture on the quality of your steak after 2 days of salting.

However, the beef will be safe to eat tomorrow, if that's what you wish to do with them.

I have presalted (many hours in advance, up to 24) my steaks for the past few cookings and it is amazing. I am sold. I think AnnT posted an article on it (long as it was) but was very informative. Yes, it was more on if the meat was still good but because I am new to salting I will just cook today as I don't want to ruin them. Good information to know.

If the problem is the time for the baked potatoes, you can start them in the microwave to cut the cooking time. I often forget to put the silly potatoes in the oven, so I pop them in the microewave until they start to soften (wash them and poke about six holes in them first), then finish them in the oven for 20 to 30 minutes depending in how long I have left until dinner. I think three medium potatoes soften in about 5 minutes, but I have a baked potato button I hit so I'm not positive about the time. They taste fine this way, but I don't like to cook them only in the microwave because the texture seems funny to me.
