carrot cake cookies

Sorry I haven't been around much lately... I've been sleeping at night instead of baking or surfing web... strange I know!

Anyway, I have a friend who likes carrot cake so tradition is for me to make one for his birthday (at the end of May) every year. Well, this time he's going to be gone for his birthday.... on Monday he's driving 18 hours to go take care of some things at his parents old house and will probably be gone several months. I wanted to still do something, so I figured carrot cake cookies would be the best idea... they are "portable" so he can eat them and stay awake on a sugar high during the long drive. Found the recipe on a blog through google (my cookbook). I tried a "couple" of them and they are pretty darn good. Lately, if I've baked, I've used the hand mixer because the stand mixer was covered in clutter, but I dug it out and it was fun to use again. I know he had been feeling neglected lately.... I almost had to put an anti-depressant in his attachment hub :o) I didn't use the food processor because of how much room it takes up in the dishwasher.... I used the knuckle grater for the carrots. I wasn't doing a crazy amount, so it wasn't necessary to dirty up all those parts.

You'll notice some of them have a raisin in the middle and others don't. I forgot if he liked them... it's usually all or nothing with raisins, people either love 'em or hate 'em, so I didn't want to take a chance. He called while I was in the middle of making them.... I'd started to do them without raisins, but when we talked I sneaked in a comment that provoked him to tell me he loved raisins (I guess that's what you call fishing for clues), so I pressed one into the middle of the ones I hadn't baked yet.

And to think the kitchen was spotless before I started.... now there's powdered sugar on the counter, vanilla on the floor, icing on the wall..... ugh!

I put the cream cheese frosting in a freezer bag and snipped off the corner to apply as the recipe suggested..... I have a piping bag but they are so much work!
