Botulism isn't usually a concern if its cured with nitrates/nitrites. The 'Prague' is adding nitrites (and nitrogen) to the meat and has a preservative effect, which makes it stay pink. They use these in pepperoni, and you have probably seen pepperoni and other meats that are not even refrigerated, like some specialty sausages and even summer sausages. Because you don't have good control over the amount or salt and nitrites/nitrates in the Morton Tender Quick, it tends to be suitable for those who are not too concerned if its overly salty, or just want to give it a simple single try. When I make this brine, its usually the meat that gets weighed and the brine amount its based on the salt and Prague (nitrites/nitrates) and water. Here, I do use measuring devices, as its important to get the right amount of salt, and after curing if its too salty its hard to remove it. Prague is also got pink color and salt added so its not just pure nitrites/nitrates. If it were, it would be about 1/8 the amount that is in a tablespoon of Prague. They do this so that its easier to measure or weigh the nitrites/nitrates, and you are less likly to over do the amount. Soaking the meat for that long (2 weeks!? )is too much time. No matter what the books say. I use a meat pump, an oversized hypodermic needle and syringe and inject the brine into the meat. Because a brisket is quite thin, it needs very little brining, maybe 2-3 days tops. A very low, slow cooking is essential for a tender result. In this forum are many sources for the nitrites and nitrates and other curing supplies as well as links to recipes. Corned beef is also made into pastrami, by coating the outside with the same pckling spices and baking very slowly like 6 hours at 250 degrees. Usually the nitrates are used for longer, slower air curing, and nitrites are used for fast curing like sausages and corned beef. They also identify these as Instacure #1 and Instacure #2. Here, I don't use a pickling spice mix per se, but instead grind up peppercorns, mustard seed, coriander, bay leaf, celery seed, dried garlic, onion, and a few other spices (done in a small blender type coffee grinder) THis spice mix is also added to the brine. Suggest that uou remove it from the brine now, and rinse it off well, then either simmer to cook it very slowly for several hours, or bake at a very low 200-250 degree oven, covered, for about 4-6 hours. The internal temp should eventially reach about 160. I have even made a great pastrami from very lean eye of the round, which in itself tends to be quite tough. Not sure if you actaully tasted the brine before it was soaking the meat, but if it was overly salty, it may result in that same end result. Years ago, before I started making cured meats, my mom had gotten a recipe off a package of Morton Tender Quick to make a hamburger type pepperoni that was wrapped in aluminim foil like a big sausage and baked. It did turn out quite interesting, but was a bit salty. I still have that almost full bag of Morton Tender Quick here, for nearly 30 years now, and have not used any since. Thanks all the replies. You have made an interesting and informative conversation! Dave, yes. I have spent a lot of time in NZ. At one time, canning, using proper jars (which are marginally heavier than ours and very durable) was very popular. New Zealand was and still is to some degree a very rural country. Like here, canning has been supplanted by freezing. Essentially that mostly explains the lack of supplies now. And I have met a few folk who used to use pressure canners. I think they called them retorts or autoclaves. Carol is right; with BWB canning for such things like jams or chutneys, the grocery food jars work fine. Lack of pressure canning aside, the problem is the shelf life of these products AND the entire loss of canned fruits. Everyone (of a certain age) in NZ remembers their Ma or Grandma or Grandpa canning peaches or plums or other orchard crops. I dont know how they used do Lambs Tongues, for instance, but there must be those who miss those too! Essentially, NZ is an example of somewhere that used to do something that has now been mostly lost. Thanks the freezing tip, Woodsmoke. Some miscreants (like me) actually prefer some things canned. In my case, the canned pate was just a whim; something to do with the livers. I could envision having some small jars of some delicacy, but going through the whole process of making pate frequently from frozen liver isnt so appealing! Additionally, Im not so keen about freezing in general. We can have long power outages as well. Appreciate the tips JimnGinger. I will brine some brisket and freeze it, but again, like the pate, I was envisioning a handy lunch to make from a small jar. I have canned beef chunks, which I like very much, and it occurs to me that I could make these taste like Corned Beef if I wanted. Commercially canned Kippered Herring is very common and popular in Northern California grocery stores. I havent tried to home can any, but home canned smoked fish is very doable. Sardines, Herring, Smelt and Mackerel, Salmon and Tuna... Generally, I have found that home canned fish or meat is far better than what one able to purchase. Canning fish as opposed to freezing it, is, to me, a much much better approach. Thanks again!

I had great results last Sunday at 350 degrees. I heated a little oil in the Le Creuset on the stove top, browned the patted down (paper towels) corned beef for a couple minutes all around, poured in a bottle of beer and water to about half way up the beef, and cooked it with the lid on for 3 1/2 hours. It was perfect! Tender, juicy as can be, and not at all dry. I did this for hash so threw out the water. If I was preparing cabbage, pots, and carrots I would dilute the very strong broth with water and divide into two pans; one for potatoes and carrots and another for the cabbage, and cook each for approx 20 minutes until done. This method was an experiment vs the very long and slow techniques that I've used in the past. This is a winner and will be repeated again without a doubt. Michaelp

Because of this thread, I bought and cooked corned beef brisket last week. It was wonderful!! Very tender and very flavorful. I wondered why I don't cook them more often. Because of this thread I learned to buy a "flat." Until this thread, I did not know there was a difference, or even a choice. I opted for the long simmer in the oven, rather than the bake. I wanted something that would take little of my attention because I was in the middle of making the "car bomb" cupcakes. Rather than cooking the veggies with the brisket, I cooked them separately, mainly because I wanted to make skillet-roasted potatoes (not a fan of boiled potatoes). We got 2 meals out of it, then I got a corned beef sandwich and to finish up the "crumbs," I made a dab of corned beef salad to munch on with crackers. I ♥ CF
