I found a slab of ham in the freezer.

Lpink, I decided to try out your special diet and ham situation.

The ham was cooked on top of black rice, and the black rice is cooked in clam juice that I had from making razor clams the other day.

The juice from the ham and clam worked well.

I thought the flavor of beets would work with black rice, and it did. A couple slices of onions to infuse some aroma to complement the clam taste and is removed. Pepper, a pinch of Old Bay and some EVOO. A very simple meal.

That looks great. I love the beets! I am fascinated with black rice. Did you find it took longer to cook, more like brown rice?

It is lots of fun using black rice; for the interesting taste, for the visual drama, and for the possible nutritional benefits.

The rice is so black, itÃ¯Â¿Â½s really great to make eating interesting and to make a dinner party memorable.

This time the rice was cooked in clam juice, the other times I always soak the rice in hot chicken broth or beef broth overnight, and then I cook the rice in the pressure cooker for about 30 minutes. This particular black rice does not get gluey, a little chewy but not tough.

Dr. Besser's advice really only works for surface arsenic. If the arsenic is the inorganic type drawn up from soil or groundwater contamination, rinsing will NOT work very well. In fact, Consumer Reports recommends cooking 1 cup of rice in 6 cups of water, and pouring off the excess! Rinsing very well, and cooking the rice in extra water and dumping the excess (which unfortunately puts it right back into the environment one way or another), removes at most, about 30% of the arsenic. Things that can help: Sulfur helps eliminate arsenic from the body, so eat foods high in sulfur, such as eggs, beans, legumes and garlic. Eat plenty of fiber every day. Garlic, pectin, selenium, L-Cysteine and L-Methionine, Vitamin C, and Superoxide dismutase (SOD) are all good detoxifiers. Be sure to read up on recommended allowances; some of these are mildly toxic in very large quantities. Have a hair analysis done if you suspect arsenic toxicity. Mexican Rice from AmericaÃ¢ÂÂs Test Kitchen Because the spiciness of jalapeÃÂ±os varies from chili to chili, we try to control the heat by removing the ribs and seeds (the source of most of the heat) from those chills that are cooked in the rice. Use an oven safe pot about 12 inches in diameter so that the rice cooks evenly and in the time indicated. The potÃ¢ÂÂs depth is less important than its diameter; weÃ¢ÂÂve successfully used both a straight-sided sautÃÂ© pan and a Dutch oven. Whichever type of pot you use, it should have a tight-fitting, oven safe lid. Vegetable broth can be substituted for chicken broth. 2 medium tomato, ripe tomatoes (about 12 ounces) cored and quartered 1 medium onion, preferably white, peeled, trimmed of root end,and quartered 3 medium jalapeno peppers 2 cups long grain white rice 1/3 cup canola oil 4 clove of garlic, minced or pressed through a garlic press (about 4 teaspoons) 2 cups low-sodium chicken broth 1 tablespoon tomato paste 1 1/2 teaspoons table salt 1/2 cup cilantro, fresh, minced 1 lime, cut into wedges for serving Adjust oven rack to middle position and heat oven to 350 degrees. Process tomatoes and onion in food processor until smooth and thoroughly pureed, about 15 seconds, scraping down bowl if necessary. Transfer mixture to liquid measuring cup; you should have 2 cups (if necessary, spoon off excess so that volume equals 2 cups). Remove ribs and seeds from 2 jalapeÃÂ±os and discard; mince flesh and set aside. Mince remaining jalapeÃÂ±o, including ribs and seeds; set aside. Lukkirish, I canoot upload any pictures, if I do, my computer will explode. I'm on strict orders not to uploand for this reason. However, when my daughter comes home from school today, I'll ask her to take a couple of pictures with her camera and upload them on her computer to this thread. How can I get the pictures posted directly in the thread as shown above, rather than a link? And thank you for offering to do this for me. I really appreciate it. Bronwynsmom: I do not want a trite look for this bathroom, although I am a lover of pink. When I hang dry all of my clothing it's pretty much pinks, lovely greens, and blacks with a blue something thrown in, plus of course denim. I appreciate the advice. Especially on the white trim. Someone up-thread told me to match the cabinetry, which is a fairly stark white, so that is a good thing. Is the best way to compare whites to go to the paint store and look at the sample chips under the flourescent lighting fixtures at that display? I do want a soft white... softer than the cabinets. What makes a white "soft" looking? That Ballard bedroom is gorgeous, Pink Fairy is a really lovely shade of pink as well. It is gorgeous with all of the beige/taupe trim and accent pieces. And again I'm seeing it a large, airy room. My bathroom is small and stuffed with things like sinks and cabinets. Is there a rule about what color does when you bring it into a smaller room and you are standing close to it? I would think that, to the eye, the color is intensified. Onions and anything onion-like are out for me. But the black rice and beets both sound appealing. Anything with rice I would like. Although I would never be able to polish off that big slice of ham.
I've never eaten beets with rice. When I eat beets I usually eat them in salad with goat's milk cheese and walnuts, with a balsamic vinagrette (now out for me), or in borscht, which I make with tomato juice and cider vinegar (now out for me). Luckily I like them steamed plain with dill, salt and butter.
I also make a soup with beet greens and butternut squash puree which is on my list to do again. But beets will have to wait, BF has the vegetable drawer filled up with asparagus and broccoli. Plus I splurged and bought a rutabaga yesterday!
I may have to look for that black rice. I have an austere budget and I usually don't buy anything gourmet, but now that my diet is so limited, I am buying more unusual things. Like the blueberry juice I bought this weekend. Weird but tasted good.

L, I bought the black rice at an Asian market and it was relatively inexpensive, not what I would term "gourmet" at all.

I'll pick up more next time I go and send you some, so you can try it. Of course, I haven't tried mine yet either, I left it at Elery's accidentally, so now I'll have to retrieve it or remind him to bring it back.

There may be an asian market in Allentown but I have yet to find it. My "international" food purchases are limited to the specialty aisles at Wegman's. They might have some at the health food grocery. I'm going there today to look for coffee substitutes and carob chips.

L, my "google" only finds two Korean groceries, I don't know if either are anywhere close to your location: Chon's Market, 401 West Turner Street, (610) 432-8282 and Cho's Food Market, 723 Saint John Street, (610) 821-8393.

I have found that Asian markets tend to be relatively inexpensive for things like fish and rice, although I am unfamiliar with an overwhelming number of their products.
