Cook-a-thon ideas

Since mentioning that I usually do once a week cooking and food shopping on loves2cook4six's meal planning thread, I received some e-mails asking if Id add more information and examples.

This week, I went to the farmers market early Friday evening and purchased all the main ingredients for the meals listed, except for cabbage and the turkey sausage. I bought those at the grocery store on the way home, in addition to some sale canned goods like diced tomatoes I wanted to stock up on. Best values were new potatoes, cabbage, cucumbers (finally!), and eggplant so I planned the menu around those items. Asparagus was also at a good price but I used that last week.

Other items I bought at the FM that donÂt show up on the dinner menu were loose tea, small container of ham spread at the Amish deli to use on potato rolls for lunch, honey tangerines for breakfast, hard pretzels for snacks, and a jar of honey.

DH was going to be in the vicinity of the Middle Eastern market so he picked up lemons, fresh dill, Greek yogurt, walnuts and red lentils.

We try to eat a balanced diet, relatively high in fiber and low in fat. I make additional quantities of soup and salads for lunches but for main dishes, I usually only buy enough for that one meal. I will cook half of the kielbasa and freeze the other half for a sausage and bean dish in the next couple of weeks.

I cooked dinner on Friday and since we werenÂt going out that night, did some prep work after dinner  soaking the beans and cutting up onions, carrots, cabbage, leeks and celery for the different dishes and putting them in storage containers by menu item. Saturday morning, I cooked from about 9 to 11:30 and then packed up the items. In addition, I measured out all the dry ingredients for an apricot nut bread and baked that along with the beans on Sunday.

Often, a friend or neighbor will join me to cook and then we make a double batch and split the finished food and the cost. That shortens the prep time substantially.

So hereÂs this week, although the dinners could move around to a different night if something comes up. Nothing fancy but a meal can be on the table without a lot of convenience foods or too much effort after work.

Baked turkey kielbasa

Halushki - (caramelized onions & cabbage w/ noodles) (made Saturday)

Cucumber and onion salad with fresh dill (made Saturday)

Thursday

Out for dinner at a local restaurant
