I need some cooking class demo ideas

Last spring I did a cooking demonstration/class at my house that was quite successful. I demonstrated how to use phyllo and made asparagus and Parmesan logs with it. I also made a pound cake and vodka pie crust. And something else I can't remember!

So this year is #1. puff pasty. I will use Pepperidge Farm frozen sheets and make little tarts filled with custard and topped with glazed fruit.

I think I will make a #2. ganache for icing and or glaze

I need a #3. savory thing though! Easy, but shows a specific technique that might be something non cooks wouldn't know.

But I still want something a little different.

On the buffet table will be everything already made so they won't be eating what I make right then and there.

I appreciate any thoughts!
