I like watching "Big Daddy's House" on the Food Network and this dish intrigued me. It's probably popular anyway in the South, so a lot of you may be familiar with it.

Savoury Chicken Hash

4 Yukon potatoes, peeled and diced

2 tbsp butter

1 medium onion, finely chopped

1 red pepper, diced

1 yellow pepper, diced

1 tbsp minced garlic

1/2 tsp cayenne

salt and pepper

1 tbsp smoked paprika

1 tsp chopped fresh oregano

1 rotisserie chicken, skin removed and meat diced

1/4 cup chicken stock

2 tbsp fresh parsley, chopped

1/2 lemon, juiced

Preheat oven to 325. Cook the potatoes, drain and set aside.

In a large oven-proof skillet over medium-high heat, add the butter. Add the onions, bell peppers and garlic and saute for a few minutes. Add the cayenne, salt, pepper, paprika and oregano.

Stir in the chicken and cook 4-5 minutes until chicken is warmed through. Add chicken stock, parsley and lemon juice. Simmer for a few minutes. Add the potatoes and bake until the potatoes are crunch, 10 minutes.
