Hello---anybody home?? Nobody has started this this morning, so I will. I've been looking a vegetable recipes lately. We need to eat more. I know I've made this one because of notes I wrote by it, but I sure don't remember it. Probably took it to a gathering.

Squash Casserole with Cream Cheese

24 Ritz crackers

8 oz. cream cheese, softened

2 (10.75 oz.) cans condensed cream of chicken soup

2 eggs, beaten

1/2 c. butter melted

8 c. cooked yellow summer squash, sliced

6 small carrots, grated

1 c. chopped onion

1 c herb-seasoned stuffing mix (like Pepperidge Farm)

Place crackers in a greased 13x9x2" casserole. Combine cream cheese, soup, eggs and butter; beat well. Stir in squash, carrots and onion. Spoon over crackers and sprinkle with stuffing mix. Bake at 350 for 30-40 minutes. Serves 10-12. Note: You could add some grated cheddar to the vegetable mix.
