Hello---anybody home?? Nobody has started this this morning, so I will. I've been looking a vegetable recipes lately. We need to eat more. I know I've made this one because of notes I wrote by it, but I sure don't remember it. Probably took it to a gathering.

Squash Casserole with Cream Cheese

24 Ritz crackers

8 oz. cream cheese, softened

2 (10.75 oz.) cans condensed cream of chicken soup

2 eggs, beaten

1/2 c. butter melted

8 c. cooked yellow summer squash, sliced

6 small carrots, grated

1 c. chopped onion

1 c herb-seasoned stuffing mix (like Pepperidge Farm)

Place crackers in a greased 13x9x2" casserole. Combine cream cheese, soup, eggs and butter; beat well. Stir in squash, carrots and onion. Spoon over crackers and sprinkle with stuffing mix. Bake at 350 for 30-40 minutes. Serves 10-12. Note: You could add some grated cheddar to the vegetable mix.

I just came across this recipe and it looks good!

Strawberry Bottom Cheesecake Pie

4 ounces cream cheese, softened*
1/4 cup sugar
1/2 cup sour cream
1 1/2 cups frozen non-dairy whipped topping, thawed
3/4 cup strawberry glaze, divided**recipe follows
1 Keebler Ready Crust Shortbread Pie Crust or
1 Keebler Ready Crust Graham Pie Crust
2 cups sliced fresh strawberries

1 In small mixing bowl beat cream cheese and sugar on medium speed of electric mixer until fluffy. Add sour cream. Beat until combined. Fold in whipped topping.

2 Spread half of glaze in crust. In medium bowl gently stir together strawberries and remaining glaze. Spoon into crust. Spread cream cheese mixture over berries.

3 Refrigerate at least 4 hours or until set. Garnish as desired. Store in refrigerator.
*NOTE:
Soften cream cheese in microwave at high for 15 to 20 seconds.

**NOTE:
To make the Strawberry Glaze use the following recipe:
2 tablespoons sugar,
2 tablespoons cornstarch,
3/4 cup water,
1 tablespoon strawberry flavored gelatin.

In small saucepan stir together sugar and cornstarch. Stir in water. Cook and stir over medium heat until boiling. Stir in gelatin until dissolved. Use immediately in recipe.

Berry Cheesecake Trifle 2 (8-ounce) packages low fat cream cheese 1 cup powdered sugar 1 cup low fat sour cream 1/4 teaspoon vanilla extract 1/2 teaspoon almond extract 1 (12-ounce) container frozen low-fat whipped topping, thawed 1 angel food cake, torn into bite sized pieces 1 1/2 quarts fresh strawberries, sliced 1 1/2 quarts fresh blueberries 3 tablespoons granulated sugar In large bowl, cream together cream cheese and powdered sugar; add sour cream, vanilla, and almond extract. Set aside. Fold whipped topping into cream cheese mixture. Add cake pieces and fold lightly, set aside. Combine strawberries and sugar. Layer in large glass bowl starting with strawberries, then cake pieces, then blueberries. Continue layering until finished, 3 or 4 layers is good (depends on your bowl). Finish with berries on top and garnish with additional whipped topping if you want. Cover and chill well. Garnish with additional strawberries and blueberries just before serving, if desired. Makes 24 servings. Note: I prefer using low fat cream cheese, sour cream, and whipped topping instead of fat-free. I much prefer the taste, but if you like, fat free may be used. Or you may use half of each. I prefer to bake the angel food cake (instead of buying one) because it is much softer and lighter. I usually use a mix. This is my tried and true wild rice salad. Wild Rice Salad 1/4 tsp salt 3/4 cup brown rice or brown basmati rice 1/2 cup wild rice 1 can sliced water chestnuts, drained 1 red pepper, diced 1 green pepper, diced 2 stalks celery, diced 1/2 cup raisins 1/2 cup diced red onion 1/2 cup toasted slivered almonds 1/4 cup chopped parsley Dressing 1/3 cup orange juice 1 tbsp grated lemon rind 2 tbsp lemon juice 2 tbsp soy sauce 1 tbsp vegetable oil 1 large clove garlic, minced 1 tbsp rice wine vinegar Rinse both rices well. In small saucepan, bring 2 1/4 cups water and the salt to a boil. Add basmati and wild rice, reduce heat, cover and simmer 45 minutes. Transfer to a large bowl. Add water chestnuts, green and red peppers, celery, raisins, almonds and parsley and toss. In small bowl whisk dressing ingredients. Pour over salad and toss to coat. Serve at room temperature.

Oh, I love appetizers! I'll bring a big platter of strawberries, both plain and chocolate covered and this dip: MARSHMALLOW FRUIT DIP 1 jar marshmallow cream 1 - 8 oz. pkg. cream cheese Mix together and chill. I was going to bring these little yummy biscuits, but it's too close to Marci's recipe: PIZZA BUBBLE RING 6 to 8 tablespoons LAND O LAKESÂ® Butter, melted 1 teaspoon Italian seasoning 1/2 teaspoon garlic powder 2 cans (12 oz each) PillsburyÂ® Golden LayersÂ® (Jr. Grands) refrigerated original biscuits 40 small slices pepperoni (about 3 oz) 8 oz mozzarella cheese, cut into 20 pieces 1/4 cup grated Parmesan cheese 1 1/4 cups pizza sauce, heated Heat oven to 350Â°F. Spray 12-cup fluted tube pan with cooking spray. In small bowl, mix melted butter,Italian seasoning and garlic powder. Separate 1 can of dough into 10 biscuits; press or roll each into 3-inch round. Place 2 pepperoni slices in center of each biscuit round. Top each with piece of mozzarella cheese. Bring dough up around filling; press edge to seal and shape each into ball. Roll in butter mixture; place 10 balls in pan. Sprinkle dough balls with Parmesan cheese. Repeat with remaining can of biscuits, placing balls over balls in pan. Almond Crusted Chevre and Grape Truffles Allrecipes.com "A savory-sweet appetizer that looks like a candy truffle is really a juicy grape in a goat cheese coating, rolled in toasted almonds and chives." Original Recipe Yield 24 truffles Ingredients 4 ounces chevre, crumbled 2 ounces cream cheese, softened 2 tablespoons port wine salt and pepper to taste 24 grapes 1/2 cup whole almonds, toasted and finely chopped 1/4 cup chives, finely chopped Directions 1. In a bowl, mix together chevre and cream cheese with a fork. Add port wine and a pinch of salt and pepper; mix until smooth. Chill 30 minutes. 2. Scoop 1 tablespoon cheese mixture. Press grape into mixture. Using plastic wrap, cover grape with cheese and roll into little ball with grape inside. Remove plastic wrap. Continue making rest of truffles. 3. Toast almonds stovetop in a dry fry pan until light brown in color. Lay out on large cutting board to cool. Using large knife, finely chop almonds. ( Alternatively, for ground almonds, use a grinder or food processor.) 4. Spread almonds onto plate. Finely chop chives and combine with almonds. Roll Roll each truffle ball in almonds and coat evenly. 5. Refrigerate, covered until serving.

Glenda, no I haven't but it sounds good and different. Got a recipe to share? I get tired of cooking plain old vegetables, even though they are better for you than adding a lot of fat and calories. But still.....

Jasdip, I made your Texas chili this morning so, of course, I had to taste it to make sure the seasonings were right. Man, it it good! And the house smells wonderful. I made it early so it would have time to "age".

A great tip in that recipe is to thicken it with cornmeal. That one tablespoon did the trick. Oh, and I used round steak cubed and was too chicken to try the jalapeno powder so I used chili powder.

I'm so inspired I promised Harry I'd make cornbread without sugar (haha!) to go with it. I'm using the Pioneer Woman's recipe since I have buttermilk in the frig.

Patti, I do apologize! I just posted the squash casserole recipe before I read your entry! I have an abundance of yellow crookneck squash and I keep searching for different recipes. Of course, we seldom get tired of yellow squash, no matter how it's cooked!

TRy them, patti, you will like them

Squash Croquettes

1-1/2 lbs. yellow squash, sliced
1 medium onion, minced
1/2 teaspoon salt
1 teaspoon pepper
1 teaspoon butter
1-1/3 cup bread crumbs
1 egg, beaten
2/3 cup cornmeal
Oil for frying

Cook squash with salt in small amount of water until tender. Drain well. Saute onion in butter until tender.You can omit this and just chop and add to the mixture. Mash squash and add all ingredients, except cornmeal. Chill mixture. Form into oblong croquettes and roll in cornmeal. Fry in deep fat until light golden brown.

I'll make sure to tell hubby that you liked it! He raves about your Spanish Rice that I made, and knows it came from you.

It's time for him to make me some Texas chili! That's the only chili I like, as I mentioned. Love it with lots of rice

We had it on rice, too. We also topped with grated cheddar, chopped onion and Harry had sour cream on his, too. We are happily stuffed!
