I love Barefoot Contessa, and she often uses boneless chicken breasts with the skin on. I'd never seen these here, but this week our store had boneless, skinless chicken breasts. I asked if they could make some for me with the skins on, and they did.


I made this recipe last nite, and it's a keeper for sure!

It would be nice for a special dinner...Valentine's etc.


Chicken with Goat Cheese and Basil

If you can't find herb-and-goat cheese, plain works just as well.

6 boneless chicken breasts, skin on

8-10 oz. garlic-and-herb goat cheese

6 large basil leaves

olive oil

salt and pepper

Preheat the oven to 375 degrees.


Place the chicken breasts on a cookie sheet. Loosen the skin from the meat with your fingers, leaving one side attached.

Cut the goat cheese into 1/2" thick slices and place 1 or 2 slices plus a large basil leaf under the skin of each breast. Pull the skin over as much of the meat as possible.

Rub each breast with olive oil, then sprinkle generously with salt and pepper.

Bake the chicken 35 to 40 minutes until the skin is lightly browned and the chicken is just cooked through.
