I slept through the night! YAY!

Warm Creamy Bacon & Cheese Dip

From 'You Made That?'

Ingredients:

1 16 ounce container of sour cream

1 8 ounce package cream cheese at room temperature

2 cups shredded cheddar cheese

3 ounces of bacon bits (not the fake kind)

1 cup of chopped green onions

1 large round sourdough bread loaf

Directions:

Step 1: Hollow out the bread loaf by cutting a large circle around the top of the bread but do not all the way through. After cutting around gently grab a hold of the circle you cut and pull out then using a spoon hollow out the rest of the bread to make a nice size bowl.

Step 2: Pre-heat oven to 400 degrees Fahrenheit.

Step 3: Combine all the remaining ingredients into a medium size bowl and mix together thoroughly.

Step 4: Scoop the mixture into the bread bowl and then bake uncovered on a cookie sheet for 25 to 30 minutes.

Serve warm with cut cubes of sourdough bread or crackers.

That's great Lucky!!
I got up at 4:30! :( But I did get my bread-making started early! It will be ready for the oven in a little bit. Also made biscuits for breakfast.

Saw this recipe this morning and it caught my eye. Will be making this one.

Chicken with Balsamic Bell Peppers (Cooking Light)

3/4 teaspoon salt, divided
3/4 teaspoon fennel seeds, crushed
1/2 teaspoon black pepper, divided
1/4 teaspoon garlic powder
1/4 teaspoon dried oregano
4 (6-ounce) skinless, boneless chicken breasts
2 tablespoons olive oil, divided
2 cups thinly sliced red bell pepper
1 cup thinly sliced yellow bell pepper
1/2 cup thinly sliced shallots (about 1 large)
1 1/2 teaspoons chopped fresh rosemary
1/4 cup white wine
3/4 cup fat-free, less-sodium chicken broth
1 tablespoon balsamic vinegar

1. Preheat oven to 450.

2. Heat a large skillet over medium-high heat. Combine 1/2 teaspoon salt, fennel seeds, 1/4 teaspoon black pepper, garlic powder, and oregano. Brush chicken with 1 1/2 teaspoons oil; sprinkle spice rub over chicken.

Add 1 1/2 teaspoons oil to pan. Add chicken; cook 3 minutes or until browned. Turn chicken over; cook 1 minute. Arrange chicken in an 11 x 7" baking dish coated with cooking spray. Bake at 450 for 10 minutes or until done.

3. Heat remaining olive oil over medium-high heat. Add bell peppers, shallots, and rosemary; saute 3 minutes. Stir in wine, scraping pan to loosen browned bits. Add broth, reduce heat; simmer 5 minutes. Increase heat to medium-high. Stir in balsamic vinegar, 1/4 teaspoon salt, and 1/4 teaspoon pepper; cook 3 minutes, stirring frequently. Serve bell pepper mixture over chicken.

Extra Quick Yeast Rolls

1-1/4 oz. pkg. quick rise yeast
1 T. sugar
3/4 C. warm water
2 1/2 C. buttermilk biscuit mix

Dissolve yeast and sugar in the warm water. Stir in biscuit mix and turn out onto a lightly floured surface. Knead until smooth and elsastic, about 5 minutes. Shape into dinner sized rolls or cut with a 2 1/2 in. round biscuit cutter. Place on greased baking sheet. Cover and let rise in a warm place until doubled, about 30 minutes. Bake at 400 degrees for 10 to 15 minutes, or until golden brown. Yield: 24 rolls.

patti: Per your request on the what's for dinner thread, I'm posting my meat 'muffin' recipes. Salmon or Tuna Muffins 1 tbsp. lemon juice 14.7 oz can salmon or 2 (6 1/2 to 7 oz.) cans tuna, drained & flaked 3/4 c. med. white sauce (homemade) 1/4 c plain ff yogurt (or you can use an egg) 1/2 c. chopped celery 2 T minced dried onions 3/4 c. cracker crumbs Add lemon juice to salmon. Place cracker crumbs in bowl. Add white sauce, yogurt, celery, onion flakes, dash of pepper. Mix in salmon/lemon juice. Let sit in fridge to soften onions for approx. 30 minutes. Bake in greased muffin/cupcake pan. Bake 30 minutes in a preheated oven/350 degrees. Usually get 8 or 9 muffins. Chicken Muffins 2 tbsp lemon juice 2 (9.75 oz) canned white meat chicken (packed in water, well drained) 1 c med white sauce (approx) 1/4 c plain ff yogurt (or you can use an egg) 2/3 c chopped celery 2 T minced dried onions 1 1/3 c cracker crumbs. I've made something similar to this, without the sun-dried tomatoes. CHICKEN IN BASIL CREAM SAUCE (Allrecipes) 1/2 cup milk 1/2 cup dried Italian bread crumbs (or Panko) 4 skinless, boneless chicken breasts, sliced or pounded thin 3 tablespoons butter 1 clove garlic (1/2 teaspoon minced) 1/2 cup chicken broth 1 cup heavy whipping cream 1/4 cup sun-dried tomatoes, chopped 1/2 cup grated Parmesan cheese 1/4 cup chopped fresh basil 1/8 teaspoon black pepper Place milk and bread crumbs in separate, shallow bowls. Make sure your chicken breasts are thin. In skillet, heat butter to medium heat. Dip chicken in milk, then coat with crumbs. Cook chicken in butter, on both sides, until juices run clear (about 10 minutes). Remove and keep warm. Add the garlic to the pan and cook for 30 seconds over medium heat. Add the chicken broth to the skillet. Bring to a boil over medium-high heat, and stir to loosen browned bits from pan. Stir in cream and sun-dried tomatoes; boil and stir for 1 minute. Reduce heat. Add Parmesan cheese, basil and pepper. Stir sauce and cook until heated through. Remember that for a thicker sauce all you have to do is cook it longer. I like my sauce on the thick side so I cooked it for a while (3-5 minutes). Serve chicken with sauce on top. Serves 4.

Yum, this one looks good!! Pasta Salad with Olives (Food.com) 12 ounces fusilli, penne or bow tie pasta, uncooked 1 6-ounce can black pitted olives, drained and coarsely chopped 1 7-ounce jar roasted red bell peppers, drained and cut into strips 1 6.5-ounce jar marinated artichoke hearts, drained and coarsely chopped 1 cup diced provolone or mozzarella cheese, about 4 ounces 1 cup diced salami, about 4 ounces 1/2 cup Caesar or Italian salad dressing, light or regular 1/4 cup sliced basil or chopped Italian parsley Instructions Cook pasta according to package directions. Meanwhile, in a large bowl, combine remaining ingredients. Drain pasta; add to bowl, tossing well. Serve at room temperature or chill up to 24 hours before serving. Serve with freshly ground black pepper, if desired.

This is our favorite cake. Its so simple, made from a mix. Very moist!

1 box yellow cake mix(plain, no pudding in mix)
1/2 cup oil
1 small box instant vanilla pudding
4 eggs
1 cup orange juice
Glaze

preheat oven 325 deg
spray bundt pan with oil
mix all ingredients together
bake at 325 for 40 to 50 minutes

For Glaze...

I just mix 10X sugar with orange juice and pour over cake, let drip down sides

Hi Maire, Your recipe is similar to my Lemon Bundt cake.
It uses lemon cake mix, lemon instant pudding (which is hard to come by, unfortunately), eggs and oil. Lemon juice and icing sugar for the glaze.

My tried and true pumpkin bread!

Pumpkin bread
Makes 2 regular loaves or 4 mini.
Temp: 350
Baking time for 2 loaves 50-60 *mine is ready in 50
Mini loaves: 40-45 * mine 40
Ingredients
3 eggs
1 lb can pumpkin
3/4 cup vegetable oil
1/2 cup water
2 1/2 cups all purpose flour
2 1/4 cups sugar
1 1/2 tsp soda
1 tsp salt or less
3/4 tsp nutmeg
3/4 tsp cinnamon
optional and I never use: 1/3 cup chopped nuts and 1/2 cup raisins
In large mixing bowl beat eggs, pumpkin, oil, water.
With whisk blend flour, sugar, soda, salt and spices.
Add flour to pumpkin mixture and mix well. I use my mixer. Stir in nuts/raisins if desired.
Bake in TWO 9x5x3 loaf pans that are greased and floured *I use Bakers spray.
When done, cool in pan on a rack, for about 5 minutes, then remove from pan.
