Crock Pots

Hi All,

I just purchased a Crockpot but I'm not sure if it's working correctly.

I cooked a roast and I set the crockpot for warm and ten hours of cooking.

I looked at it after seven hours and noticed that the broth was boiling. I wondered whether or not this should be so I checked it and it seemed to be done. I then proceeded to eat it and I must say, it was delicious.

I am bothered by the fact that the broth was boiling. I had it set for the longest cooking time and I would have thought that the temperature would not be sufficiently high to cause water to boil.

An I wrong here? Is it normal for the broth to boil at the lowest setting? Should I have cooked it for another three hours?

Bob, we've had a lot of discussion here on the new crockpots.

Because of 'safety issues' in keeping the food at a temperature that may not be high enough to be safe, the new crockpots cook inordinately hot. Mine also boils on low.

The older crockpots were better, cooked at a lower temperature, and I think a few people actually found newer models that would 'slow cook' instead of cooking the living devil out of everything in it.

good luck with that crockpot, I hate the new ones.

Can anybody recommend a new brand that cooks slower? If so, I will return the one that I just purchased.

each time my electric kettle, humidifier, etc gets caked up with lime scale I clean it with vinegar. It is MAGIC. For the kettle, and humidifier, I use half vinegar and half water, fill to desired level and turn the appliance on. ( this makes vinegar fumes but I don't mind). After the mixture gets good and hot, I turn it off and let it sit to do its work. For my kettle and humidifier, which heat up fast, this is a 5 minute process. After which I actually save the vinegar/water mixture to use again cause I am a cheap skate and I get several uses out of it- but I don't dilute it again. I do this on a weekly basis in the winter and my appliances are like new. I hope it works for you, too.

Stew pot is actually closer, Linda. The style we currently call "Dutch oven" is a flat-bottomed kettle with a lid added. And is, of course, with its heavy, heat-holding design, ideal for stewing. Kettles originally were round bottomed (and some had legs), designed primarily to be hung over an open fire; either from a tripod or a crane. They did not have lids. There was a point, measured in gallons, where a kettle became a cauldren, but I misremember it right now. Thirteen comes to mind, but don't take that to the bank. Dutch ovens, of course, had three legs and a deeply recessed lid so you could put coals both under and on top, to provide even, dry heat. They were used on the hearth, not in the firebox. In the first quarter of the 19th century, "portable" cast iron stoves became popular. Initially kettles were still used by removing an eye and setting the pot right in the hole, over the open fire. Eventually they began modifying the pieces, flattening the bottom and adding a domed lid. A chicken fryer has a somewhat different configuration; being relatively wide for it's height (for stability), and with sidewalls that slope more sharply than those of a skillet. Chicken fryers, too, have domed lids; many of which are of the self-basting type. Then may I suggest a Dutch Oven? Brown the meat in a little bit of fat...oil, bacon grease whatever. Brown slowly so all sides are nice and browned. add a chopped onion a clove or so of crushed garlic, about 1 1/2 cups liquid...either beef broth wine, beer veggie broth or a mixture of some of the above and scrape up the browned bits in the pan, cover and place in a 225 oven for 3 or 4 hours, depending on the size of the piuece of meat, add your potatoes after about 1 1/2 hours....and I like to add carrots too at that time. Thicken the gravy with a slurry of a little more broth/wine and flour and serve with the meat. Much better than cooking it to mush in a crock pot. Linda C

I do like turkey legs, but I didn't see your question on time to weigh in and I wouldn't know the answer anyway. I think it would depend on the size of the turkey leg and the heat of the crockpot. My old crockpot heated much more slowly and didn't get as hot, the new one gets hot fast and boils like crazy, even on low, so many things are overcooked that I had previously cooked in my old one and they had turned out fine. Sorry about the turkey legs, though, that's a darn shame after spending time in the smoker. Legs and thighs are my favorite turkey meat, far preferable to me than the drier breast meat. Mine boils on low too, which I hate. It should simmer. I would consider "low" to be "high" in most recipes when it comes to cooking times. Mine cooks too hot to leave unattended for long times (like while I'm at work) so I use it only for cooking over the weekend, so I can keep an eye on things but not have to fuss with them. I take the lid off every now and then which cools it down some. I almost never use the "high" setting.

Pink, I am just the opposite... I never use the low setting. I often try to make a meal in 4 - 5 hours so high is by default. It does boil on high but not sure if it will do the same on low. Mine is about 10 years old.

Mine is a Hamilton Beach and it boils on low. Instead of using the "not so slow," slow cooker, I now cook in my LC cast iron dutch oven or in an enameled cast iron roaster, in the oven, set at 200 degrees. Last night before bed I put two roasts in my cast iron roasting pan and put them in a 200 degree (electric) oven for the night. I'll be making barbecued beef sandwiches for dinner with the meat.

I like a Nesco roaster oven. You control the temperature and can use it for far more than a slow cooker.

cynic, I also like my Nesco roaster, but I have the 18 quart size, so it's pretty big for a pot of beans!

You're right though, I've roasted a turkey, made a huge batch of beef broth for canning and baked brownies, all in the Nesco roaster.

The last time we had this discussion, I was sitting at the kitchen laptop reading the thread. I had sauce going so being eye level with the crock pot, I looked up and saw that it was a Nesco Roaster...Duh!! I have elevated the use of my "crock pot".

Hi, Bob!
Since i was not ready to buy a new crockpot, I found older model Crockpot ("Rival", to be exact) in a thrift store. It was in pretty good condition and SLOW cooks really well. It might be an option for you if you do not mind thrift stores.
