Did you take any pics? I love fresh tortillas. I used to be able to buy masa from a local tortilla shop near my previous house. Have not found anyplace near my new place. I did once buy slaked lime and field corn to grind my own masa but chickened out as I was not sure if I would be able to get a fine enough grind..But I love fresh tortilla with some street taco type fillings.. radishes, lime, black beans, etc..

Wow! That's impressive. I've seen them made. Looked very labor-intensive. Rolling them out thin enough would be a serious challenge for me. Good for you!

I use the mission brand only. I make what you describe a lot in the summer for my family. I think you simply got a bad batch. The only thing I do differently is to use foil to wrap them tightly, and then I only refrigerate for 30 minutes or so. Toothpicks help hold them together if needed. I don't love them the next day either, they get too gummy from the moisture of the ingredients. But I know exactly what you are describing--occasionally it happens to me when I open a new bag of tortillas and some stick together. When I pull them apart, they sometimes peel. Heating in a microwave between moistened paper towels helps. jo

Making Tortilla Chips

If you have a mexican market nearby....just buy a stack of fresh corn tortilla's and cut them into quarters with a knife or pizza cutter. You can deep fry them or spray with oil or a non-stick substitute and bake for a short period. Corn tortillas in the bag...like Tostito's etc....have about 10-20 cents worth of product for the $3-4 price they charge. Enjoy your homemade product! Getting into more involved with masa and doing your own you can find lots of great info here. I have found that if you have a local Mexican market you can skip that step and a lot of work...but if you don't...I'm sure from scratch is wonderful...and quite worth it. Duane

Ann T, I made your flour tortilla recipe

shambo- Maybe this recipe from "Natural Meals In Minutes" by Rita Bingham will work for you, or give you an idea for changes you can make to the original recipe. -Grainlady WHEAT AND SESAME TORTILLAS 2 c. whole wheat flour 3 T. dry milk powder 1/3 c. sesame seeds 2 T. butter or applesauce 1/2 t. salt 2 T. yogurt 1/2 c. lukewarm water Combine dry ingredients. Use hand or electric beaters to cut in butter or applesauce until mixture resembles fine crumbs. [Grainlady note: I love this hint. Since the first time I made these, I now use my electric hand-held beater to cut fat into dry ingredients - it's so easy and so fast compared to cutting fat in with a pastry blender.] Slowly pour in water and yogurt, mixing lightly with a fork. On a floured board, knead dough until smooth and elastic, about 5 minutes. Shape into a ball, cover and let stand for 10-minutes. Divide and shape dough into 8 balls. Cover, removing one ball at a time and roll paper-thin on floured board. Place on heavy, hot, ungreased skillet, over medium-high heat. Blisters should appear right away. Brown on one side and turn. Cook about 30 seconds. Makes eight 9-inch tortillas. [I like to use this recipe for wraps - LOVE the addition of sesame seeds - yum!!!] -------------------------------------- The link below has another favorite recipe and it has variations using cornmeal and all-purpose flour or whole wheat and all-purpose flour, and 2 T. shortening. It's especially easy to mix in a zip-lock storage bag and a great project with children. -Grainlady Here is a link that might be useful: Native American Tortillas In a Bag

Any tips tricks or advice for using a TT convection oven?

Everything I've read about convection ovens suggests adjusting either the temperature or cooking time. Lower the temperature by 25 degrees and bake the regular amount of time -OR- keep the temperature the same, but start checking your food about 3/4 through the regular cooking time. I have a convection oven and it automatically reduces the temperature by 25 degrees, so that might be an easier way to go. Either way, I'd check the quiche at least 15 minutes before it's supposed to be cooked, just to avoid overcooking.

Congratulations, I bet they were wonderful. I would love to see pictures too and to hear more about how you made them.

Oh good, I'm glad they turned out well. They sure are a lot of work, though, so you earned that!

I like fresh warm tortillas with no filling at all, just eaten like bread, although I will admit that I like the flour tortillas better than the corn ones.

Have never made my own. One of my times of "buyers remorse" was when I passed on a Real, heavy, cast-aluminum tortilla press... like one used by Rick Bayless on his PBS cooking show It was in a thrift store... shoulda bought it, if only to give it ONE try and then try to figure out other uses to make it a multi-tasker!?!

I bought what I thought was plain masa flour once, but didn't read the label well enough, and discovered it was masa tortilla mix. I used it anyway, and had fun making tortillas. Tortillas are so readily available around here I've only made them that once. I should try again. I'd prefer to not use the mix, as I suspect it might have had lard in it.

Way to go Lisa. What did you do with them? Eat them plain or use them in tacos or enchiladas?

It was a lot of work, but worth it to see the looks on my family's faces. Lol. I used a wooden cutting board to flatten them out and then ran the rolling pin over them to make them a little thinner. Grilled in a dry pan and then fried for tacos. I made 32 and put maybe ten in the freezer (not fried) after we were done eating.
I did take some pics. Just haven't uploaded them yet.

they are a lot of work when rolling by hand, but that was a good idea to use the cutting board to flatten them.

your kids didn't even know you COULD make tortillas from scratch, did they? (grin)
