Making Tortilla Chips

I googled how to make tortilla chips from scratch and basically got a bunch of people buying premade shells and frying them. I want to make some chips really from scratch but am uncertain how to do this. Would I use the recipe for the corn tortillas and fry them instead of cooking them in cast iron skillet? Or, would I cook them on the skillet first and then fry them? I presume I would use the same recipe that given on the masa harina bag for making tortilla shells. Thanks for anyone who has made them and can help me with this one.

Make tortillas first, let them sit at least a day, then fry the chips.

There's only one problem with this, and that's bagged chips will never be good again> :D

Thanks. Sorry, but by "make tortillas first" you mean to cook them in skillet also not just let the raw dough tortillas sit?

I use the mission brand only. I make what you describe a lot in the summer for my family. I think you simply got a bad batch. The only thing I do differently is to use foil to wrap them tightly, and then I only refrigerate for 30 minutes or so. Toothpicks help hold them together if needed. I don't love them the next day either, they get too gummy from the moisture of the ingredients. But I know exactly what you are describing--occasionally it happens to me when I open a new bag of tortillas and some stick together. When I pull them apart, they sometimes peel. Heating in a microwave between moistened paper towels helps. jo

How do I make taco 'shells' from flat tortillas?

On ATK, they held one side of the tortilla with tongs and fried half of the tortilla, sort of in an "L" shape, with the upper part of the "L" held by tongs. Then when half of the tortilla was done, they would fold it gently and turn it over to fry the side that had been held out of the oil. I think they only used about 1/2 inch of oil. After draining, they put the shells in a 200Â° oven to keep warm. DB has a taco press, and so I've used that, but it requires more oil. Lars

My canned good are still good from irma, i have 2 jugs of water and some smaller bottles but i likely need a few more, always need more. I do fill 6 large mason jars with water and put in the fridge when a storm threatens and fill every pitcher with water for the cats. And i fill two large plastic lidded bins with water for flushing and bathing. I have 3 bottles of gator aid, which let me tell you if you have to work outside after a storm cleaning fallen debris is wonderful as you lose so much salt while sweating with no ac to cool off in. I have batteries, lamp oil, candles and matches btw cheap dollar store solar yard lights are not a bad way of keeping a little safe light on in the house at night. I pull my yard lights in before a storm and ready to use them indoors. I have a generator arriving this coming weekend, its my sister's and she is moving and has asked me to keep it for awhile, she said use if i need to, its big enough to run the fridge but not the ac. Got my battery operated radio and a radio that can be hand cranked that gets the weather stations. I bought enough cat crates to evacuate the cats in my escape from irma. And have since bought a sleeping bag and have it and other bedding in a box ready to grab if need to escape. I evacuated to my brother in Georgia for irma. He is my closet relative out of florida but it was not ideal cause irma headed for his place and while for florida standard it was not much of a blow, it blew enough to down his power and when he loses power he loses water as he is on a well. So he had a houseful and no working bathroom. I might aim for south carolina next time and my neice, she says she has plenty of room.

Check out Alton Brown's recipes on FoodTV.com. He had a show where he made tortillas from scratch, and did a lot of different recipes, including making tortilla chips.

If you have a mexican market nearby....just buy a stack of fresh corn tortilla's and cut them into quarters with a knife or pizza cutter. You can deep fry them or spray with oil or a non-stick substitute and bake for a short period. Corn tortillas in the bag...like Tostito's etc....have about 10-20 cents worth of product for the $3-4 price they charge. Enjoy your homemade product!

Getting into more involved with masa and doing your own you can find lots of great info here. I have found that if you have a local Mexican market you can skip that step and a lot of work...but if you don't...I'm sure from scratch is wonderful...and quite worth it.

Cookie, Sorry, I wasn't clear. Yes, cook the tortillas so they are just like the ones you'd buy at the store for soft tacos. Then let the cooked tortillas sit a day and then make chips. I don't suppose it's absolutely necessary to let them sit, but I find they cut and cook better if I do.

I make whole wheat pita chips, but not from scratch, that I bake in the oven.

I make the pita chips too. I love them, usually with hummus. It's been awhile since I made any. Tortilla chips first then next week, some pita chips! Thanks BTDT. Kids In the Hall is on so making my tortillas right after.
