Pineapple Baked Salmon

Hello all,

I always have 'stuff' left over when I tweek recipes. Last week I used about 1/2 cup of frozen pineapple juice concentrate to make Korean Fried Chicken - it was really good but I still had about 2/3 can of frozen concentrate. We had salmon planned for dinner on Friday soooooo........

I sprinkled some Penzey's Cajun seasoning on the salmon filet and then brushed about 1/2 cup of the defrosted pineapple juice concentrate over the salmon filet. Baked this for about 20 minutes in a 420F oven. WOW WOW WOW!!

I will be making this again. I will also try frozen Orange Juice concentrate.
