Crab cakes are my favorite! There are lots of recipes online, but I can post a couple if you like. You can use salmon in many crab cake recipes, too.

(Two tips: Coat crab cakes with panko instead of regular bread crumbs. And put them in the refrigerator for about half an hour before you fry them, so they hold together better.)

On the side, a salad is always good. Or maybe rice pilaf and a green vegetable (personally, I like asparagus with crab). I like to make some kind of sauce to serve on/with crab cakes, like a tomato relish or a remoulade.

Crab cakes are pretty easy, but not real economical. I usually buy a tub of crab meat from the butcher case (which can be very expensive) and supplement it with a can of good quality crab meat. Salmon cakes are less expensive, especially when made with canned salmon (that's what I use, but some people don't like canned salmon).

Salmon cakes are very easy to make and a long time family favorite. . .I take one can of salmon, take the bones out and the skin off. .then I put one sleeve of saltine crackers in a zip lock baggie and crush them with a rolling pin, add those to the salmon along with one egg, mix well. Shape into patties and fry (it doesn't take much oil at all)till brown. I love lemon juice squeezed over them on my plate. If you are not concerned about eating fried foods I would highly recommend a big ole skillet of fried potatoes with onions to go along. .

I make mine like Debbie does but instead of saltine crackers I use oatmeal! It makes my brain think they are even more healthy to eat because of the oatmeal! A cucumber sauce is good over them too.

Mine is similar to the others!

Salmon Croquettes
1 c red salmon or 1 cup--bones removed, save liquid
10 soda crackers crushed
2 eggs beaten

Pour salmon and liquid into bowl-add beaten eggs and crackers, combine
Shape into patties
Roll in cornmeal
Refrigerate until ready to use on wax paper
Roll again on cornmeal
Fry in oil until golden brown

Basic cheese sauce
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup milk
1 cup shredded cheese, such as cheddar or swiss
Salt and pepper to taste
Melt the butter in a medium saucepan over medium heat. Stir in the flour, being sure to combine it with the butter very well, to make a roux. Let cook, stirring constantly, for about 2 minutes. Do not let it darken. Gradually add the milk, about 1/4 cup at a time, whisking or stirring vigorously to incorporate. Cook over medium-low heat, stirring often, until thickened and just starting to boil, about 10 to 15 minutes. Add the cheese and stir until melted. Taste for seasoning and add salt and pepper as desired.

For a thinner sauce, add a little more milk. For a milder cheese flavor, add less cheese.

My Mom used to make a salmon loaf with eggs and crushed crackers. She would bake it I think and then let it cool in the refrigerator. THen slice it up and serve with fresh pineapple rings. We used to love it on a hot summer day with a salad. I must look for the recipe!

Mush, I make a tuna loaf. Wish I had some now! I could even eat it cold :o)

I make mine like Debbie, but instead of saltines, add Italian seasoned bread crumbs. My adult kids still love them, and so do the 4 young grandkids.

Hey, Debbie, you fix yours just like I do. Sometimes I use canned tuna if I just want a small amount. The fried potatoes with onions sound really good too!

I am going to try this tonite for dinner....cross your fingers for me. I am not a very good cook, but am trying new things. DH is a great cook, but since I am not working, I am trying to ease the burden for him. I have made some homemade cole slaw to go with, and may cut up some tatoes and onions also to bake.

I make Salmon Patties with seasoned with Green Onions and Bell Peppers and coated in corn meal. One can makes about 6-7 Patties. More than two can eat in one meal. They are easy to freeze in a zip lock bag and save.

My DD is a Gulf Fisherman and makes White Fish Patties the same way. Awesomely good.

My salmon patties are made with some leftover mashed potato, an egg, diced onions and some dijon mustard. Yummy.

I make mine like you Jasdip, but I add some chopped parsley and coat them in breadcrumbs!

I make tuna balls with leftover mashed potatoes, egg, and tuna. Drop in oil and deep fry. Yumster.
