Dinner tonight was Pizza. I made three different pizzas. Two for us and gave one to a neighbour.

The first out of the oven was topped with mushrooms and sausage.

The second one had sliced tomatoes and fresh basil.

and the third was just sauce with cheese and herbs.

    Oh I'm so far behind I haven't even said a word yet on this new WFD. Everything looks so good and the photos are wonderful!

    I've had a busy past couple of days and today was down in the town for a few hours with my friend Anne. I'll get to posting the past dinners tomorrow but have to say we had a great time walking around, looking at the wind-whipped waves crashing onto the seawall and having a tapas lunch in an old Canary house which was built in 1730. I managed to get some good photos of our walk and the restaurant interior.
    For now...here's where we had our tapas today:

    It was a charming place! Must go there again. I'm making up an album of the street scenes from today. The town was full of people and flowers and it was a great feeling to walk around and window shop the bakeries, cafes and boutiques. It was very warm too. Many people were dressed in shorts and summer clothing. I'll post the album link when pics are organized.

    Ann, your rib dinner looks amazing! How did you like the broccoli flan?

    Stacy, wonderful looking pasta. I am not a big blue cheese fan, but I am trying and I would definately try that pasta if if was put in front of me.

    Nancy great looking coffee cake. How do you like your new cookbook? Would you reccommend it?

    Sharon I am glad you and your friend had such a good time. The restaurant looks wonderful. It's nice that you are able to get out and enjoy yourself!

    Getting ready to go on holidays so trying to finish off stuff in my fridge. Made a pork roast the other day that I brined for three days first, then slathered the pork with grainy mustard, maple syrup, fresh thyme and lots of pepper, roasted on top of fennel, apple and a bit of olive oil. It was to die for. Served it with a cabbage and bacon recipe, that my son loves, some fingerling potatoes and some soy beans. We had leftover last night.
    Tonight I am making Pizza! Thanks to Linda! I am going to clean out my veggie drawer, and make individual sized pizzas thanks to the pans she sent me. I am also going to try out the semolina crust she sent as it looks like it is easy, (which is what I need right now) and tasty. I will try to take photos. I did try two of the new salts she sent me and they are wonderful! (thanks again Linda).

    I'm back from dinner. It was great visiting with our snowbird friends and we talked for over two hours. We were neighbors when we both lived in the boonies and they moved back to Ohio shortly after we moved. We went on a cruise together with others from the neighborhood and had so much fun with them once. So now we e-mail and get together once a year :-( Dinner--not so good. I ordered the fettucini alfredo with bacon-wrapped sea scallops. The salad that came with it was very good,the scallops cooked just right but the alfredo was disappointing, to say the least. It was a big plate of angel hair pasta with a huge glob of alfredo sauce out of a jar. Ick, ick, ick! What could be easier than alfredo sauce? It's just a little butter, cream, garlic and lots of parmesan. They had little rolls that came with the salad that looked a little like those biscuits at Red Lobster, but were floury and dry. Now I remember why we don't like to eat out. Harry had fried oysters, baked sweet potato and hush puppies. He said on the way home it wasn't very good, but if it's dinner time I swear that man would eat plastic! Guess we won't be eating there again any time soon!

    Split Pea Soup with chunks of ham. No debate for me....just can't....DH on zoom call with a friend he has a martini with every Thursday eve. All virtual since COVID except for once in our backyard with social distancing. They've done this for years. It's my quiet time :)

    Dinner last night was a first -- I made a pot of chicken soup when it was 100 degrees or more outside (we've stopped watching). Special request of son upstairs with covid. I figure today to tomorrow will be d-day for me, so waiting to see. Tonight will be either leftovers of the soup or verde chicken enchiladas and spanish rice made the night before or whatever DH makes. Could be BLT's -- not really into cooking today.

    No interesting cooking for people over here, but I’ve been cooking tasty food for dogs :-) We’re in Berkeley taking care of our friends’ very elderly and reportedly on his last legs little dog. I am, of course, determined that he will not expire on my watch, and when he eats enthusiastically I feel better. So, what to feed him? The base is a tasty homemade chicken stock, made from a roasted chicken, carrots, celery, onion - just like you’d make a chicken stock for yourself. We cook a batch of rice with that stock. Other chicken is browned then simmered, and minced up. His kibble is soaked in more stock. Then some more cooked chicken and carrots get pureed with stock into a sort of gravy-paste. Rice, kibble, and gravy are mixed, then briefly warmed in the microwave. Finally, crisp bacon is crumbled on top. I am pleased to say that Elderly Dog positively gobbles his food, cleaning his bowl reliably enough that I can give him his pills crushed in the food. I’d happily eat it myself, actually, except that there’s no salt or spice. Well, I don’t really like kibble. All the fixings are in stored in Tupperware so feeding doesn’t take long.

    aww, Sharon, that is so sweet -thank you. Maybe next time I concoct something it won't be in the likes of the most popular "bar food" around here - lol. maybe something a little more elegant? :-)

    Sharon, that restaurant looks wonderful to me. Call me crazy, but I'd rather have a bowl of chips and a bottle of beer in a place with an ambiance like that, than an amazing meal in a brightly lit cold place with no "atmosphere". It looks so inviting. It makes me think of this little place that we ate in Carmel. But that was pretty much outside. Come to think of it, we had to move tables after a bird let loose on my sister's shoulder...:-)

    Shelley, I hope you succeed with those pics - I am really anxious to see those little pizza pans in action! And your pork sounds great.

    Oh and Ann, I read over that previous smashed potato recipe from marigene and hers were oven roasted - can you tell me how you did yours, please? Gosh they all look so good - and I'm not even a big potato person!

    No idea what we're having - oh wait, yes I do! Marilyn's salmon cakes - I'm pretty sure.

    Last night we had my version of pork machaca, refried beans and rice. Not very photogenic. I did bake a few small loaves of 5-min. artisan bread which always turns out pretty good!

    Tonight will be something with chicken breasts, not sure what, yet.

    Dinner last night was super yummy -- Marcella Hazan's bolognese ragu over homemade fettuccine... I make it with a mix of beef, pork, and veal, and it was SO rich and luscious... I was worried at first since I didn't have whole milk, only 2%, but it made no difference in the end! Not to mention the bonus of making the house smell divine for the 4 hours it simmered...

    No pictures here, My camera is still fine but my computer has decided to toast the hard drive. It's terminal. Sigh. So, until I get it replaced, all posts will have to be done at work, LOL. However, the county's firewall won't allow access to photobucket, so there will be no pictures.

    It won't stop me from drooling over everyone elses's pictures, though. Yum.

    Stacy, you have come a long way from setting fire to the pizza. (grin)

    Jim, I'd be perfectly happy with cream cheese and smoked salmon every day for about a week, at least. Love it...

    Elery and I had scallops in a white wine reduction on Saturday and I baked Harvest Bread from the Electric Bread cookbook that I got from Dishesdone, I'm gonna make every darned recipe in there yet. Sunday we made sushi with the "sushi magic" sushi roller Elery brought, it was fun and he loves sushi. Monday I had leftovers because cabbage was 18 cents a pound and I packed about 20 pounds of sauerkraut.

    Thanks to Ann T, on Tuesday I made pot roast. I had more of that last night while I played with making sugar eggs. Remember those panoramic eggs with the scenes inside? It's just sugar and water, packed into a mold like mud pies, then left to harden and hollowed out. Sounds easy enough, but I broke 4 or 5 of the halves while hollowing them out, so I made a bunch, just reusing the sugar. Finally got a front with the window and a back, it's on my counter now. Tonight I'll put it together and decorate it, it'll go on top of my Easter cake. Maybe by then I'll figure out how to load pictures to Ashley's laptop and be able to post them again.

    tonight? It's anyone's guess. I think I'm going to spend the evening playing with fondant and make some cocoa krispie/peanut butter treats. I'm still (as always) trying to clean the pantry.....

    Sharon, I'm going to miss Blackie's weather reports. :-(

    As always, this thread rocks! Ann, you had my favorite ribs, that's the only way I make them now since you introduced them to me!

    I'm on vacation and not posting much but I wanted to thank Wizardnm for her cream cheese wrap recipe - we had company for lunch today and Ken said PLEASE just a plain sandwich for a change (cause they're playing golf after lunch) so I actually complied! I made a nice platter of turkey wrap pinwheel sandwiches and they were just great, so very tasty, thanks Nancy! I also made Linda in Tenessee's "So Long Sub" and they loved that too - pastrami, fresh mozz, basil, tomato, balsamic, evoo on French. Tomorrow's breakfast will be Ginger's English Muffin strata - with sausage and swiss/grueyre/cheddar/green onions and eggs. Great lunch and breakfast and I thank you my friends.

    I'm behind too in cooking and at looking at this thread! Ran into problems at Mom's with the renovation - let's just say plumbing problems and it wasn't pretty. But, all is well as of right now.

    moniqueb- record snow. We didn't get much this year but I think it is so pretty as long as I don't have to drive in it - LOL!

    jimtex - Salmon on bread sounds super to me. Ann your ribs look beautiful. Wizard shrimp fried rice is one of my favorite dishes (I really love Asian food) and coffee cake to boot. Gina your penne rigato looks super and Stacy your casserole looks FAB. - I love creamy texture and it sure looked it and the salmon cakes will definetly make for a great meal.

    disney there is nothing wrong with leftovers as we have been eating them for the last two nights with all this business going on at my Mom's.

    Canary that rest. is beautiful looking. I love the colors and it looks so cozy. I'm glad you enjoyed it so much. ssomm., I love fingerling potatoes and pizza too! Two great sounding meals to me.

    marigene - OH YOUR BREAD! It looks wonderful. I love, love, love bread. Have I told you that I love home made bread?

    fear your dish sounds wonderful and Annie sorry about the computer but your scallop dish sounds lovely and well, you know what I told you about the sushi and I know what you told me - I need to give it a try - just need some more pushing.:)

    As I stated above, lots of leftovers so hopefully I will get back to some cooking over the weekend - I actually miss it. Thank you for the kinds words about my picture above. I'm learning from the pros here!

    Dinner tonight was:
    Elk burger meatloaf
    Mac & cheese with cheese curds (which are really yummy) and cheddar cheese.
    Mixed veggies.
    Confetti white cake with vanilla frosting and sprinkles.

    I made a Stromboli for supper. I used some Chicken Stir Fries.
    With all kinds of veggies Brocolli, Peppers,Carrots, etc.
    Simmered for 8 minutes and laid them on the dough, along with,
    Ham, Pepperoni, Cooked Sausage, Meatball pieces, Mozzerella and Parmesan Cheese.
    The dough was 9in. X 14in. I dampened the edges and rolled it carefully.
    Seam is on the bottom, tucked the ends under and pressed them down to seal.

    Welcome back Lou, your heavenly Stromboli looks delicious.

    Sorry about your hardrive Annie. My desktop, with all of my photos and editing software is in for repairs after a big BANG and an instant black screen told me something was wrong two nights ago. The power source blew up (out?) inside the tower. That alone was pretty inexpensive to replace but my choices were OEM part for about $175 or generic for $70. The generic one wouldn't fit with the existing video card so I decided to upgrade and replace the video card too. It was a little cheaper to do that than get the OEM part. I hope I'll have it back on Saturday. Should be about $310. with the labor - I hope I don't have another $$$ surp;rise when I go to pick it up.

    So here is a Tinypic version of tonights Asian soup. I overbought on vegies when I went to the Korean market last weekend and wanted to use some up. For the broth I used beef Pho base with a little sesame oil, soy sauce and a touch of a very flavorful and very hot chile paste that a Laotian friend of mine makes with fresh chiles, garlic, fish sauce and sugar. She sells it at our farmers market along with vegetables from her garden. She almost always sells out of the chile paste. I had some fresh soba noodles in the bottom of the bowls and added baby bok choy leaves, shitake mushrooms, snow peas, fresh bean sprouts, and some strips of beef. Comfort food with a kick.

    Yummy dinners again! Lee that Asian soup must have been delicious...I know I'd love it!

    Lou I've never had stromboli but it looks really good.

    And up there are some beautiful blueberry cupcakes from Sol. They look lovely and making me hungry!

    I'm doing a hit and run today as I have to go out in a little while, so want to get caught up here from last Monday evening.
    I was out for a ladies' night at the French restaurant to meet another lady friend from Sweden who comes here on holiday twice a year.
    Good excuse for us to reserve a table and go out for lots of chatter, food and some wine! There were seven of us at the table and although some had steaks or cordon bleu, three of us had my favourite chicken salad with avocado and roquefort. We all finished off with crepes flambe Grand Marnier, and after we'd had a couple of bottles of wine, one of the girls (Anne's daughter also visiting from England) decided it would be easier if we just drank the Grand Marnier straight from the bottle! (Just kidding of course!!!)

    Next day I made almond crusted salmon fillet with parmesan roasted asparagus & steamed potatoes.

    Wednesday Anne and I went down into the town for some shopping and walking around. The town was busy with tourists and as we have another African wind , it was quite warm. You can see that people are dressed for summer. We had a cafe con leche and a lovely fresh raisin-filled magdalena in a sidewalk cafe and after walking around the main plaza we stopped for lunch at the old Canary house (built 1730) seen in my other photos above. After checking out the upper floor dining room, we decided we'd rather have just a few tapas downstairs on the little green tables where it was cooler.

    We both ordered Russian Salad (ensaladilla rusa)...a typical potato and tuna salad found in tapas bars, and sizzling garlic prawns....another tapas bar favourite. We walked around the rooms of this old house and looked at the Spanish Serrano hams and chorizos hanging up in the wine bodega then we continued on our way to the main San Telmo seawall where we watched the huge waves and did some people watching as well.

    I'll be posting a full album of the street scenes, boutique and bakery windows and the beautiful sea views....over on The Gallery some time in the next day or so.

    Last night I made pizza using my new pans from Linda. Also used the semolina crust mix she sent. It was wonderful! We loved the crust and my son had a great time making his.

    SharonCB, I love the look of that restaurant. Your meal looks delicous. I'd like a glass of white wine with those garlic shrimp though. I know it doesn't matter but I just can't drink red with fish. I've tried, but I get a metalic strange taste regardless of good the wine is.

    Lou, now that is a fine looking stromboli. And Lee I would love a bowl of you asian soup.

    Shelley, I'd like a slice of the pizza with sausage. Yum.

    I worked the last two days so needed something that was quick to put together when I got home. Wednesday night was pasta with prawns and garlic toast. And last night was lamb shanks on a bed of yellow cauliflower puree. I put them in the oven in the morning and Moe took them out when the timer went off. He also put them back in the oven with potatoes and rutabaga before I got home. All I had to do was cook the yellow cauliflower and puree it.

    Linda, nice to see that you're using your new pans - and the pizza mix. I always put semolina flour in my pizza crust. I was in the mood for Italian, but eggplant was on sale and so I made:

    Eggplant Parmigiano with fettuccine and broccoli. Lori sent me these plates in a previous swap - perfect for pasta.

    Here's {{gwi:1498630}} before I cook it. I've gotten very efficient with cooking eggplant this way. I use a combination of whole wheat and white flour and Panko bread crumbs. I use buffalo mozzarella to avoid the lactose.

    Everything looks soooooo good! I'm just home for a short break to walk the dog (Dixie) and eat some late lunch and then back to Mom's. We more then likely will be ordering take-out (again) sigh...not enough hours in the day to do everything.

    OMG y'all are just killing me! Pizzas, Strombolis, Eggplant Parm, Lamb Shanks, Oh My!!!

    Last night I pooped a fast cassoulet containing smoked kielbasa, cauliflower, white beans and greens with the last of my fresh herbs, some wine and a bit of concentrated oxtail stock. C-O-M-F-O-R-T!

    I need to shop to replenish the pantry and fridge tomorrow. I also need to make more chicken stock. Keeping frozen homemade stock on hand makes all my recipes turn out tastier. No more store-bought stock - I'm just not going to buy anymore.

    I am so hungry right now! I really only cook on the weekends, my husband is retired so he kind of cooks or brings something home for our 17 year old son. I decided earlier this week when I opened this thread & saw ann's pizza that I am making pizza this weekend. I've made homemade pizza before, but it is kind of a hit/miss sort of thing, I'm not sure why. I'm never quite as happy as if I went out & got it though, but these look scrumptious. My son requested calzone instead, so I'll make both. That stromboli looks wonderful. I would attempt something like that, but I know DH & son would look at it & see VEGETABLES, & I just can't take the whining. Looks perfect as it is to me.

    Here we are again and I'm really admiring your eggplant parmigiano Lars! You are so organized in that lineup too.
    Have you posted the recipe? I would like to try that as I haven't done any eggplant for a long time.

    All dishes look so good: Marigene's chicken, Shelley's pizza, Ann's lamb and shrimp (we had shrimp yesterday too)....I would love to have rutabaga now too...my favourite vegetable. Lou your sinbuns look absolutely sinful! And Gina....you're giving me ideas about the blog.
    I love to go out and take pics of the local colour and events here and that might ensure I do get in a daily walk. LOL.


    Dinner was a shrimp vol au vent and a tomato & avocado salad.


    Annie I opened the patio door yesterday morning to find Tigger sitting on the doormat waiting for his breakfast.
    I told him he was going to have to be the weatherman.....at least for today, so he had to sit there while I got my camera.
    He said 'okay but don't count on me too often as I'm a free spirit and don't like to make commitments'!
    He posed patiently for me, although looking a little annnoyed!

    I am finally getting over the hump of this flu and breathing better! Sheewesh!

    Last night ended up being a cheese pizza using the five minute bread recipe. Everyone said it was great!

    My chest is still very congested and I am not 100% so maybe I will give that Egg Drop Soup from the other week that looked so good a try.

    For some reason, I am craving a rich eggy bread pudding and lots of rummy sauce. Maybe that will be my dinner!

    I came here for inspiration and wish I could just place an order for any one of these meals to be delivered!

    I was up late baking bread last night. I started a biga Tuesday night and kneaded up some bread dough on Wednesday morning that I put in the fridge in the mudroom and promptly forgot until yesterday. But we were out most of the day so I didn't get around to taking the dough out of the fridge until around 4:00. It took a while for the dough to come to room temperature so it was after 11:30 PM before the bread came out of the oven.

    Sliced this morning.

    Pan fried a T-Bone steak for dinner. Wonderful piece of beef that I picked up at a little butcher in Ladysmith.

    Sharon, here's my eggplant recipe. We had it again tonight as leftovers, but with Lima beans instead of broccoli. I've decided that fettucini is the best pasta side dish, but the green dish can been anything. I really don't like the leftovers as much as the first day, but as leftover go, it's pretty good. We were at Wizard World at the Convention Center downtown today, for DB's birthday celebration. There might be some videos later. I had a rather poor Caesar chicken salad for lunch at the Center - it was not even a true Caesar salad, but it got me through the afternoon.

    Stacey, yes I do use my wok for frying the eggplant. I also have a wire rack that fits inside on one side of the wok, but I forgot to put that in for the picture. It makes the process go more efficiently. This dish is a lot of work, but I love eggplant so much that I do it fairly often anyway, but it does make a meal that I consider special.

    We had sushi for dinner yesterday, with shrimp summer rolls, all from Ralphs Waterside Marina Market!

    Did you have fun at Wizard World Lars? Tell Kevin Happy Birthday from me please.

    I brined pork chops for a few hours, then pan-cooked them. I deglazed the pan with a smidge of orange juice, let that cook down, then added butter, garlic and fresh chopped sage and let the butter brown and the sage get crispy. Poured that over the chops and - oh my! I think brown butter sage sauce is my new favorite. Some simple baby bok choy, carrots and a small salad rounded off the meal.

    Today was another warm day....beautiful sunshine since early morning. I took some recycle bags to the dropoff with the car and then picked up some more fresh fruit and juice at the supermarket. Didn't feel like cooking but I had bought some liver and bacon so went ahead and made a quick salad, cooked bacon, plenty of onion and the liver and again, the liver turned out perfect.....tender and delicious.
    I made some nice crispy roasted potato wedges in the toaster oven to go with it.

    We sat outside on the patio and really enjoyed our dinner. Did some fresh green beans & carrots as well and we opened a bottle of the local red wine. Great way to spend a Sunday afternoon.

    I've now uploaded to The Gallery the photos I took last Wednesday on my walk through town with my friend Anne, our stop for lunch at the tapas restaurant in the old Canary house and our wander by the seawall to watch the waves.     Lars, thanks for sharing your eggplant recipe, I am copying it and will certainly make it.

    I made pulled pork barbeque and served it on toasted buns, some homemade mayonnaise type potato salad made out of red potatoes that turned out pretty good, and produce department packaged corn on the cob that was surprisingly good. I was starving for pickles and ate half a jar of them by myself I think.

    I made a coconut cream pie that was only okay. It was a new recipe that had me fold some whipped cream into the coconut custard and we thought it ruined the rich coconut custard and "watered" down the flavor. Live and learn..

    Supper? Not yet, but yesterday I had salmon and roasted potatoe. I have Sue's Roadhouse ribs in the crockpot waiting for me, if I can manage to actually get home!

    Did you ever have one of those dinners that was a total hit and you can't wait to have it again? This was it. Great dinner for us! A keeper. Started with Jain's version of Chevy's Salsa, I pureed it, the kids don't like chunky. Excellent recipe! Then I used some of it on the plate with a recipe I found on the Simply Recipes blog

    Grilled Lime Chicken with Black Bean Sauce I made a couple changes to the sauce, used chicken broth instead of water. I thought it was thin so I added two more cans of black beans, some cumin, lime juice, chili powder, a couple jalapeno's. Two and half hours in the frig to marinate was fine and I did not re-use the marinade. Very flavorful. Loved it! Tomorrow we'll have the leftover "sauce" for lunch. It was basically black bean soup :)

    Annie, I'll bet today seemed extra long at work since you were there last night. Hope you were able to eat some ribs.

    Denise, did you grill the chicken outside? I can hardly wait for spring...it's not here yet! Here's the snow that's been pushed from the driveway into a space the width of a car and about 24 ft long.

    We went out for dinner on Saturday night. The Rowe Inn is just a few miles from the house and a favorite. Our dinner's were all excellent as usual and I didn't think about taking pic's quick enough, before we had eaten most of our dinners. I did however manage to take a pic of Kim's dessert...a chocolate ganache with ice cream and a raspberry coulis...

    Last night we had our traditional boiled dinner. Corned Beef, red potatoes, rutabaga, parsnips, carrots and cabbage.

    I can't wait for leftovers tonight!

    Nancy, I had ribs last night about 10 p.m. I knew it was late but I was going to have them, by gosh. A bit overcooked, frankly, but still good.

    Tonight I have my corned beef, cabbage and red ptoatoes in the crockpot. And yes, I'm still at work. We're working hard on a case against a corrupt police officer, something we have a serious distaste for as I'm sure you know. Sigh. Who polices the police? That would be us.

    At any rate, another hour or so I'll be home eating my supper and celebrating St. Patrick's Day. Also, incidentally, the anniversary of the day the Judge signed my divorce judgment. Double celebrations!

    This respiratory infection has taken me down again this afternoon. My daughter is bringing over some New York Style pizza from our favorite joint for my husband, herself and her SO, and our son and DIL and two of our grandkids.

    I'm having Celestial Seasonings tea and an early bedtime.

    Last night our DIL made a salad dressing I have to share with you all.

    She took a few ripe avocados and just fork mashed and whipped them with some blue cheese and THAT was it! A little coarse ground pepper and the salad! It was the best salad dressing I've ever had in my life.

    Very rich and fresh and wonderful.

    The other night I had a small boneless pork loin. I sliced it and stuffed it with apples and raisins...cooked some apples and onions in apricot brandy to pour on the top..

    After seeing Nancy's and Marigene'c corn beef dinner I have a craving for corn beef. Especially for a corn beef sandwich.

    I grilled a small Prime Rib for dinner last night. Just big enough for two thick slices. Served with homemade horseradish, purple cauliflower, zucchini and roasted potato wedges.
