leftover Pork?

My dear Chef has asked me to help find something wonderful to do the remains of a pork tender loin roast we had for dinner tonight. We had it with roasted potatos and peach chutney. It was very very good..nice and moist and good looking. Can you help us?

I have a few favorite's for leftover pork.
Enchiladas, BBQ sandwiches, diced in soup or chili.

Stir fry...sweet and sour pork....and if it's nice and lean I love it sliced thin in a sandwich with lettuce nustard and a couple of slices of dill pickle.
And I also like it "diner style" heated and served on an open face sandwich with gravy over all.

I had Mexican leftovers yesterday also, but I had smoked chicken breast instead of carnitas. I prefer pork but seldom buy it because Kevin won't eat it. I should probably buy small quantities just for myself. Migas is one of my favorite breakfasts to make, and Kevin likes it too, but I only make on week-ends. Sauce for Pulled Pork

I have made about a million sauces trying to get a perfect sauce for pulled pork. I have two I like very much one is quite "vinegary" the other more "tomatoey" but I have never seen a recipe that is based on a pickle relish. Maybe you could ask the restaurant what they use?

Like Rhizo, I'm curious how your taste test turned out Shirley! Pretty creative, lol. Sue, that's great that your hens are producing enough eggs that you can sell them! Obviously they're happy and healthy, and you're having a lot of fun, having them. They're a good way to get rid of food scraps, too. Georgysmom, you made me smile when you said your hubby will go out at the drop of a hat. I tried grits once, when I travelled to Louisiana, don't care for it at all. :) Hey your guests have great taste, Rhizo! LOL I know they'll be well fed by you, with or without homemade rolls. ;-D OF, nothing wrong with repetitive meals, and yours are always good.

I was checking out who had it online the other day and while you might not want 6 bottles of it.. smiles... Amazon has 6 bottles for $27.05. It's free shipping too. Most places sell it for between five and six or up to eight dollars, so that's a great price. They say they're 15 oz bottles. Maybe somebody else would want to go in on it with you?? I've always heard of it described as a mayo with more vinegar and also with a mustard taste. Sounds good. Smiles. My DW used it when she used to travel to the UK all the time for buisness. Surprised she didn't bring any back. I have a head of savoy cabbage so I'm going to make my easy 'stuffed' cabbage casserole that I described above. It makes it so easy and quick which is just what we want on a Saturday night. Steam the cabbage briefly, layer it with dirty rice, pour some tomato juice mixed with onion and garlic powder between layers and on top and bake for about 40 minutes. I'll see if I can manage to take a picture. I seem to be terrible at that. The camera is always in the other room and it's a kind of big house and by the time I'm done cooking I'm not walking very well. LOL.. We will see. Oh btw, I always make two dishes of this because Christy gets burnt out on "red" since I always have something made with red sauce around I make her a version with just some broth on it. I do stuffed peppers for her the same way. No red. I do love the red on it but prefer tomato juice since it's nice and light although I'll just water down tomato sauce or puree with chicken stock/broth, if I don't have any handy.

Also nice diced in fried rice, or cubed in a sage bread dressing casserole.

Got gravy?. Add the cut up pork to the gravy, heat and server over noodles...

WOW, something I know how to do, Rita's right! This is very good and you can't get quicker unless you eat an apple!

I use a jar of Heinz pork gravy and Pennsylvania Dutch brand noodles, I like these better than those light & fluffy brand noodles.

Cut the gravy by one third with water or chicken stock, if you don't it becomes to thick and overpowering.
Cut up the pork into pieces about 1/2 x 1/2 inch (it'll shrink).
Don't salt or pepper, make this an individual thing.

Put the thinned gravy and pork in a correct size sauce pan and slow simmer for about 35 minutes. Near the end use corn starch to thicken to what you like, spread over cooked noodles, S&P to taste.
This also works really well with leftover roast beef/beef gravy.

These are terrific ideas. Thank you. Every thng we thought of sounded boring. But these sound like fun.

Linda, shouldn't we have a nice little ball of mashed potatoes with a crator on top for the gravy to complete our diner plate? That really does sound so good.

Yes gravy is always an instant away and that means that a meal is always a instant away.

Teri, do you have a great bbq sauce recipe? We're tired of mine.
