What can I make with leftover roasted pork loin?

I have about a pound of pork loin that was roasted with a dab of olive oil, studded with garlic, salt, pepper and a bit of rosemary.

I have no idea what to do with it and the pantry and frig are pretty bare and I need to feed the family. And I think I'm coming down with something so I'm firing on only half my pistons...

help....

Yes! Poke flied lice would be just sooo easy peasy...except one should really let the Lice cool down prior to putting that together.

A frittata or omelet
BBQ pork sandwiches
Noodle bake

I use mine for stuff that normally needs hours of cooking, so that exact timing isn't needed. For example, if I'm making oxtail or beef shank, it doesn't make a difference if I pressure cook it for 1 h or 1 h 15 m, because normally it doesn't make a difference if you cook it (w/o pressure cooker) for 3 h or 3 h 45 m. There is occasionally stuff that can be cooked in a shorter time, but where the exact time still doesn't matter. An example is making a quickie chicken stock, brown the carcass and add water + veg, then high pressure for 20 m (1 h w/o pressure) - but if I get distracted so it turns out to be 30 m (1 h 30 m w/o pressure), it doesn't matter. I recall once investigating the feasibility of a temperature probe that could be placed into meat inside the PC, and transmit a reading to a gauge outside the PC. I didn't find anything.

Thought of you today -- while I was cutting up two half pork loins, I did one roast, one small roast butterflied to stuff, a few chops and some cut up. I was reminded that DH will take the smaller pieces at the end and tie them together (like a beef filet might be) if he want to make another "chop" rather than cubes for another use. Good luck with getting the house sold. I know that will make life and finances easier once you do. We had a period with two homes -- not my favorite.

I always have pork loin left and my husband loves these two: Pork "Tidbits" on Garlic Bread Prepare garlic bread using your normal method. Dip slices of pork loin in Duck Sauce and then spread more on top. Bake on baking sheet at 400 for approx. 15 minutes. I always just use leftovers for this one - works great: Sweet and sour pork Ingredients: * 1 1/2 pounds boneless pork loin, sliced 1/2-inch thick * 1 tablespoons vegetable oil * 1 can (20 ounces) pineapple chunks in juice * 3/4 cup water * 1/4 cup vinegar * 1 tablespoon soy sauce * 1/4 cup brown sugar * 1/2 teaspoon salt * 2 tablespoons cornstarch * 2 tablespoons water * 1/2 cup thinly sliced onion * 1 green pepper, cut in thin strips * 2 cups hot cooked rice Preparation: Directions for sweet and sour pork Cut pork slices into strips about 3 inches long and 1/2 to 1 inch wide. SautÃ© pork strips in hot oil over medium heat until lightly browned; drain. Drain pineapple; reserve juice. Combine pineapple juice, 3/4 cup water, vinegar, soy sauce, brown sugar, and salt; pour over pork in skillet. Cover and simmer 1 hour, or until meat is tender. In a cup, combine cornstarch and 2 tablespoons water; stir until smooth. Add cornstarch mixture to pork mixture. Cook over low heat, stirring constantly, until mixture is thickened and bubbly. Add pineapple chunks, onion and green pepper. Cover and simmer sweet and sour pork for 10 minutes longer, or until vegetables are tender. Serve sweet and sour pork over rice. Sweet and sour pork recipe serves 4 to 6.

Sour Cream Rye Bread from "The Bread Lover's Bread Machine Cookbook" by Beth Hensperger, (2000) Havard Common Press, Boston, MA page 139 2-pound loaf 3/4 cup water 2 1/2 tablespoons balsamic vinegar 7/8 cup sour cream 3 TBLSP dark honey or molasses 3 TBLSP vegetable oil 2 1/2 cups bread flour 1 1/2 cup dark rye flour 1 1/2 TBLSP instant potato flakes 1 TBLSP + 2 tsp. gluten 1 TBLSP + 1 tsp. caraway seeds 1 1/2 tsp. ground coriander seeds 2 tsp. salt 1 TBLSP bread machine yeast or 2 1/2 tsp. SAF yeast Add wet ingredients and then dry ingredients into loaf pan in the bread machine. Use the standard setting. I bake mine in the bread machine but you can use the dough setting I guess. If using the bread machine to bake, set the crust on medium. Beth says the loaf is delicate when coming out of the pan so remove carefully and cool it standing on its side. I left it in the bread pan overnight to cool so didn't notice any delicacy taking it out. Lpink's notes: I used low fat sour cream and some non fat greek yogurt since I was almost out of sour cream. I drastically reduced the caraway and corriander. I used crushed caraway since I don't like seedy rye. I think I only used about 1/3 of both for the recipe. The flavor was still good with just that amount. I also used somewhat less salt, again maybe 1 1/2 tsp. I used half honey and half molasses for the sweetener. I also used some whole wheat bread flour in place of the plain bread flour, but not a whole lot, like maybe the equivalent of 1/2 cup for this recipe.

fritatta is my fall back with left over veggies...haven't tried pork...hmm

I may have hte makings of some of this other stuff...

This is simple and delicious!

Chinese Pork and Rice

2 TB butter
2/3 c. uncooked long grain rice
1 t. salt
1 large onion, sliced into thin strips
1 green pepper, sliced into thin strips
2 ribs celery, chopped into thin slices
1 cup or more cooked leftover pork chopped small
1 1/2 cups boiling water
1 bouillon cube
2 t. soy sauce or more to your taste

Melt butter in a heavy skillet. Add uncooked rice, salt and cook stirring until rice is golden. Add onions to rice and cook several minutes. Pour in boiling water and add cube. Cover tightly and cook 20 minutes until rice is tender. Add green pepper, celery, and pork to skillet. Cover and place on warm spot on stove for 10 minutes or until vegetables are tender but still a little crisp. Just before serving, stir in soy sauce. Serves 4.

You could use beef broth instead of the water and bouillon cube. Just be sure to heat the broth before adding.

thanks teresa, I've saved that for furure reference.

What I ended up doing was:

sauted a sliced onion, added some steamed broccoli and carrot, snap peas and cubed pork and poured over all a bottle of Trader Joe's Thai Yellow Curry simmer sauce that I found in the way back of the cabinet.

right before serving I tossed in some fresh pineapple chunks, served over brown rice with a sprinkle of cashews on top.

Make hot pork sandwiches with the leftover pork. Homemade fries on the side. That is what I did this week with leftover pork roast.

Also great sliced thin and used as a fajita type wrap. You can add mushrooms, onion, green or red peppers (all sauteed) and avocado if you want. Top with sour cream and grated cheddar.

If that's what you can do with a bare fridge and pantry and firing on only half of your pistons, I wonder what you'd cook up with a fully loaded larder and 100% health? Here's hoping that you did not come down with anything.
