recipes versus pan sizes ...

A lot of my old family recipes do not give the pan size for the recipe so I have begun to list it on the recipe now once I've determined it. The pan sizes are not always visable on the pan either & I'm not good at sight judging so have to get out the tape measure! After I have measured the pan I turn it over & using a marker I list the size & then cover it with clear nail polish to preserve it. Now I can pair my recipe size to the appropriate size pan easier. Have others done this also?

You're way more organized than I am! I either remember....or I don't.
I have one strange sized pan that is for "Isobelle's Brownies"....you can't make the brownies unless you have just the right sized pan. You can use 2 loaf pans....but it doesn't get as dry on top as I like it to.
I am sure when one day my kids clean out my house they will toss the pan because it's old blackened tin plated steel, then wonder why Isobel's brownies don't turn out right!

The writing and clear Nail Polish may burn off and you will have to keep measuring.

Leave a ruler on the work top.

I found a recipe on line at EatingWell that is pretty similar to Coconut's recipe except it uses greek yogurt (or regular yogurt with some of the whey drained off like for yogurt cheese) in place of half the Neufchatel cheese. I think I'll do that. With only my DH and me at home, we need to have something that is healthier but I don't feel we have to go overboard. The Eating Well recipe uses egg whites instead of whole eggs and uses melba toast and olive oil in the crust. I think I'll use whole eggs and graham crackers because I love a graham cracker crust. I've seen some recipes that use some nuts and two tablespoons of butter in the crust instead of 1/4 cup butter and I think I may do that. I looked at the Cook's Illustrated recipe, but it uses cottage cheese for part of the cheese. I've made a cheese cake with that once before and I wasn't totally satisfied with it. But the fresh strawberry topping from that recipe looks like a winner so I think I'll use that. Lou, I like my cheese cakes dense and creamy I think. I may try your recipe another time. It looks like it is crustless - is that correct? I tested the pan by putting in some water. It leaks out slowly where the two ends of the sides meet. I guess that's pretty hard to avoid. I'm hoping that the cheese cake batter is enough thicker to not leak out.

You can calculate the size difference by comparing the squares of the diameters. This will give you 100:81, or approximately 20% more in a 10" pan compared to a 9" pan. The volume will vary slightly because of the slanted sides, but this should give you a close approximation. For me, I buy new pans or alter recipes. I had a recipe for a lime pie that called for a 16 oz can of sweetened condensed milk, and the cans today are 14 oz and so I added a couple of tablespoons of cream cheese and a tablespoon of sugar. I was going to use my cast iron, but ended up using a large sloped-sided braiser because I thought it was bigger than my cast iron. I think the cast iron would have turned out better because of the heat it would generate to melt the toppings after I flipped the crust. I will definitely use a cast iron next time. I had to take each pie out and use the oven to melt the toppings more. It was easy taking them out as they're pretty crisp with not much sagging - I used an extra wide and long spatula. I liked this method as it was very contained and you can actually make the crust ahead and then top them and warm them in the oven. For a crowd, I don't like making pizza in the oven because the pies seem to need more attention and often times the middle isn't as crispy as the outer part...etc. I like this method as much as I like the 'stromboli' method (roll out the dough, add topings, then roll into a long snake and bake at 500 for 14 or so minutes) because it's just easier for me to prep ahead, cook, and serve(and the taste is the same). Couple of things I learned last night: -I purchased two things of dough from a local pizza place. Next time I will cut the dough in half and roll out a little thinner. It was good, but I prefer a thinner crust and using one thing of dough made a pie that was too thick for my taste. -Keep the heat steady at med-high, and don't futz with the dough. If it starts to rise, gently push it down. Check that it isn't burning. As soon as you turn it, add the toppings and cover right away. -Use thin slices of cheese or grate it so it melts quicker. -Keep and oven on 200 degrees in case you're making more than one. This will keep the other hot until you're ready.

Yes, those are all the ingredients. Here's how you put them together: Beat egg whites till foamy. Gradually beat in 1/4 c. sugar until stiff. Beat yolks with 1/2 c. sugar until pale lemon color. Add almonds, salt, and 1/4 c. Kahlua. Mix well and fold into egg whites. Pour into greased springform pan (what size????), bottom lined with greased wax paper. Bake at 300 degrees F. for 60-65 min. Loosen sides with a sharp knife, cool 5 minutes. Remove sides of pan, invert on rack to remove wax paper. Turn over and cool. Drizzle cake with 1/4 c. Kahlua before frosting. Frosting: Melt 6 oz. chocolate chips in a double boiler. Cool slightly. Gradually stir in 1 stick of butter, chilled and cut in pieces, and 2 tsp instant coffee dissolved in 1/4 c. Kahlua. Chill until spreadable OR pour over cake.

I also write the Cup capacity on the bottom of a few pans & bakers that I use with recipes that I sometimes need to double. A large Sharpie marker lasts fairly well.

hawk: No, so far the writing/nailpolish has held up well & still visable. OK, so I'm a labeling 'freak'but it has served me well! :)

I think using a Sharpie is a little more likely to last, and heating up dried nail polish doesn't appeal to me. I just have a ruler in my utensils drawer.

You can scratch it in the bottom, with a small sharp tool.

I haven't done your thing. Sort of remember the different pans and what they hold.

If a recipe calls for a round pan and you would like to use a square pan.
Fill one pan with water and pour it into the other,
to see if it is about the same capacity.

Yes, Lou I too have tried the water tip when I had a bundt cake recipe & didn't know how much my different bundt pans held. Of course (ha) I had to then write the cup size on the bottom with a Sharpie again!! My son has a favorite name for my 'marking' obsession ... don't ask!

That idea of the engraving pen might work ... will give it a try also.
