Would like information on the correct pan sizes for loaf pans.

I would like to have the correct dimensions and the weight of dough that the various loaf pan sizes will accommodate.

Home bread bakers please share this information with me and some advice on good, better, best loaf pans to buy.

Experience means a lot in home baking!

Dough Weight to Pan / Loaf Size

Here is a list I have accumulated over the years. It also includes the approximate flour amounts, unfortunately in cups (volume) and not weight. I have only recently (since finding TFL) begun weighing ingredients.

Artesian
ÃÂ· A round 8" brotform banneton needs between 0.5 and 1 lb (227 - 454 g) of dough, which roughly means recipes with 1-2 cups of total flour. Makes a "small boule".
ÃÂ· A round 9" brotform banneton needs between 1 and 2 lb (454 - 901 g) of dough, which roughly means recipes with 2-3 cups of total flour. Makes a "medium boule".
ÃÂ· A round 10" brotform banneton needs between 2 and 3 lb (907 - 1361 g) of dough, which roughly means recipes with 4-5 cups of total flour. Makes a "large boule".

Loaf Pans
ÃÂ· A 9x5x2 3/4 loaf pan needs between 1.25 and 2 lb (680 - 907 g ) of dough, which roughly means recipes with about 3-4 cups total flour. This creates a "large" loaf.
ÃÂ· A 8x4x2 1/2 needs between 0.875 and 1.5 lb (394 - 680 g) of dough, which roughly means recipes with 2-3 cups of total flour. Makes a "standard" loaf.
ÃÂ· A 7x3x2 1/2 needs between 0.6 and 1 lb (272 - 454 g) of dough, which roughly means recipes with 1.5-2 cups of total flour. Makes a "junior" loaf.
ÃÂ· Jumbo Pan - 10x4.5-inches - 4-5 cups flour - 2 lb (907 g) dough
ÃÂ· Quick Bread Pan - 9x5-inches - 4 cups flour - 2 lb (907 g) dough
ÃÂ· Standard/Large Pan - 8.5x4.5 - 3 cups flour - 1.5 lb (680 g) dough

Well, what a treat to hear from you, ann_t. I really appreciate you stepping up, welcoming me to the forum and sending me the excellent information.

A few months ago I had looked over The Fresh Loaf website and found it to be intriguing and packed with useful information. Seems as though most contributors share their experiences which are so valuable and usually helpful, too.

I also took the opportunity to visit your website.Beautiful photos, recipes that held my interest and over all I thoroughly enjoyed my visit. I'll return and make more contact with you soon.

I guess it really depends on what you need. Some double loaf pans are just one pan with the capacity for 2 loaves. While the Italian double loaf pans are something like what Annie has, to make baguettes with (link below). The Lockwood makes 2 pans that attached to each other for the double loaves. In fact, I have some Lockwood triple loaf pan and they are excellent. I was going to run a bakery business but unfortunately it never materialized. Still have 10 of them sitting in my basement. The 3 of us just don't eat enough bread in a week to use this triple loaf pan. The size of one single pan is 13.5 x 5.5 x 2.5". Al Here is a link that might be useful:

Recipe below. Natal, I've never had the need to flour a cake pan. Is there a reason to flour them? I also detest the taste of flour on a cake. Are the pans floured just to get the cake out of the pan? I usually don't do that, but if so, then I'll flour it tomorrow. Amy said to spray the parchment paper, so I'm going to do that just to be on the safe side. :) Red Velvet Cake 1 box White Cake Mix 1 small box Instant Chocolate Pudding 2 c. Milk 2 Eggs 1 small bottle Red Food Coloring 1/4 c. Oil Mix these ingredients well. Mix together 1 T. Vinegar 1 t. Baking Soda Add the above to the batter. Beat well. Bake in 2 round cake pans or a 9 x 13 cake pan, at 350. Frosting recipe below. Back to baking the cake, this is when it gets tricky. This cake can fall if you're not careful. For round cake pans, it generally takes about 20-30 min., until toothpick comes out clean. For a 9 x 13 pan, it could take up to 45-50 minutes. When the cake looks done, crusted around the edges, very GENTLY take it out of the oven and do toothpick check. I mean you have to be very gentle. I learned the hard way. lol. Frosting: 8 oz. softened Cream Cheese 1 stick softened Butter 1 t. Vanilla 1 lg. bag Powdered Sugar or to consistency..you want it thick but not too thick you can't stir it. Mix all together and spread on cooled cake. Sprinkle with coconut if desired. If you make a 9 x 13, you'll have a lot of frosting left, even if you put it on thick. And you want to put the frosting on thick! This cake is so rich & heavy and when you eat it you'll think you've died and gone to Heaven. No kidding! You'll see why it won a blue ribbon!

I just got a Martha Stewart enameled cast iron casserole - the 2.75 qt for I think $29? I'm in love with this pan. Heats evenly and well on the ol' portable induction. I might get the bigger one if I find it marked down. Browns things well without burning. Pans I think are needed depend on family size, how often you entertain and for how many. The venerable chicken skillet (12-14" heavy straight tall sides and a lid), egg pan (8" non-stick), chefs pan (10-12"), couple of 2-3 quart pans for veg, couple of small pans (1-4 cups) for cooking cereals, melting butter or reheating soups, one 6 quart pot(s) for making soup, chili, stock, pasta. A non-stick griddle. Maybe a 12" black steel frying pan, maybe a larger stock pot - like a 12 qt. Not criticizing johnlin, but I can't imagine what needs a 20 qt pot. Flotilla of lobsters? Tomato sauce for the jolly green giant? One of those things where you cook the pig head? Seriously, other than canning, what's it used for? I'm kinda agnostic about woks. Partly that's because they don't work well on my p.o.c. range. Brightens up Maybe I can get an iron one and use it on the induction.

I'm not so scientific. I think my 6” pans are 3”. Whatever they are, whether 6” or any other size, or deep mold like bundt, or loaf, I just make the batter, and fill to what looks right. If I have leftover batter, I just bake it off separately, either as a tester, or to use in something else. If I were baking commercially, I'd perfect the recipe amounts. As it is, I can't be bothered. I do have some anti-doming devices, but they don't work well enough, IMHO, to bother with most of the time. A cake fills best when perfectly flat, or even lightly dished. It's still going to need evening up. Many people prefer fewer taller layers (less “crust” to get rid of), and just slice them to the size they want. Others just make sheet cakes and cut their layers out of those. I just realized. My “eyeball” measure is about an inch from the top of the pan. That's what the half full and 2/3 full are both telling you. So the best way to get equal amounts of batter in each pan is to use a scale. For less formal, I just pour some batter in one pan and let it settle while pouring some in the other, then eyeball the height back and forth until the pans are filled properly. Usually once to start, a second time to divide the batter and a third to adjust and clean out the batter bowl. Measuring batter by volume is a good way to compare the recipe with the how much your pans will hold, but not an easy way to fill them. If you're worried your pans will overflow, you can line the sides with parchment paper or extenders made for the purpose. Don't fuss over precision unless there are judges involved. It's just cake. It's supposed to be fun. What's important is getting your batter in the pans promptly, a good whack to get out air pockets, and get them right in the oven. The moisture or acid acting part of the baking powder is already at work. If you leave the batter sitting around, it'll discharge and deflate. Some recipes do that on purpose for denser cakes, only lifted by the heat action and eggs, but if that's not your goal, make sure your oven has been at temperature for some time, so that the walls, not just the air, are hot, and you get your batter into the pans, and the pans into the oven promptly.
