Double Loaf Pan

My friend just inherited a double loaf pan, I am so jealous. It's a nice heavy, seasoned steel like my single loaf pans I inherited from my Memere 35 years ago. Where can I find a nice heavy steel double loaf pan? Would anyone who has experience baking double loaves care to share their secrets?

I'm not sure what you mean by this. Is it just a pan big enough for two loaves next to each other? I have an old steel pan like that. Big enough for two long loaves. It works perfectly with recipes for very large round country loaf. Instead of the big round, I sometimes make two loaves side by side.

I'm not sure I understand either, is it two standard sized loaf pans hooked together somehow?

I have a pan to make two long baguettes, but I'm sure that's not the same.

Maybe it's just me, but I wouldn't be interested in a loaf pan that was insulated, unless you don't want a crust on your breads. It will take longer to get anything brown, which might be ok with certain types of cookies (like sugar where you barely want them to brown), but I need my bread to brown!

Need advice - Baking a cake in a loaf pan

Recipe below. Natal, I've never had the need to flour a cake pan. Is there a reason to flour them? I also detest the taste of flour on a cake. Are the pans floured just to get the cake out of the pan? I usually don't do that, but if so, then I'll flour it tomorrow. Amy said to spray the parchment paper, so I'm going to do that just to be on the safe side. :) Red Velvet Cake 1 box White Cake Mix 1 small box Instant Chocolate Pudding 2 c. Milk 2 Eggs 1 small bottle Red Food Coloring 1/4 c. Oil Mix these ingredients well. Mix together 1 T. Vinegar 1 t. Baking Soda Add the above to the batter. Beat well. Bake in 2 round cake pans or a 9 x 13 cake pan, at 350. Frosting recipe below. Back to baking the cake, this is when it gets tricky. This cake can fall if you're not careful. For round cake pans, it generally takes about 20-30 min., until toothpick comes out clean. For a 9 x 13 pan, it could take up to 45-50 minutes. When the cake looks done, crusted around the edges, very GENTLY take it out of the oven and do toothpick check. I mean you have to be very gentle. I learned the hard way. lol. Frosting: 8 oz. softened Cream Cheese 1 stick softened Butter 1 t. Vanilla 1 lg. bag Powdered Sugar or to consistency..you want it thick but not too thick you can't stir it. Mix all together and spread on cooled cake. Sprinkle with coconut if desired. If you make a 9 x 13, you'll have a lot of frosting left, even if you put it on thick. And you want to put the frosting on thick! This cake is so rich & heavy and when you eat it you'll think you've died and gone to Heaven. No kidding! You'll see why it won a blue ribbon!

Baking in glass loaf pans

You know, I used a glass pan for a quick bread recipe and I too had that bitter taste at the crust. I had attributed it to using a boxed mix (hangs head in shame). But the same mix made in the usual metal pan was ok. I have a round unglazed casserole, similar yield size as the loaf pan, that I'm going to try for the next bread I make. Just to see if it makes a difference. If so, then I'll just reserve the glass pan for meatloaf or some other savory dish. I wouldn't lower the temp, that will probably mess with the chemistry. Is your oven calibrated correctly? Well pre-heated? Those can affect the browning. Also, try butter for the lubricant rather than Pam. DH surprised me with something he'd made using Pam, but it turned out the spray had gone bad and the cake was horrific at the outer edges. I bought a new can and found things were fine, but I toss them after a couple months now.

It is the glaze that is cracked, or crazed. You can't feel it, but it is cracked just the same. I wouldn't use them for cooking. Bacteria gets in and stays. also, could cause and explosion in your oven next time you use them if the filling or liquid soaks down into the clay part and then heats up. I am a potter and know all about clays cracking in the oven. Happened more than once here. They were probably those cheap walmart pans you find at the holiday time. I see them every year, look so cute with a pie or cake mix in it and all wrapped up pretty to be a gift. Not really usable though. Same with some pans you will find dollar stores. They come from china and unless they are well made and the clay and glaze are of the same quality you will get those tiny hairline cracks. I have some of my pottery that I do use even though it is cracked. I just use them for fruit or something NOT liquid and I do not bake in them. Usually pottery is dishwasher safe and oven safe if made properly. For what it's worth.

I guess it really depends on what you need. Some double loaf pans are just one pan with the capacity for 2 loaves. While the Italian double loaf pans are something like what Annie has, to make baguettes with (link below). The Lockwood makes 2 pans that attached to each other for the double loaves. In fact, I have some Lockwood triple loaf pan and they are excellent. I was going to run a bakery business but unfortunately it never materialized. Still have 10 of them sitting in my basement. The 3 of us just don't eat enough bread in a week to use this triple loaf pan. The size of one single pan is 13.5 x 5.5 x 2.5". Al

OK, how is that so much easier than just making two loaves in two loaf pans?

I get the smaller ones, that make 6 or 8 small individual loaves, those pans are small and harder to handle, but aren't these just regular sized loaves?

Sorry for the confusion, the pan I'm looking for is twice the length of a regular loaf pan. All the other dimensions are the same as a regular loaf pan. Since my family doesn't eat the end of the bread loaf, I thought this would be great since it would eliminate 2 of the ends. Just a silly reason but I thought it would be nice to have since I usually make 2 loaves at a time.

Moose, go ahead and make that long loaf. Then cut off both ends and send them to me. That's my favorite part!

Annie, I think the appeal of the joined together pans is that it's one unit to handle, and you can get all the pans into the oven at once instead of faffing about with individual pans while the oven door sits open, losing heat...

Is what you're looking for a Pain de Mie pan? It seems a longer bread pan might be harder to fit into your oven...

Colleen, I suppose if I were baking 6 or 8 loaves of bread at once, but if I'm only baking two, it doesn't seem to save much time.

Of course, I never just bake bread, I'm always arranging some baked potatoes or a pan of brownies or SOMETHING in there with the bread, LOL, so having two separate pans is actually easier for me, I can move them around like a jigsaw puzzle to fit everything in!
