Ready to try ABin5 again....

Haven't tried this bread in a long time. I was never really happy with the results I got but I've seen such lovely results here I'm going to try again.

I have the original book and am going with the original recipe and instructions. I'm using Canadian AP flour which is a high gluten flour.

Any tips, tricks, etc you can pass on that may improve my results. I'm looking for a more open crumb and a better rise than I've experienced so far.
