Fried Cabbage, Reprise!

Thanks to all of you for educating me about Fried Cabbage. To Barb Roselover for bringing the subject to my attention; to Steve (skeip) for sharing your hot wok, stirfry technique; to Ruthanna for that great picture which inspired me to try something different, and Annie for her description of cabbage with cheese sauce. I also have Sharon's (Chase) recipe in my file to try soon with the red cabbage, and Lindac's with a little heavy cream.

I spent some time a couple of weeks ago tracking down a pot lid the right size for my Bierocks (at my favorite thrift store) so I'd have a dough cutter to make the process easier. I decided to try frying the cabbage this time, using Steve's technique, with Ruthanna's picture as my guide. I used two thirds of the cabbage for my usual recipe, and decided to fry the rest with a little bacon grease and onions. Awesome! I turned the Bacon Flavored Fried Cabbage into appetizer sized buns using a biscuit cutter, and think we now have a new favorite. Thank You! I had no idea how much I'd love this! The Cooking Forum is a winner for inspiring experimentation, once again.

As a Chicagoan that was transplanted to Louisville and Nashville and Memphis for 20 years, it was difficult for me to understand the macaroni and tomato thing at first. I mean, I'd never seen such a dish. Elbow macaroni, stewed tomatoes, a bit of vinegar and a pinch of sugar. Was this a mistake? Where was the meat? The cheese? The basil?? It is just one of those regional things, I think. I got the same look from the southerners when I opened up the package from Usingers in front of the Memphis neighbors. Inside, we found sausages and cheese curds. A neighbor held up the bag of curds and asked what it was. I told her and the entire room laughed at my curds. (one woman even gagged!!)

I just noticed that in my first post I said that I used phyllo dough for the wrappers when in fact I used the puff pastry squares and rolled them out to the size I wanted. I don't think rolling phyllo dough would change the size. Anyway, I made some pasta dough yesterday and will use that to make proper egg rolls. I don't know why I thought it was too much trouble to make - I made it in a small bowl with the one egg that I had plus some semolina flour, white flour, salt, and a bit of olive oil. I don't use oil when I make pasta, but I thought it would help for the egg roll wrappers. My question at this point is - should I have added water to the egg roll wrapper dough? For ravioli I do not, but the recipes I've seen for egg roll wrappers have more water than egg in them. I guess I could cook one the way it is and if the dough needs water and flour I can still add that to what is remaining. Do you make your own egg roll wrappers? Lars

I went to the store today and bought a head of cabbage just because all of this cabbage talk. DH loves it, but I think it stinks so bad cooking it. I have learned to like it though, but don't make it as much as I should. I am going to try your method.
Here is my favorite cabbage recipe, I don't think I posted it on the other thread.

Kielbasa and Cabbage
====================
6 slices bacon
1/4 c. water
2 T. sugar
1 chopped onion
2 t. minced garlic
1/4 t. red pepper flakes
1/4 t. seasoning salt
3 t. caraway seed
1 lg. head cabbage, cut in wedges
1 lb. polish sausage
Fry bacon, remove from pan. Stir water, sugar, onions, garlic, pepper,
salt & caraway seeds into drippings. Add cabbage, gently stir. Cover
and cook 10-15 minutes. Add sausage. Cover and cook 10-15 minutes.
Crumble bacon on top.

Karen, Thanks for that recipe! I used to feel that way about cooking cabbage too, until I started browning it. Suddenly my house smells delicious, so I hope yours does too. I'm saving your recipe to try in the near future.

I ended up with 46 biscuit sized buns filled with the bacon/cabbage/onion mix, so will have appetizers or small lunches for many days. (Everyone who tries these are so impressed with me!) My dough cutter/pot lid worked beautifully so I'm happy to have a new tool.

Happy Cabbage to all!

I never cared for the stench of the traditional Boiled Dinner, Cabbage, Corned Beef, Carrots, etc. So I started frying the cabbage hot and fast and eating it with all the rest of the goodies. Much better, and the house doesn't reek for days.
