Irish Car Bomb Cupcakes

I found this recipe in our local paper and thought they looked really good and wanted to share them with all of you:

Irish Car Bomb Cupcakes

CUPCAKE INGREDIENTS

1 cup Guinness

1 stick, plus 2 tablespoons unsalted butter

3/4 cup unsweetened cocoa (preferably Dutch-process)

2 cups dark brown sugar

3/4 cup sour cream

2 eggs

1 tablespoon vanilla extract

2 cups flour

2 1/2 teaspoons baking soda

METHOD

1. Preheat the oven to 350; line 24 muffin cups with cupcake liners.

2. Combine the Guiness and the butter, chopped into 1-inch chunks, in a large sauce pan and heat to melt the butter.

3. Remove from heat, and whisk in the cocoa and sugar. Let cool slightly.

4. In a bowl, whisk the sour cream and the eggs and vanilla, then add to the beer mixture.

5. Sift together the flour and baking soda, and fold in the batter.

6. Pour into muffin molds and bake for 17-24 minutes, or until inserted cake tester comes out clean. Let stand 10 minutes, remove from muffin tins and cool completely on a rack.

GANACHE FILLING INGREDIENTS

4 ounces bittersweet chocolate

1/3 cup heavy cream

1 tablespoon butter, room temperature

1 teaspoon Irish whiskey (optional)

METHOD

1. Chop the chocolate and transfer it to a heatproof bowl.

2. Heat the cream until simmering and pour it over the chocolate. Let it sit for one minute and then stir until smooth. (If this has not sufficiently melted the chocolate, heat it for 20 seconds in the microwave, watching carefully).

3. Add the butter and whiskey and stir until combined.

4. Let ganache cool until thick but soft enough to to piped.

4. Use a 1-inch cookie cutter or apple corer to cut the centers out of the cooled cupcakes. Go about 2/3 of the way down.

5. Put the ganache into a piping bag with a wide tip and fill the holes in each cupcake to the top.

BAILEYS FROSTING INGREDIENTS

3 to 4 cups confections sugar

1 stick unsalted butter, at room temperature

3 to 4 tablespoons Baileys

1 egg

1 teaspoon vanilla

METHOD:

1. Whip the butter in the bowl of an electric mixer, or with a hand mixer, for several minutes. You want to get it very light and fluffy.

2. Stir in the egg and vanilla. Add the Baileys.

3. Slowly add the powdered sugar and whip until smooth and fluffy

Sounds interesting; just not sure if I could get away with making cupcakes and not offering them to the kids. But I've clipped the recipe, for when I figure out a way!

Although the recipe calls for just a teaspoon of Irish whiskey, I think it needs to be mandatory rather than optional in order for the cupcakes to be true to their namesake.

Just wondering why you wouldn't share these cupcakes with the kids. Is it because of the small amount of booze?

I think if I made these I would change the name. I'm not easily offended but for some reason that name doesn't sit well with me.

Haha, if you did, people would have as hard a time deciding on a cupcake recipe as you would have deciding on a Hoya cutting. I think learning to grow plants and learning to bake are very similar types of skills. Both involve a certain measure of attention to detail, dexterousness, and knowledge. And both involve a difficult to define measure of precognitive perceptive instinct.

Hmm, I miss a day or two, I miss a LOT here, ladies! I've been running a lot, distracted, and just plain scatterbrained. Must be spring fever (at least, I'd rather blame that than a mid-life crisis, lol!). I have most of Debbya's box ready to go - I just want to do one more thing, then send it on its way. It's been fun learning about your names and their history. My first name has NOTHING to do with my family heritage - my parents just liked it. My middle name, Marie, is for my mother, Mary. My daughter's first name is Juliana, for the medieval Christian mystic Juliana of Norwich. Her middle name is Pearl, for my grandmother, who died years ago. Our son's name is Ian (Scottish for John - his grandfather, great uncle, and uncle-in-law are all John/Jon, and his father is Sean, the Irish form of John). His middle name is Joseph, for one of my favorite men in the Bible. Oh, how we debated about Ian's name! He's our first, and my mother was pestering us mightily about what names we were considering. So, we had an ugly name contest, and kept telling her all sorts of outrageous choices. Keep in mind, our last name is RUDD. So, Dudley Bud Rudd, Elmer Rudd, Evan Rudd (think Evinrude motors), Vladimir Rudd (just because), etc. etc. AND, we couldn't use any names that started with C or K, because that would make his abbreviated name C. Rudd. CRUD. That cancelled out all sorts of names we happened to like, for both kids, lol! My favorite outdoors tool is definitely bypass pruning shears. Indoors, I have to say that I really MISS my dustbuster. It recently croaked after years of faithful service, and NOW I realize just how much I used it to clean up after the kids, birds, and cats. Tea Brack recipe first, then how to make homemade buttermilk. -Grainlady TEA BRACK (source: Irresistible Irish Breads - magazine article by Deborah Krasner) Brack, an Irish word for bread, is often used when referring to fruited mixtures. Tea Brack is a traditional tea bread which is an easy version of barm brack. Makes 1 loaf. 2 c. dark seedless raisins or dried currants (I use currants) 1-1/2 c. firmly packed dark-brown sugar 1-1/2 c. strong brewed tea, chilled 1/4 c. rum (I use 1/8 c.) 2 c. unsifted all-purpose flour 1-1/2 t. baking powder 1/2 t. ground cinnamon 1/2 t. ground nutmeg 1/2 t. salt 1 large egg, at room temperature, lightly beaten 1. Several hours or the night before baking, in large glass bowl, combine raisins/currants, brown sugar, tea, and rum. Cover bowl with plastic wrap and let sit overnight. 2. Heat oven to 325°F. Grease an 8-1/2x4-1/2-inch loaf pan and line with waxed paper. Grease waxed paper. 3. In medium-size bowl, stir together flour, baking powder, cinnamon, nutmeg, and salt. Slowly beat flour mixture and the egg into raisin mixture just until combined to form a batter. 4. Pour batter into greased loaf pan. Bake brack 1-1/2-hours until browned and cake tester inserted in center comes out clean. Cool in pan on wire rack 5-minutes. Turn brack out of pan and remove waxed paper. Cool brack completely on wire rack. Grainlady note: I use two 7-1/2x3-1/2-inch loaf pans or three 5-3/4x3-3/4-inch loaf pans and reduce the baking time accordingly. This is a very moist bread - more currants than bread, almost. I like the smaller pans so I can cut the bread into thin slices that don't fall apart. If you make it in a regular loaf pan, the slices tend to split and fall apart. -------------------------- I use a large amount of buttermilk when it comes to baking on St. Patrick's Day, so I make a homemade version of it using information from "Natural Meals In Minutes" by Rita Bingham. I use a non-instant powdered milk, but regular commercial milk works VERY well. Homemade Buttermilk To a 1-quart canning jar add 1/2 c. buttermilk and fill the jar with regular milk OR reconstituted powdered milk. Note: You can use commercial buttermilk as the starter, or a reconstituted liquid made from powdered buttermilk, or buttermilk from a former batch of homemade buttermilk - your choice. Stir well and cover (I use a plastic lid designed to use with canning jars). Let stand in a warm place (at least 80°F) until clabbered, about 12-18-hours. Stir until smooth. Refrigerate. Grainlady note: I keep mine in my oven with the light on. The temperature at the opposite side of the oven from the light is about 80°F. You can use homemade buttermilk from a previous to culture the milk for the next batch. Just make sure you use it within 2-weeks. Older buttermilk doesn't work as well as newer buttermilk. If you've ever used reconstituted powdered buttermilk, it's rather insipid, thin, and tasteless compared to commercial buttermilk. The homemade buttermilk is more like commercial buttermilk.

Another tip we decorators use is the #230 Bismarck pastry tip. It's longer than the average pastry tube, and all you need to do, is simply insert the tube about a quarter of the way into the top (or bottom) of the cupcake, and slowly squeeze the pastry bag to fill the cupcake. Once you start to feel the cupcake expand, ease off on the pressure, and pull the pastry tip out. If too much pressure is applied too quickly, the cupcake will crack on top. It's not the amount of alcohol itself that would concern me, but rather, introducing the flavor of alcohol at a young age in a form that they will obviously enjoy.

Ann and Ellen, I agree, I just don't like the name at all, I'd call it nearly anything else.

foodonastump, I also agree with the "not for the kids" issue. Heck, I'm not even sure I'D like the cupcakes, Guiness/Irish Whiskey/Baileys just doesn't necessarily sound like a good combination.

then again, it has chocolate and cream and butter.....never mind.

OMG they sound divine! I could do Baileys and Irish Whiskey as a shot and chase it with Guinness... oh wait, it is happy hour I think I will do jsut that!

As far as the name... I am not easily offended at all and I don't care for it either. I think I might call it The Lucky Irishman or something. LOL!

Here you go, Alexa. Salut!

1/2 pint Guinness
1 oz Jamison
1/2 oz Bailey's Irish cream

Pour Guiness into a pint glass. Float Baileys on top of Jamison in shot glass. Drop shot glass, carefully, into Guiness. Drink quickly before it curdles.

Well I guess I am thick skinned....
We have "better than Se% cake" and we have Kamakazis and Strip and go naked, and mud slide, Bloody Mary etc etc...
Sounds interesting....although I can't feature not imagine the taste of guiness in that cupcake.

Car bombs aren't amusing. The name is in very bad taste. What was the newspaper thinking?

In case it wasn't clear, an "Irish Car Bomb" is a bonafide drink, the one that I posted above. The cupcakes are named after the drink.

I'm not defending the name, simply stating a fact. As Linda already pointed out, many drink names are of questionable taste. She listed some of the milder ones.

Hehehe, when I was in college, the car bomb was my favorite drink! But whooo boy, you can only drink one or two and you're done.

I saw this recipe on Smitten Kitchen the other day and it looked pretty good. She called them Chocolate, Whiskey and Beer Cupcakes though, probably a more socially acceptable name (but then who can tell with all the alcohol listed)!

These look really good! My miracle baby was born on St. Patrick's day and these would be great for the adults at a birthday party. But what is the egg in the frosting for? Is it necessary? I'm a pretty good baker, but I don't totally get the egg...

I think that those cupcakes sound great! They would be excellent for a party--and I have three birthdays in March.

Name doesn't bother me a bit... I figured that they were based on the drink. Good drink, BTW...

That's a raw egg in the frosting. Is there something else to substitute? No raw eggs for me. The thought gags me.

I shoud have prefaced this post by saying I didn't like the name of the cupcakes, but thought the recipe and the finished product looked really good. I never intended to offend anyone, and if I did, I am sorry! Gina

Gina, you haven't offended anyone, I'm sure! It's not your fault what someone else named these cupcakes. As a non-drinker, I'm not familiar with names of drinks, and unfortunatly, the first thing that "Car Bomb" brings to mind are terrorists and car bombs in Iraq, and other places. There is so much of that going on, & we've all seen and heard far too much of that type of thing, I think. And that's why the name is offensive.
Foodsonastump, you are absolutely right! Definitely NOT a good thing to introduce the flavor of ANY kind of alcohol to kids! Anyone who has dealt with alcoholism in any way shape or form, even at a distance, knows that!
But I won't get on that soap box this morning. Actually, even though I am not a 'drinker' I do love to cook & bake with it, and love to eat the finished products.
I'm not familiar with the flavor of guiness, but I do think these cupcakes sound very good, and am clipping it to try soon. Thanks, Gina, for posting it.

gina, you didn't offend me either, but I still don't like the name. And no, I didn't know it was named after the drink, and I think the name is lousy for a drink too, but I know you didn't name either!

As for the egg in the frosting, if you don't want to put it in, I'd just make the frosting and up the amount of butter and maybe another tablespoon or so of Bailey's. How could it possibly be too much Bailey's in a recipe like this?

The whole recipe sounds like something a lot of my family would love. Since I don't drink to speak of, I'd have to get some of those little airline bottles of Bailey's and Irish Whiskey, but this might be just the ticket for Ashley's 21st birthday coming up in June.

Gina, I never thought that you named them, you were perfectly clear that you'd seen the recipe in the paper. Don't give it a second thought, the newspaper should have changed the name.

Gina! I know you meant no offense - just thanks for posting the yummy recipe (and shame on whomever named the drink). They sound great for dessert for our Irish Dinner next month since there wont be any kids present.

Thanks to all who didn't like the name. I shudder when I think of this! Gina didn't make it up, but the newspaper really messed up! The cupcakes sound great, but I can't tell my husband (1/2 Irish, 1/2 German with the personality to match! Married 35 years this Sunday!)

Can't support one and not the other. The name conjures up horrible memories that should not be made light of. Maybe you're too young or insensitive to the issues -- but it won't go into my recipe book. Good cupcake, maybe! Don't care.

I like Guinness better than cake. And, in the current state of the world, the name has too many unpleasant connotations to be fun.
