Woo-hoo! I made roux!

And a nice chocolate brown roux it was, too!

May not sound like much of an accomplishment, but I've never gotten roux much past the peanut butter-brown stage without buring it before, so I was quite pleased with myself. (35 minutes of constant stirring!)

I made shrimp aand sausage gumbo last night, to take into work today. Of course, it's a snow day, so only the on-air folks are here, but I brought it anyway -- being Mardi Gras and all. And I just found out the Dirty Dozen Brass Band is coming in this afternoon. I'm suddenly a little nervous about the authenticity of my gumbo. What the heck -- it's good! Laissez les bon temp roulez, eh?

Will get a picture up as soon as I can.

(I know you can get dark roux in a can, but I've never tried it, and don;t know how good it is. Plus, I really wanted to be able to make it myself at least once.)
