Oil vs Water for Hardwood Floors

We are redoing our kitchen and have had new red oak hardwood installed to match that in the adjoining rooms. Next week all of the downstairs floors will be refinished (no stain).

We need to decide whether to go with a water-or oil-based finish. Only adults live in the house, no pets. One of the adults has mild asthma.

Our contractor prefers water, due to the quicker drying time, but we don't want to do this again soon, so we don't mind more hassle now if the end product will last much longer.

We're also a bit worried about durability in the kitchen, as we have never had wood floors there before.
