baking time/temp for big red cake! - please

Howdy all!

I'm baking a Red Velvet cake- 2 and a half recipes in a 12x18" pan- what temp and for how long? My regular recipe for 8" round layers specifies 350 and 30 minutes. How do I adjust for the larger size?

I've been having trouble with cakes falling- is this due to incorrect temperature?
