Red Velvet Cake, favorite recipes please?

I have a friend who's birthday is coming up... April Fool's Day actually. Last year, I surprised her with a carrot cake. She doesn't like very sweet things and I was pretty horrified to see her scrape most of the frosting in the garbage and say how great the rest of the cake was. The frosting is the best part! She often makes (from boxes of mix, never scratch) cupcakes for her nieces and just doesn't use frosting at all.

The year she specifically "hinted" that a Red Velvet cake would be in order. I've made them before and they are always a little bland. That combined with the risk of spilling the food coloring all over myself and everything else makes me shy away from Red Velvet cakes. There's an unwritten law of physics: If it's red, Bobby WILL spill it... every time without fail. So, I'm looking for a good red velvet recipe. One that is better than something I could google. Also, should I go with cream cheese frosting, or just white? I know Red Velvet cakes are commonly found with either. I thought about not making any frosting at all, but I just can't bring myself to do THAT to a cake! I will warn her this time that if she doesn't want the frosting, she can scrape it onto MY plate instead of in the garbage.
