What are you making for the Super Bowl?

I have some of the basics on my master list, but am still looking for inspiration and ideas. There will be about 14 of us, not a big party, but all good friends. So far, this is what is definite:

Chex Mix

Woodie's Kilbasa with pineapple

7 Layer taco dip

Baked spicy wings with a couple of sauce options

Hummus with pita chips and veggies

Crab Canoe

Ceasar Salad

Cheese steaks

Pimento Cheese with Ritz

Sausage Balls

So what is on your menu?

    Your menu sounds great, Alexa! What are the crab canoes?

    We are going to a party at our neighbor's house so I have no idea what the menu will be. I was asked to bring one of my pretzel dips so I'm taking a beer and cheddar dip with Faller pretzel sticks and PF sesame sticks for dipping.

    I like to make it a few days ahead of time but somehow thought the Super Bowl was a week later so I'll be mixing it up this morning.

    Here's the crab canoe recipe - really just a hot crab dip, but baked in a long bread that makes it look like a canoe! LOLOLOL!

    Crab Canoe

    1 loaf long French bread, hollowed out. Cut part hollowed out in chucks.

    Combine:
    1 1/2 cups HellmannâÂÂs mayonnaise
    1 bag grated Colby/jack/cheddar cheese
    7 small green onions, chopped fine
    4 cans crabmeat, rinsed and squeezed with fresh lemon juice

    Put mixture in hollowed-out bread loaf and bake 45 minutes at 325 degrees until bubbly.
    The last 10 minutes add a little more of the grated cheese.
    Place bread cubes around and use to dip with.

    We are huge Steeler fans - we made sure that we were done eating by 4pm because our stomachs were so nervous, we couldn't eat after that :) We had: Vegies/dip Cheese/crackers PA Dutch ring bologna/Pepperoni Cold Crab dip Shrimp Cocktail Clams Casino Spread Hot Artichoke/Spinach Dip Homemade pita chips Roethlis-burgers Homemade pierogies Fudge Brownies with PB frosting Everyone stayed overnight after that emotionally draining game and got up early this morning to go home - oldest DD had to drive over an hour to get to work from here and youngest has a 3 1/2 hour drive back to college. We are glad that they are still big fans - it's something that gives us an excuse to do a lot of things together as a family :) Cindy

    SuperBowl Party - what should I serve in my steamer?

    My first thought when I hear "steamer" is some kind of Chinese dumpling as well! Probably because that's what I use mine for mostly! A good "cheat" for them is to just cook up some ground beef or turkey (I don't eat pork, but the traditional methods use ground pork) flavored with minced garlic & ginger, some sliced scallions and chopped water chestnuts, some soy sauce, sesame oil, maybe a touch of five spice powder - whatever flavors you like - then get a package of those refrigerator biscuits. The regular one's not the huge "grand" ones. Flatten out the biscuit, put a tablespoon or so of your mixture in the middle then bring up all the sides around and pinch it at the top to kind of seal the dough, then steam them. They're more filling than using a traditional dim sum wrapper, but not everyone has access to those. I think the biscuits are a "cheat" that works very well. Have fun at your party! Lisa

    We laughed at all of them. I love the e-trade babies with the "golden pipes" and the Doritos ads. Even though I don't really appreciate the promotion of alcohol to my kids, we love the "Drink-ability" ads. Of course my teen-age son LOVES the Go-Daddy ads. I'm a HUGE Jason Statham fan so I loved the Audi ad! I thought they were all really funny.

    Everybody from our penninsula (at least those who are year-around residents) are getting together to watch. We figured there's more cheering power in numbers & are hoping to be heard all the way to Indy. I'm making:

    Green Chili
    Hominy & Cranberry Hot Salsa (from Diners, Drive-Ins, & Dives)
    Hot Crab Dip
    Blood Orange & Date Mini-Muffins
    BBQ Pulled Pork & Homemade Potato Slider Rolls

    I've been watching the NFL station for two weeks & driving DH crazy. GOOOOO PATS!!!!

    I will be waving to all of you that are watching the game tomorrow. Two things off my bucket list for this week. The first was the zip line over downtown Indy, the second being at the Super Bowl tomorrow. No cooking for me this weekend. We have a Big Ten basketball game tonight also. Go IU. Sorry but I just can not cheer for the Pats being a Colts fan. Go Giants!!!

    I hate football so I'll be doing everything in my power to avoid the superbowl. But that cheesey pull-apart bread that is on the Smitten Kitchen site right now has me going gaga. If I had to watch football, I would want to watch it while eating that.

    Potluck here with foodie friends, and I'm doing appetizers (vegetarian crowd). Stuffed mushrooms with soy Chorizo, quality cheese plate from Costco, bruschetta/baguettes, babaghanoush and pita.

    I'm rooting for the Pats, I just read an article about the owners, the Krafts, what a wonderful family they are and how involved they were with the team and the community. Myra Kraft passed away this year and the team will be playing for her.

    Jessy, the Pats have dedicated their entire season to Myra. They are wearing a patch with her initials, MHK, on their uniforms. The Patriots chose to wear their Super Bowl patches on the right side of their uniforms, so that they can keep the MHK patch on the left as it has been all season.

    I finished the mini-muffins for tomorrow & the chili will be done about 5:00 p.m. Smells good in here! Is it kick-off yet? lol

    We only have a few and all of us except Dad will sit at the table to eat so I'm making a nice meal.

    Smoked salmon, crackers, dips, cheeses, olives, etc.

    Mixed citrus (grapefruit, tangerine, blood orange) over butter lettuce greens with coconut and avocado

    Pork tenderloin stuffed w/ prosciutto, provolone and spinach

    Meyer Lemon gnocchi

    Warm gingerbread w/ fresh whipped cream

    We are making the usual fare. 4 pepper chilli, Texas Pete hot wings with homemade bleu cheese sauce, loaded nachos, mango salsa with chips, veggies and dip. Wine, Beer, Pepsi, apple cider, and water to drink. It will be just a small crowd this year- Wayne, our 2 daughters a few of their friends and me. Yeah Pats! NancyLouise

    I will be making chicken wings,they are marinating in a soy sauce, garlic , ginger,lemon, mixture.
    Also will be bringing to the party some stuffed jalapenos wrapped in bacon, from the Pioneer Womans website I added some horseradish to the cream cheese to give it a little more kick.
    A couple of calzones and then pass the Alka Seltzer LOL.

    Dh still has not told me what he wants to eat for the Superbowl! HrrrmpHHHH! So I'll be making a chicken sausage and garlic pasta bake and banana cake with caramel sauce. Munchies will be pistachios, macadamia nuts, banana chips and wasabi peas (NOT mixed together.)

    I like the sound of the crab canoe. Did you enjoy the zip line ride, momof2doxies? I'm a true blue Colts fan and I will be cheering on the Giants. It will just be DH and I and he'll be making a pot of chili because I'm not feeling well. Hoping its a cold that suddenly hit and not Hanta Virus from tearing down the old barn this week and sorting through the yuck.

    OK, so now I'm intrigued!

    'Triciae, green chili? I love green chili but have never made it. Since we've moved so far from New Mexico, we have to get by with the Durkee canned green chili and that's only when we can find it. How do you make yours?

    Booberry, the chicken sausage, garlic pasta bake sounds wonderful. Something I know my family would just love. I'm esp. into one dish type things that I can prep ahead & pop in oven. They work so great in that I can make them earlier in the day and have dinner taken care of--frees me up to work on the kitchen remodel and not have to make supper when I'm dog tired. Gots a recipe to share or just a general guideline on how to make this?

    (I'm planning to do as little as possible. DSI will be off to friends' for the Superbowl & DSII will be working. So that will leave just the two of us & I'm not into football. I'll prolly be working on the kitchen do-over today.)

    Now, if I was cooking for the game, Lindac's Raspberry Wings would be at the top of the list! That recipe is seriously yummy!!

    Here's the recipe for the Chicken Sausage Garlic Bake (Roasted Garlic Pasta Bake). I haven't made it yet, but I think it would be hard to screw up. I could not find that cheese mix with the roasted garlic. So I'm probably going to saute a couple of garlic cloves instead.

    Roasted Garlic Pasta Bake
    Category: dinner, pasta
    Author: Amanda Formaro
    Prep: 15 mins
    Cook: 30 mins
    Total: 45 mins
    Ingredients

    8 oz. tri-colored rotini pasta, uncooked
    2 cups small sugar snap peas
    3 tablespoons butter
    3 tablespoons flour
    1 1/2 cups milk
    1/2 teaspoon salt
    1 3/4 cups (7 oz.) Sargento Bistro Blends Shredded Mozzarella & Asiago Cheese with Roasted Garlic, divided
    1 package (9 oz.) sliced fully cooked chicken sausage

    Instructions

    Cook pasta according to package directions, adding snap peas during last 2 minutes of pasta cooking time.
    Melt butter in a heavy medium saucepan over medium heat. Add flour; cook, stirring frequently until flour mixture is bubbly and golden brown, 1 to 2 minutes. Add milk and salt; bring to a simmer, stirring frequently. Simmer uncovered 1 minute. Remove from heat; stir in 1 cup of cheese until melted.
    Drain pasta and snap peas; return to same pot and add sausage and cheese sauce. Toss well and transfer to a greased shallow baking dish; top with remaining cheese. Bake in preheated 375 F oven for 20 minutes or until hot and bubbly.

    bcskye-- The zip line was truly amazing. The really great part about the day in Indy was to be able to meet some of the volunteers that I had made Super Bowl scarves for. MY BIL took the week off so he could be one of the thousands of volunteers this past week and he was able to find a dozen people that had one of my scarves. For all of you watching the game tonight over 13,000 hand-made blue and white scarves were created by people wanting to help in some small way with this Super Bowl. Go Giants.

    I emailed Linda for the Raspberry Wings - here it is!

    Raspberry Wings
    1-1/2 c seedless raspberry jam
    1/3 c balsamic vinegar
    3 T soy sauce
    1-1/2 tsp crushed red pepper
    1 pkg (5 lb) frozen chicken wings, thawed
    Preheat the oven to 400 degrees F. Line two baking sheets with aluminum foil. In a small saucepan, combine all the ingredients, except the wings, over medium heat, stirring until smooth. In a large bowl, toss
    the wings with half of the jam mixture. Place on the baking sheets and
    bake for 50 minutes. Turn the wings and brush with the remaining jam
    mixture. Bake for 8 to 10 more minutes, or until no pink remains in the
    chicken and the sauce glazes the wings. Serve immediately.
    NOTE: If you substitute boneless, skinless chicken tenders for the wings, just reduce the baking time to about 15 minutes. And, for a change, you might even want to try this with apricot jam instead of raspberry.

    The main event on my menu will be Lobster Roll vs. Nathan's Hot Dog. Which roll will win? The undercard was going to feature Clam Chowda, but I decided to change it to New England Lobster Bisque vs. Waldorf Salad. Hey, I had to do something with all those shells! Methinks the red headed crustacean will win by a landslide.

    Thanks Caliloo! I will do this today, except my son is allergic to soy. If anyone sees this, is there a common ingredient you would substitute (like worcestershire sauce or something)? I know it would affect the taste, but we don't keep soy sauce in the house. I did follow the recent post about sometimes using chinese black vinegar, but I haven't found it locally yet. Thanks.

    Elba1: If your son is allergic to soy, look up and try a product called 'coconut aminos', a soy substitute. I haven't tried it but I do bring it up when I see soy/gluten/sodium issues.

    jessyf, thank you so much - I'm new to this forum, so I hadn't seen that product mentioned yet. I did the store locator from their website, and just called a store right here in town that says they just got all those products in - I hadn't heard of them. I will definitely go get a bottle and try it out (but maybe not til tomorrow)!

    Wow good that you found it. Start a new thread when you muster up an opinion so others can benefit.

    Superbowl leftovers: lots of cut up baguettes, staling away, plus various cheeses = transformation into dinner, as a strata.

    Embarrassed to say! Dh got a hankering for wings the day of the Superbowl. So he went on a quest Superbowl Sunday. He even found the hot sauce recipe from the bar / grill that we used to frequent (no longer in business). So DH made wings.

    So I'm planning on making tomorrow!

    Ok, so I tried the Roasted Garlic Pasta Bake tonight. I was really not wow-ed by it. It looks pretty, but it was bland. The cheese sauce also didn't form a sauce, it just kind of stay on top of the rest of the ingredients. It was entirely edible, but not something I'd make again.

    Sorry to give a bad review.

    Thank you for the follow-up, Becky. Still, I'm inspired to come up w/ a roasted chicken pasta bake since you mentioned the dish up thread.

    I've come up w/ a pasta & veggies bake that the family loves and I'm thinking that I can incorporate chicken (maybe chkn tenders) to move it from just a side dish to being an entree. I've been lightly steaming broccoli & carrots and mixing the veggies w/ cooked rotini. Pasta & veggies go into a glass baking dish & gets drizzled w/ olive oil & seasoned w/ grated romano, fresh garlic & liberally doused w/ that no salt seasoning (house brand stuff from Big Lots, of all places!) Pop into the oven for 30 minutes or so.

    Maybe I could lightly saute some breast tenders and top the pasta dish w/ the tenders & finish in the oven? I doubt I would have thought to expand on the dish w/o your having mentioned the recipe you were going to try.
