need help on the best tool to grate, etc?

I could really use the forums help in some tool (the best) to do the following:

Make very thin/adjustable sliced potatoes to fry/whatever. I peel/wash them first.

Grate some really hard cheese easily without having it all over the dam counter and wasting it, Parmigiano Reggiano to be specific (not cheap)

It would be perfect if I could fit it in a drawer but that would mean it would have to be somewhat thin, space is now at a premium, but what has to be, has to be as they say!

I've been using one of those square do it all tools, but I don't have any darn finger tips left (exaggeration, but close)!

Any ideas, I mean don't be shy, I'm wide open to opinions.
