Food Proc. broke: want best elect. tool for grating cheeses

Well, of course, during the midst of making a pizza for an appet. at my party yesterday, the plastic piece that supports the grating disk broke! I could still do anything else with it other than grating and slicing. Don't know if I want to bother finding the replacement part: it's a Braun from 1984, still looks new but never liked its machinations and design much. I constantly use my blender stick and mini processor so am wondering if I really need a whole new food processor . But, shredding soft (primarily) and a few hard cheeses is the one thing I DO use it for. What's best to buy? Would a Salad Shredder do? I don't like a big, bulky apparatus if I can avoid it and hate having to wash all the parts and everything. Any suggestions? Or, do I just need to get a new F.P.?

You need a new food processor....but there are others with a smaller footprint than a braun.
I think if you are getting something for grating and slicing at least get something that will mix bread dough and pic crust too.

How much cheese do you want to shred at any given time? I can whip through shredding a pound of mozzarella in under two minutes with an extra-coarse Microplane.

This is a duplicate of what I just posted on the older thread. Thought I'd better catch up and let the newer folks know a bit about me. Married, all kids are too, and altogether there are 7 grandkids. We have no allergies but a few dislikes or aversions: DH loathes olives, the fruit. I dont like florals very much and definitely dont heavily many scented things. Like handmade or homemade just about anything. I dont lean towards things Victorian or very ornate Love metal, wood, stone, ceramic, organic looking things Neither one of us is fond of the blood-sausage-type things. We both like nuts, chocolate (mines dark, his is lighter but he is changing), spices, sweet and savory things. I love lemon, We eat at home often, I love to set a pretty table, linen napkins everyday We divide our time between NYC and a small town in CT. We are moving in the fall to and down-sizing in NY. CT: The country home is eclectic leans towards the whimsical or lyrical, my color palette is basically established by all the things that I own. You can check it out on picturetrail.com under bubbeskitchen. It is the Sherman House album. NY is contemporary and traditional. We are changing our color palette when we move from the neutrals with dusty peach to spicy colors: saffron, ginger, paprika. My new kitchen is right out in the open; the counters are slate, the cabinets and appliances are wood-grain and the sink and stove are stainless. So I guess my new digs will be more contemporary to modern and streamline if I can do it. Last week while shredding yellow squash for kugel, my 1980's Cuisinart that I got second hand from my mom, kinda broke. The shaft cracked and now the shredding disk tube cracked too. I don't think I can replace the shaft, I can't see any way to detach it. I really hate the idea of replacing this thing. Newer appliances are even shoddier, IMHO, if that is possible. My newer Cuisinart blender/small food processor is almost completely broken up, the plastic on the bottom of the bowl broke so it doesn't lock in place, and the feeding tube is cracked. It's a different kind of plastic from the older Cuisinart one, more brittle. I use the Cuisinart basically to do things that calls for large batches--like shredding cheese, chopping nuts, making bread crumbs, pie crust, chopping up parsley to freeze, pesto and other herb pastes, hummus. I have never been able to finagle coleslaw.

I have an old chopper - an Oskar- that holds several cups, and I use that often. But the KA 12 cup fp is another story and does much more. For small amounts, however, the Oskar is preferable as the cup and lid are small and fit in the dishwasher easily and I hand wash the KA fp to keep the bowl looking nice. I use the KA mostly for large portions of grated, sliced or chopped things and pie crust and such. I frequently cook for largish groups- 30+- and it is a handy tool. But so is a small chopper. When the Oskar dies, I will buy a 2-3 cup similar chopper. The KA does have a small bowl but using it requires cleaning the large bowl and lid too so I never use it.

Sorry, I haven't checked back here for awhile and just saw the latest messages. I haven't done much big cooking for awhile, do to current life demands, and still haven't had a chance to try the new dicing sets. I probably should, just to say I did, but for a single vegetable, I just grab a knife. I really like the dicing (original set) when I'm cooking for the crowd. I wish it worked better with raw hard roots, but I understand why there are issues. I hypothesize that the fresher and damper the roots are, the better they'll dice. Still, there are peppers and onions and squash and all kinds of softer things I chop regularly. I should make some gazpacho and play. :) OTOH, I have a highly rated manual hinged lid dicer which I can't even get an onion through, so whatever help I get, is good help. What the W-S staff were doing wrong is focusing on french fries. Most of the people I know offline don't make french fries at home. They're a drive thru thing. :) The peeler was designed for potatoes, though I've used it on apples and other things. It looks like it's taking a lot of good product, but it's really not more than most veg peelers do. The result gets beat up, though, so not for pretty work. The peeler, however, is best on smaller potatoes. I just cut mine and don't worry about loosing a little more on the cut edges. If peeling potatoes is a big enough task to even think of going to the machine (like for latkes for the multitudes), it's good. But then if you take what you've peeled and put it through the dicer, you aren't going to get much in the way of lovely long fries. I haven't tried, since I don't make french fries, but I'm guessing the demo didn't use the narrow feed tude, either, and if you're doing something vertical, you need to, or it'll fall over and give you the wrong shape. But I wasn't there and can't be sure of what they did or what you saw, Loves. I'll put it on my list of things to try just for trying. I can always cube them up after. While I do love the chopping element, the FP as a whole is just amazingly beautifully designed, and I still adore it. I never much liked my Cuisinart. It was a bother to use. The other day I was making ... fangipane, I think ... the directions called for the food processor, which is common with almond flour so you don't have to sift it. I wasn't thinking and just put my ingredients in the main bowl, rather than the small one. I was worried because it was a thin layer on the bottom of the bowl. It worked fine! I was amazed. This thing is so easy to use and clean! LOVE still blooms!

We love our Salad Shooter for cheese - esp for pizza and tacos,& fajitas.
I have food processors, microplanes, the Braun stick, mini food processor, but for the thin shreds of cheese we grab the Salad Shooter. When the first one finally cracked, I got another one for some occasion (Mother's Day?). I thought I could live without it, but I missed it - for the cheese.

I'm a microplane girl -- have them for cheese, chocolate, citrus zest and more, and they all fit together on one side of a single drawer and go into the DW to get clean. No assembly or disassembly required.

I also usually use a microplane, although I've been using the food processor for the pounds of cheese I've been shredding for those appetizer quiches. For "normal" amounts, though, I just grab the microplane.

I've got a salad shooter and haven't ever tried it for cheese, I don't know why. I think I need to give that to Amanda, who doesn't have a food processor, she'd probably use it a lot, so thanks for that idea, magothyrivergirl.

Another nod to the Salad Shooter. I use it almost exclusively for cheese and love it. Yes, I have microplanes and 3 different size food processors, but I still grab the Salad Shooter every time.

I am also a microplane girl. Since there are only three of us I don't normally grate a lot of cheese at once. A microplane is good enough for us.

If you grate large amount of cheese in one sitting and that you use your food processor a lot. A new food processor would make a nice Mother's Day present! ;-)

If you have a Kitchenaid mixer, you can get a grater attachment for it. That's what I mainly use for grating cheese, and I tend to leave it on the mixer most of the time. It's very powerful and won't break, and you can use the fine grater attachment for hard cheeses, even though I do use a microplane some of the time for that. The regular grater will grate the softest cheese, including fresh mozzarella, although that I usually slice. Plus you have only one part to wash.

Thanks everybody. I did decide to order the Salad Shooter - Professional version. Had high ratings on Amazon; most everyone seemed to love it like you all do.
