Annie-- did you do a post about making peameal bacon?
Doc's getting bored with the seasonal layoff & wants to try doing some-- we usually just do reg bacon -- recipe from Ruhlman/Polcyn 's "Charcuterie". Found this recipe for peameal bacon on Epicurious -- would appreciate yours/Elry's opinion --

Diane, this is the recipe that Elery uses, from Michael Ruhlman. It's essentially their Canadian Bacon recipe, but simply cured and not smoked.

Canadian Bacon or Peameal Bacon

1 2-4 pound pork loin

For the brine:

2 quarts of water
2.5 ounces (5 tablespoons) MortonÃ¢ÂÂs kosher salt
1 ounce (2 tablespoons) sodium nitrite (I use DQ Cure #1)
4 ounces (1/2 cup) sugar
5 cloves garlic smashed with the flat side of a knife
2 bay leaves
1 large bunch of sage (optional)
7 or 8 thyme sprigs (optional)
1 lemon halved (optional)

1.Combine the brine ingredients in a pot and bring it to a simmer, stirring to dissolve the salt and sugar. Remove it from the heat, allow it to cool, then chill it in the refrigerator.

2.Submerge the pork loin in the brine (or put it all in a large zip top bag) and refrigerate for 72 hours (give or take a few hours depending on your schedule).

3.Remove the loin from the brine, rinse it, pat it dry, and refrigerate it uncovered for 4 hours or up to a day.

4.For Canadian Bacon: hot smoke the loin to an internal temperature of 145 to 150 degrees F. or 60 to 65 degrees C.

5.For peameal bacon, roll the loin in cornmeal to coat. Cut into slices and saute or grill.

6.In both cases, refrigerate the bacon until ready to cut and serve, either cold or reheated.

That recipe sounds interesting, although we've never done the "injection" thing. Our peameal bacon is nicely flavored throughout, so I'm wondering if it would make it even better or if it's an unnecessary step.

I would love the addition of maple syrup in place of sugar. We never use the lemon anyway because Mother is allergic to lemons and we don't want to risk her eating any.

We slice ours very thinly and just give it a quick "griddle" until brown on both sides, and it's a nice change from other breakfast meats.

Question does the loin get hot smoked for peameal I 've read recipe multiple times and read it both ways for Canadian you do and peameal I have confused myself

Here in Canada, we call it Peameal bacon. We just slice it and fry it. We eat it for supper (like ham) or for breakfast like bacon (it has no fat). We like ours with maple syrup! When I fry it, I add a little water to the pan after it's browned a little on both sides...so it doesn't dry out so much. Here a recipe for an oven roast. I've never made peameal roast in a slow cooker. REAL Canadian Bacon Classic Whole Roast So easy and quick to prepare, this makes an attractive and delicious meal to serve with scalloped potatoes and baked acorn squash. 5 lb unsliced REAL Canadian Bacon whole roast Â¼ cup maple syrup Â¼ cup apple juice 1 tsp lemon juice 1 tbsp flour 1 tsp dry mustard Cut roast into thin slices, then reassemble into original form by tying together with butcher's twine. Place on rack in a shallow roasting pan. Bake in a 350Â° F oven for 1 hour. Pour Â¼ cup water into the pan to prevent bacon drying out. Combine maple syrup, apple juice, lemon juice, flour and mustard in a small saucepan; mix well. Heat to boiling. Remove bacon from oven. Brush maple syrup mixture over bacon and drizzle some between the slices. Return to oven for approximately 20 to 25 minutes (166Â° F internal temperature) and baste occasionally with remaining glaze. Place on a platter. Cut string, then pull it away carefully to allow slices to fall neatly in a domino effect along the platter. Makes 6 to 8 servings.

Shirl, we put the smoker out in the pole barn, it's not attached but close enough that a trip out to check on things isn't too bad. Elery definitely put on a coat and gloves, though, it was 15F this morning when he started that smoker. There's nothing quite like the homemade stuff, though, is there? I'm sorry you missed out on a season's worth of "curin' n smokin'" though. I wish you were closer, I'd be happy to share! I think of all the cookbooks I have, "Charcuterie" is the one I use most. I think fondly of Larry Engelhardt when I use it, his wife Janet posted at the old Forum before she died, and he came to a couple of forum get togethers. It was a gift from Larry, who lived close to the restaurant owned by Brian Polycyn. Unfortunately, that restaurant closed, but the book is wonderful. Today's "ham" came out nicely too, a little salty so the next one will be brined 3 days instead of 5, and see if that's better. Still yummy and amazing, and glazed with local maple syrup. Lizbeth, the pea meal bacon doesn't taste like bacon or ham, it's more like a slice of pork loin, but there's that cured flavor, it doesn't really taste like anything else I've had. Annie

I've made this and it's worth it! So good! MILLION DOLLAR BACON Author: Cyd Converse Recipe type: Breakfast Serves: 12 Ingredients 1lb thick cut bacon 6 tablespoons brown sugar 1 teaspoon cayenne pepper 1 teaspoon cracked black pepper 1 teaspoon red pepper flakes Begin by preheating your oven to 350° and lining a baking sheet with parchment paper. (You can sub aluminum foil if you don’t have any parchment paper lying around.) Instructions Sprinkle the bacon with about half of the brown sugar. Sprinkle on the red pepper flakes, cayenne and cracked black pepper. Sprinkle the rest of the brown sugar on the top and then give it a good pat all over. Think of it as a rub that’s going to coat your bacon in candy-like goodness. You don’t really have to worry about coating the reverse side because as the bacon cooks, the sugary coating will run under it and coat the other side of the bacon, too. Bake for 20 – 30 minutes, until it reaches your desired crispiness. Done and done!

Wow, Madonna, that's a great buy on that little propane smoker, I wouldn't have been able to pass that up either. My stepsons are big fans of grinding bacon into our grassfed burger, it's a little too lean for their taste. They got the idea from a restaurant in California where the burgers are half beef and half ground bacon. Nothing you can buy, of course, is as good as home grown or home made. Pork bellies never go on sale here, so we make Canadian Bacon more than we do the traditional stuff. Pork loins are often on sale here for less than $2 a pound so you'll be much more likely to find that. We use more of it than I thought we would. Toss a slice in the pan and in a minute it's ready to put on a breakfast sandwich. The grandkids love it on pizza and in homemade "hot pockets" with pizza sauce and mozzarella. I chop it up and add it to corn waffles along with cheese, we use it in a lot of things. Congratulations on that jam, it's going to make great gifts for some very lucky recipients. I'm more than happy to get other people "hooked" on my own personal addictions, LOL, so can away, then smoke something, then make some sausage. At our age we deserve the "good stuff", so much better than I can buy here!! Annie

twoyur, I do not smoke the loin for peameal bacon. It's cured but not smoked or cooked in any form. I slice either and package them already sliced, so I can just thaw a package and toss the slices into a pan for breakfast.

I'm sure homemade peameal bacon is wonderful.
Twoyur, Canadian Back Bacon is smoked and Peameal bacon is brined. But both use the same cut - Pork loin. Peameal is my favourite breakfast bacon.

Annie, I bought some peameal bacon from a local farmer and it had been brined with maple syrup. I was so excited when I found someone out here selling peameal bacon. I guess I don't have to tell you that I never bought it again. Traditional peameal bacon isn't sweet and it doesn't taste like maple.

Thankfully one of our local grocery stores is now carrying peameal bacon.

Doc bought a 4 1/2 # loin today-- we'll start the brining tomorrow using the maple syrup brine.

We love the stuff --(cook it just like annie does). We used to load down the van with that bacon when we did the Biannual Canus Games in Orillia , Ontario & the whole 4 days of the Games I ate it at least twice a day & what we brought home we froze & tried to make it last "til the next Games.
