Question for Annie

Please tell me about how thick you slice your Canadian bacon and Peameal bacon. Never found where late DH put my new, unopened smoker I got for Christmas several years ago, so bought another one and want to put it to work.

You mean how thick I slice it after it's smoked or cured? I usually cure/smoke the entire loin piece, here I get a whole loin that's a couple of feet long and a couple of inches wide and tall. I cut those into manageable pieces, maybe a foot, cure them and smoke them, then slice them on the slicer about 1/8 inch thick. That's a thickness that will cook quickly in the pan for breakfast without giving my eggs time to overcook, but it could be thicker or thinner, depending on how you want to use it. You can see that it's pretty thin...

Annie - that looks so good! My husband replaced our old dilapidated smoker this year with a Big Green Egg. He loves the thing. I can't eat smoked foods anymore :o(

I agree, halve everything, including the vinegar. I don't really drain the tomatoes, I peel them, scoop out the "goo" with my thumb and cut them into chunks, but I still end up with about half the tomato by the time they are peeled, cored and "de-goo-ed". Annie (yes, that Annie, LOL)

I love that cake, but it isn't mine, really. It's Pixistix' recipe, she's one of those people who has gone to the Pillsbury Bake Off more than once, so she's better than I am. Nonetheless, I can tell you that I use all purpose flour in the cake. Just be sure to beat the eggs and sugar well, 4 or 5 minutes is not too much. Otherwise the cake can be denser than it should be. The frosting tastes like penuche fudge, to me. It's not extremely caramelly and sometimes it is slightly grainy, which I like and others don't. That recipe came from the daughter of CindyNY. Pretty sofa. I like the fabric you have chosen and I think it will make a great room. I would use that as your color inspiration. There is a dark chocolate brown in the fabric, so go with that...the taupe will be too modern looking for the traditional look you are going for. (Only consideration on the sofa is if you have the patience to clean the dust out of all those buttons...they're lovely but do require patience to clean.) Don't over think this. One way to get overwhelmed with all the decisions is to not make any and then everything is up in the air. Lock in on the fabric, which is lovely and which you like. Then work off of that to get the rest of the room. Will you be doing an area rug? If so, you will want to keep that in mind when you are selecting your base fabric...most likely though, with the colors you've selected, you'll find an area rug without too much issue.

I've been experimenting with chalk paint in general and I have come up with 2 things. Annie Sloan paints IMO are better, better coverage, ease of use, colors stay saturated even when diluted with water to make a wash. I've had a quart of Old White that somehow even after several large projects is still 1/3rd full! CC Caldwell, while having a larger range of colors and are (in my area at least) substantially more economical in the sample jars than the ASCP paints. Just aren't quite as good. Not horrible mind you just not quite as good coverage wise. Now heres the kicker. I have waxed both paints and recently tried a water based polycrylic on them. ASCP- clear wax deepens the color poly does much the same but I don't find it to be a dramatic change CCC- the color changed considerably with both wax and poly! So much I'd have to account for that change in my finished piece. I have yet to try my hand at making my own custom paints, for my purposes the commercially available works great. I might have a different opinion if I were covering large areas like those beautiful grey cabs above.

Thanks, Annie. I did mean after the loins were smoked. I got an electric meat slicer from Rural King earlier in the year, but wasn't sure of what thickness to use. Think I'll use the thickness you use.

Seagrass, grilled food to me is a lot like smoked food. Well, the way I grill it's more like charcoal, LOL, but still, to me grilled food has that "smoky" flavor. Can you eat other things on the grill, or just the cured/smoked stuff?

Madonna, I like to slice it thin because I can plop it in a pan or on the griddle and it only takes a few minutes to cook. Since we often use it as breakfast meat, and I am not a morning person, I need it fast!

Annie - on the grill it depends on how much char. My stomach clenches when I try to eat anything smokey. A side effect of chemo for some reason and I have not been able to overcome it. My oncologist is puzzled, as well.

Well, if I grilled it, it would have pelnty of char because I'm just so bad at it.

That's horrible, though. I'm not a huge consumer of things like bacon or ham, but I greatly enjoy a grilled burger or BBQ'd chicken, I'd miss those things a lot.

Today I didn't grill, but I had some really good coffee for breakfast and mashed turnips at supper, they were delicious even though cooked inside on the stove. Elery says it's too cold to stand outside and grill, LOL.

Tell Elery to grab a space/barn heater and put it into the garage with the doors open and the grill on the apron. He is not really outside then.
