Need a suggestion for a FETA appy or hors d'oeuvre

Hey all

I seem to have way too much feta. My neighbor keep going into NYC to her fav Greek Deli and bringing me 1 - 2 lb slabs once or twice a month. Now, we love feta, but I am running out of the usual ways we have it and I already have 600 Spanikopita in the freezer. Plus we have friends coming for drinks and I would love to be able to use some of ot up on Fri when they are here. I know I can just put it out on a board with olives, roasted peppers, etc and let everyone pile it on crusty bread, but what else can I do with it?

Suggestions please!
