Suggestions For SWMBO's Surprise French Dinner Party?

My daughter and I are planning a surprise dinner for SWMBO aka wife. About 10 people. Next Sunday.

I need to come up with a menu that has sufficient pomp and circumstance, works with the logistics described below, and - just because it sounds like a fun theme - is very, very French. Unapologetically, stuffily, traditionally French. I'm not making anything that cant be found in a French cookbook, preferably one published before 1950.

The logistics are: people arrive at 5PM and dining starts at 6PM, we'll enlist a friend to get SWMBO out of the house for 4 hours or so before 5:30PM, so most of the cooking needs to be done between 1:30PM and 6:00PM. Plenty of time but I can't do any dishes with a long lead time (coq au vin, creme brulee, etc) without enlisting someone else's kitchen - which would be a pain. In general IÂm looking for dishes with a pretty low risk of screwing-up and, since I wonÂt have SWMBO helping, not a lot of time-sensitive last-minute cooking.

Here are some very partial thoughts about the menu - anyone have suggestions, corrections, changes, additions, warnings?

Soup course: Either lobster bisque (big flavour up front) or a consommé (for a subtler start but maybe that would be better as an intermediate dish). Thought of a cream mushroom soup but daughter says "oh, dad, b-o-r-i-n-g".

Fish course: This could be tricky if the soup is the bisque, as following with a delicately-flavoured fish might not work? If thatÂs not an issue, then maybe a couple of poached whole trout with some pretty coating, or some sort of fish en croute? Or to be easier, mussels and/or clams served open-face gratinee-style? Prefer to avoid a sauté or fried dish, just to not complicate the timing.

Betweener: We could do the consommé here, or a very small, frisee-type salad? Hmm, I need to think ''traditional''.

Meat course: boeuf bourguignon. I know, not very original since we've been talking about it, but I figure only SWMBO and I will have had it recently, and it is an easy, tasty, and very French dish that has a low risk of messing up.

Side 1: Here should be a veg, and as usual I have no good ideas. IÂm very open to suggestions  I can cook veg dishes competently, I just donÂt often have much inspiration. Or, I suppose, a starch?

Side 2: Optional slot for something interesting, fun, unusual? Time to search the cookbooks.

Cheese or dessert: I don't bake, so probably will have a few cheeses in place of dessert - unless we decide to be all traditional and order a bakery-made cake.
