Stacy, this chicken dish is really good and is only about 30 minutes from start to serve. You could serve it over rice or orzo that you prepare in advance and just warm up. Creamy Tarragon Chicken From Fresh Market-Grand Rapids, MI 4 boneless, chicken breast halves Salt & pepper to taste 3T all purpose flour 2T olive oil 1T onion, finely chopped 1/4 c white Bordeaux wine (you could use any white wine) 1T fresh tarragon, chopped 1/4 c chicken broth 3T butter 1/4 c heavy cream Season the chicken breasts with salt & pepper, dredge in flour. Set aside chicken and remaining flour. In large sauté pan, heat olive oil over mediumh igh heat. Brown the chicken 2-3 minutes per side until golden brown. Set aside and keep warm. Add onion to pan and cook 1 minute. Pour wine into pan and increase heat to high. Deglaze pan by cooking until almost all the liquid has evaporated, stirring to loosen browned bits on bottom of pan. Reduce heat to medium low and add reserved flour, stirring to form a thick roux. Stir in tarragon and broth. Return chicken to pan and cook until chicken is cooked through and juices run clear, about 10 minutes. Remove chicken to plates, add butter and cram to pan and heat through. Spoon sauce over chicken and serve. Joe's Seafood lasagne is rich, and super elegant. You can use any combination of seafood you like, really, and it can be made ahead. WHITE WINE SEAFOOD LASAGNA Makes 6 good portions; 8 for the smaller ones 2 pounds bay scallops 1/3 cup butter 1 cup green onion \-\- chopped 1 clove garlic \-\- minced 1/4 teaspoon thyme \-\- dried 1/3 cup all\-purpose flour 1 cup chicken broth \-\- regular strength 1 cup whipping cream 1/2 cup dry white wine 8 ounces lasagna noodles 1/2 pound crab meat \-\- cooked, shredded 1/2 pound swiss cheese \-\- shredded Rinse scallops well and drain; if using regular scallops, cut into 1/2\-inch pieces. Melt 1 tablespoon of the butter in a 12\- to 14\-inch frying pan. Add onion, garlic, and thyme; stir on medium\-high heat for 1 minute. Add scallops and cook, stirring often, until they are opaque in the center (cut to test), 2 to 3 minutes. Remove from heat and pour scallops into a large strainer positioned over a bowl; let drain 20 to 30 minutes. In the same frying pan, melt remaining butter on medium heat. Add flour and stir until it turns a light golden color. Remove from heat and smoothly mix in broth, cream, and wine. Return to high heat and bring to a boil, stirring. Set aside. Fill a 4 to 5\-quart pan 3/4 full with water and bring to boiling over high heat. Add lasagna noodles and boil, uncovered, until tender to bite, about 10 minutes; drain. Rinse lasagna with cold water until cool; drain again and set aside. Pour scallop juices into a 1\- to 1\-1/2\-quart pan and boil on high heat, uncovered, until reduced to about 2 tablespoons; stir near the end to keep juices from scorching. Mix juices and crab meat with cream sauce. Line the bottom of a 9\- by 12\-inch buttered baking pan or dish with 1/3 of the lasagna noodles. Spread noodles with 1/3 of the sauce, top with 1/3 of the scallops, then with 1/3 of the cheese. Repeat layers twice more, ending with cheese on top. Cover pan with a lid or foil; if made ahead, chill up to one day, then bring to room temperature. Bake lasagna in a 350 F oven for 20 minutes. Remove foil and bake until cheese is golden, about 20 minutes longer. Let stand 15 minutes before cutting; lift out portions with a wide spatula. Makes 12 servings as a first course, 6 as an entree. Maggie, I don't use a recipe so looked around on the Internet and this one was the closest to how I make it. I deveined the raw shrimp and cut them in half lengthwise so they wouldn't stick up too high. I sauteed them in the butter after the veal was done but didn't add the green onions or Worcestershire sauce. The only other change I made was using fresh asparagus, which I steamed in the microwave and then plunged into ice water the day before, then refrigerated in a covered container overnight. I only cook the veal about 2 or 3 minutes per side over medium-high heat, then remove the pan for it to cool down a bit before adding the seafood. VEAL OSCAR 1 1/2 lbs. veal cutlets, cut into serving-size pieces 1/3 c. all-purpose flour 1/8 tsp. salt 1/8 tsp. pepper 1/8 tsp. garlic powder 1/3 c. butter, melted 1 c. fresh lump crab meat 1/2 c. chopped green onions 2 tsp. Worcestershire sauce 2 (10 oz.) pkgs. frozen asparagus spears, cooked (optional) Bearnaise Sauce Chopped fresh parsley Flatten cutlets to 1/4 inch thickness, if necessary. Combine flour and seasonings; dredge cutlets in flour mixture. Cook veal in melted butter in a large skillet until browned on both sides. Remove meat, and keep warm, reserving drippings in skillet. Add crab meat, green onions, and Worcestershire sauce to drippings in skillet; cook over medium heat, stirring occasionally, until mixture is thoroughly heated. Arrange asparagus over each piece of veal, if desired. Spoon crab meat mixture evenly over asparagus; top with Bearnaise Sauce. Sprinkle with parsley. Yield: 6 to 8 servings

Party was a HUGH success! Thank you for asking and for all the input. Food wise - I probably asserted myself when Pizza would have been fine - though I did get lots of âÂÂThank-yousâ from the kids. As mentioned, Band Kids are really a great bunch and very polite too. I was a tad worried with 40 boys & girls, but they were all well behaved. I made 96 of the mini corn dog muffins and should have made 3 times that! These are super easy to make and the kids loved them. The Pizza Rolls also vanished and I should have had more of them too. The hot wings went well (about 8 lbs), but not the teriyaki (about 4 lbs) - I would have expected the opposite. The fruit tray was demolished, but not the veggie tray. The Ham sandwiches didn't go well either, which surprised me. They liked the hot dogs, but I think they liked cooking them over the fire pit outside. :-) The pasta salad was well received too. But the hit of the party was the chocolate fountain - I think as much for the novelty as the yummy dippers. Soda: Dr Pepper was the favorite by far. One day in LA (my only time there), within the span of about 2 hours, we saw Sean Hayes in a diner. I stood 2' away from him while I waited for the (single, unisex) rest room -- DH was in there and when he opened the door I pushed him back in, closed the door, and said much too loudly I'm sure, "OMG you'll never believe who's right outside this door!" I was a babbling idiot. Then we walked down the street to a Starbucks. My DS, who was probably 18 at the time, was standing in line for the rest room behind the musician Ryan Adams. Maybe two months before this, we had taken DS with us to a Ryan Adams concert in Boston, so he recognized him right away. When Ryan came out of the men's room and handed DS the key, DS chatted with him for a few minutes. Ryan was really nice to him. I was outside and knew nothing until DS2 came out to tell me what was happening. I ran in, again like a big idiot, and stood watching while Ryan got a straw for his iced coffee, then I went back outside to wait for him, fully intending to ask him for a photo, but he escaped out the back door. So sad. THEN, in the next store we visited, we saw "Janice" -- Chandler's girlfriend from Friends. This may have been the best day of my life. I am a total dork about celebrities (in case you can't tell). I love, love the singer Lori McKenna. Maybe no one here has heard of her but she is local from MA and does a lot of performing and song writing in Nashville as well. We have seen her in concert probably 12 times. She plays a couple times a year at a very small concert venue in the Boston area, and we always go. The first time I spoke to her it was because we, and our friends, were among the last to leave and Lori came out from backstage to get her guitar. My friend asked if she would take a pic with me, and she did, and we chatted for a minute. The second time I met her, it was at the same concert venue, and I had brought a CD for her to sign. After the show, I managed to be standing right in front of a door she was coming out of, and I asked her to sign my CD. She said 'yes, but a bunch of people are about to come out of there (the concert area), so come with me' -- she grabbed my hand and brought me backstage. She signed my CD, then had her DH take a bunch of pics of us. She was super nice.
