Comments (10)Love the retro idea Stacy..... Stuffed mushrooms are perfect as an appetizer before dinner so are bacon wrapped water chestnuts or ...are you ready...Wendy's olive cheddar nipples! Pate is great too and should be very easy to find. We like the herbed pate or the peppered pate. Cheese ball is also perfect. Oh and don;t foregt chips and dip...using sour cream and French onion soup mix with a shot of Worcestershire's as the dip! As a first course escargot is very retro and perfect with your entree. Then again and old fashioned shrimp cocktail would be perfect too. Hang the shrimp off a glass filled with the shrimp sauce! French Onion soup is very retro too but may be too filling....but sooooo good with something like Wellington! Make small bowls! Bonus you get to use your brown sauce! LOL One of the sides with Wellington would have to be twice baked potatoes. I'd do asparagus as the other. PS: for real fun have Harvey Wallbangers or Singapore Slings for drinks before! LOL Here is my recipe for stuffed mushrooms. Can't recall if I served them to you. Stuffed Mushrooms 20 large white mushrooms 1/3 Cup butter (maybe a bit more) 4 or 5 green onions chopped fine 2-2 1/2 cups grated cheddar 1/3 Cup bread crumbs salt Clean mushrooms and carefully remove stems. Chop stems finely (I use the food processor). Melt butter in a saute pan. Saute mushroom stems and onions over medium heat until soft but not browned and the stems have given up their juices. Mixture should be quite moist. Add the bread crumbs, only enough to absorb the liquid. Add the grated cheese and stir just until it has melted. Don't worry if the oil separates from the cheese.Stuff the mixture into the caps and sprinkle with a bit of salt (or you can salt after they come out of the oven...which is what I usually do). Comments (40)Maggie, I don't use a recipe so looked around on the Internet and this one was the closest to how I make it. I deveined the raw shrimp and cut them in half lengthwise so they wouldn't stick up too high. I sauteed them in the butter after the veal was done but didn't add the green onions or Worcestershire sauce. The only other change I made was using fresh asparagus, which I steamed in the microwave and then plunged into ice water the day before, then refrigerated in a covered container overnight. I only cook the veal about 2 or 3 minutes per side over medium-high heat, then remove the pan for it to cool down a bit before adding the seafood. VEAL OSCAR 1 1/2 lbs. veal cutlets, cut into serving-size pieces 1/3 c. all-purpose flour 1/8 tsp. salt 1/8 tsp. pepper 1/8 tsp. garlic powder 1/3 c. butter, melted 1 c. fresh lump crab meat 1/2 c. chopped green onions 2 tsp. Worcestershire sauce 2 (10 oz.) pkgs. frozen asparagus spears, cooked (optional) Bearnaise Sauce Chopped fresh parsley Flatten cutlets to 1/4 inch thickness, if necessary. Combine flour and seasonings; dredge cutlets in flour mixture. Cook veal in melted butter in a large skillet until browned on both sides. Remove meat, and keep warm, reserving drippings in skillet. Add crab meat, green onions, and Worcestershire sauce to drippings in skillet; cook over medium heat, stirring occasionally, until mixture is thoroughly heated. Arrange asparagus over each piece of veal, if desired. Spoon crab meat mixture evenly over asparagus; top with Bearnaise Sauce. Sprinkle with parsley. Comments (31)I hope your dinner party went well. May I tell you about my experience last night? Originally, the plan was for the dinner group to split and dine at two houses. A week ago, the husband of the other hostess passed away unexpectedly. I suggested postponing the meal but the others wanted to proceed, due to schedules and what not, so I said fine, everyone (except the widow) should come to my house. It would be 11 people now, and everyone was sticking with their original food assignment and I would do all the meat. So as not to make the only single person feel like odd man out, I was putting 7 people, including my husband, in the DR and I would stay in the kitchen with the single and one couple. At noon, I receive an email that one couple made a mistake and they weren't able to attend. Oooookay. Now I have the awkward amount of 9 guests (my DR table seats 8) and less of the potato dish, but someone else is also bringing that dish so I'm not going to worry about it since we usually have too much food. I decide to keep 5 people in the DR so I clear the DR table, remove a leaf so they don't look so lost in there, reset the table, and keep the small table set for 4. At 5:45, I get a phone call from another couple that they thought it was next week and they aren't even in town. Ummm, okay. But she was the other potato dish. The guests are arriving at 6:30 and both potato people canceled. Luckily, I had a bag of potatoes and Gruyere cheese so I threw together a scalloped potato dish. Ai-yi-yi. I put the leaf back in the table and reset it for 7. After that it went smoothly. I knew we should reschedule but no, they all wanted to proceed.
