You're favorite cocktail - T&T

Well we certainly have our favorites. Sometimes DH loves a Manhattan, but most times a Grey Goose martini, shaken and ice cold with olives. DH usually makes a pitcher of cosmos (he's the Cosmo King) but sometimes we want something new.

Me, I love my key lime martini and when in the mood, a nice dirty martini, but the norm is a very dry margherita.

We have experimented with some new recipes, most lately a peach martini, that did not quite cut it mostly because the peaches weren't ripe (oops), and are always looking for a new drink to sample with our friends, who pretty much love alcoholic beverages as much as we do.

So, anyone have a nice drink that they would like to share that's light and refreshing. Not really looking for anything slushy or creamy (although a drop of cream is always nice), but perhaps something worthy of a martini glass or an old fashioned glass?

Also I love a vrey dry Bombay martini with Martini and Rossi Vermouth..shaken but often shst stirred in the glass.

Okay, I made fish tacos tonight and we ate them outside on the patio. Sorry no pics - it was candlelight only - but here is the semi detailed process. Lightly salt half the fish and set aside in fridge. Cube the other half, put in a bowl with lime juice, and refrigerate, stirring occasionally. I used tilapia fillets. Make pico de gallo. Medium dice four largish tomatoes (seeds, skin and all), one largish onion. Fine dice one jalapeÃÂ±o or Serrano pepper (seeds removed), four garlic cloves. Optional: cut the flesh from three peaches and dice. Zest and juice three limes. Chop a handful of cilantro. Combine all in a large bowl. Mix with your hands, squeeze a few handfuls to mush up a bit of the mixture, which gives it a bit of thickness. Set aside for 10-20 minutes, then salt and pepper to taste. De-stem the remaining bunch of cilantro, put in a bowl. Optional: my wife likes sauce, so I had to do this. Mix a half cup of mayo with some jalapeÃÂ±o or habanero chile oil (cut up the de-seeded pepper and crush it, e.g. using a garlic press), and a little lime juice. Add the pepper oil and juice bit by bit, tasting as you go. If it gets too hot, add more mayo. Optional: make some guacamole, just mash up avocados with a fork and add a bit of salt and a bit of lime juice. Again, my wife wanted this, actually she made it. Heat oil in a pan, use high heat, fry corn tortillas, folding them in half after they've softened in the oil, then frying on each side until they start to brown. This isn't necessary, our beachside Baja tacos weren't hard shelled, but I like it anyway. Set tortillas aside on paper towels. Heat more oil, put the fish fillets in the pan, add a dash of lime juice, sprinkle on paprika and fry on high heat, tossing to distribute the paprika and get all sides of the fish fried. The paprika is an optional cheat; it makes the fish look browned, but you don't have to actually brown it which would mean overcooking it. Cooking time is only about 3-4 minutes. Fork the fish into small pieces. Take the lime juice-soaked fish out of the refrigerator, discard the lime juice. This is your ceviche. It needs to have soaked in the lime long enough to be opaque white, no longer translucent like raw fish is - half an hour or more. Assemble tacos. A tortilla, some fish - either the fried fish or the ceviche - plus cilantro, pico de gallo, and optionally the sauce or guacamole. A beer would be good accompaniment. I saw this recently. Pumpkin Liquor Pumpkins augur the onset of winter. Infusing vodka with the king of fall produce ought to improve your outlook, combining the flavors of fall with a hint of caramel. Pumpkin Liquor Prep time: 30 minutes Total time: 1 hour plus 6 weeks Yield: Makes about 1 quart Ingredients 2 cups water 1 cup granulated white sugar 3 vanilla beans, split 3 cinnamon sticks, cracked 6 whole cloves allspice 6 whole cloves 3 inches fresh ginger, sliced Pinch ground nutmeg 2 cups roasted pumpkin, cubed 4 cups decent quality vodka 2 tablespoons pure maple syrup, optional 2 tablespoons bourbon, optional Cooking directions To make syrup, bring water to boil in heavy-bottomed saucepan. Add sugar. Stir and reduce heat. Add vanilla, cinnamon, allspice, clove, ginger and nutmeg. Stir and remove from heat. Allow syrup to cool, about 30 minutes. Toss cubed pumpkin into tall wide-mouthed jar. Pour vodka over cubes. Add 1 cup syrup. Seal and gently shake contents. Refrigerate up to 1 week, shaking daily. At week's end, add maple syrup to sweeten and bourbon to darken, if needed. Strain contents through metal sieve into airtight container. Seal and store in a cool dark place for 5 to 6 weeks. We adored Sol's Dirt Bombs aka Duffins! They're a delicious bit of cinnamon and cardamon heaven! Dirt Bombs Yields: 12 muffins* 3 cups AP flour, minus 3 tablespoons 1 tablespoon baking powder Â½ teaspoon salt Â½ teaspoon ground nutmeg Â¼ teaspoon ground cardamon Â¾ cup (1 Â½ sticks) unsalted butter 1 cup granulated sugar 2 large eggs 1 cup whole milk ** Topping *** Â¾ cups unsalted butter, melted Â½ cup granulated sugar 1 Â½ teaspoons ground cinnamon Preheat oven to 400Âº F. Place the rack in the center position. Generously grease a 12-cup standard muffin pan. Sift the flour, baking powder, salt, nutmeg and cardamon into a mixing bowl. In another bowl, cream the butter and sugar until light and fluffy. Scrape the bowl down half way through. Mix in the eggs. Add the dry ingredients alternately with the milk in two additions, mixing gently by hand to incorporate all the flour. The batter will be on the stiff side, but airy. DonÂt over mix or beat the batter as this will make the muffins tough. Spoon the batter into the prepared pan, without smoothing the tops. Bake for about 25 minutes or until a cake tester inserted in the center comes out clean. As soon as the muffins are cool enough to handle, turn them out onto a wire rack. Add the melted butter to a bowl. In another bowl, mix the sugar and cinnamon. Dip the muffins (top, sides and bottom) in the butter, using a pastry brush -if necessary- to cover areas not buttered by dipping. Immediately roll the muffins in the cinnamon sugar mixture. Serve warm or at room temperature. *I've made this twice, and both times, this recipe has yielded 16 muffins instead of 12. **I substituted whole buttermilk for whole milk because I always have it on hand and prefer it for baking. *** The amounts listed for the sugar and cinnamon are not quite enough to coat all the muffins, so I recommend you double it. The first time I had a hot buttered rum was at a lady's home in Brown County, Indiana. Brown County is hilly and wooded (at least back then) and very beautiful on a snowy winter day. This lady's house was amazing. She had traveled the world, literally, and had decorated her home with the beautiful things she found on her trips. We went to visit and she made us this drink on a cold night in winter with snow outside and a big fire in the fireplace. While we sipped, she told of stories of her travels. It was a wonderful and memorable night. (This would also be good for a sore throat, I would think!) HOT BUTTERED RUM (Rachael Ray) 2/3 cup packed dark brown sugar 1/2 cup (1 stick) unsalted butter, room temperature 1/4 cup honey 1/2 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg 1/8 teaspoon ground cloves Pinch salt 3/4 cup spiced rum 2 cups boiling water 4 sticks cinnamon, for garnish Using an electric mixer, beat the brown sugar, butter, honey, cinnamon, nutmeg, cloves, and salt in a medium bowl until blended and smooth. Transfer the mixture to a 4-cup (or larger) measuring cup. Add the rum and then 2 cups of boiling water. Stir until the butter mixture dissolves. Divide the buttered rum among 4 mugs. Garnish with the cinnamon sticks and serve.

Many things. A good spicy Bloody Mary tops the list or a Dirty Mary with a little olive juice and olives. The other really good one is margs made with fresh squeezed orange, lemon and limes juices. A summer staple. Yum. TGIF!

I'm into cosmos at the moment. When I want a quick light cocktail, gin & tonic or gin & sprite if no tonic. I also like margaritas when we're out for tex-mex.

This is not a martini, but oh so good!

Pureed mango and pineapple juice served over crushed ice! You can add vodka or rum.

Light and refreshing - how about a Cuban Mojito or the Brazilain Caipirinha?

I'm a red wine drinker in the winter or a dark winter brew.

Sue, I am glad you didn't ask me to pick just ONE favorite! I like so many! LOL

My standards are red wine, gin & tonic, or vodka & cranberry juice. But I really like to experiment with new things so here are some of my favorite T&T cocktail recipes.

Blueberry Martini

2 parts blueberry infused vodka
1 part raspberry schnapps
splash of fresh lime juice
Vanilla Margaritas 1 part good quality tequila 1 part grand marnier 1 part triple sec 1 vanilla bean Combine all ingredients in a bottle or jar with cover. Let sit for at least 2 months. When ready, mix with your favorite margarita mix and enjoy!
Wild Berry Freeze Cocktail

2 ounces raspberry Schnapps
1-ounce raspberry vodka
Splash of grenadine
Splash of ginger ale
Ice cubes
Fresh raspberries, for garnish
Combine Schnapps, vodka, and a splash of grenadine and ginger ale over ice. Chill, strain into a martini glass and garnish with a fresh raspberry.
Lemon Drop Martini 2 parts Absolut Citron 1 part triple sec 1 part lime juice Add all ingredients in cocktail shaker with ice. Shake and strain into 2 well chilled martini glasses. Garnish with lemon twist. Option: use lemon slice to wet rim of glass and dip into white sugar to coat ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Red Apple Sangria 3 oz Cabernet Sauvignon 1 oz Sweet\-n\-sour mix 1 oz Apple Liquor ( I used 99 Apples brand) 1 oz Pineapple Juice 1 oz Cranberry Juice Garnish with Chopped apples, orange slices and fresh cranberries. My notes: I have made this with Zinfandel, Shiraz and Pinot Noir and it is just as good! Linda

I made this drink for a friend the other night and she loved it.

I mixed Captain Morgan with orange juice and added a little cherry juice and a couple cherries.

I tasted it too and thought it was a great pool side drink! Very tropical. It's pretty too with the orange color and red cherries floating in it.

But My favorite cocktail is Barcardi with diet coke. No lime. I'm boring.

I'm into Cosmos now, but we have a family favorite that we make for all family gatherings. It's a Whiskey Sour.

1 can of frozen lemonade
2 cans of oj (not frozen)
1 can of whiskey
a lot of ice

Blend. You can always increase the whiskey, of course!

Vodka with light cranberry juice and a lime wedge. It's doubly-medicinal: the vodka improves my mood, the cranberry juice prevents UTI's :)

We're both martini drinkers, vodka with a hint of dry vermouth. I like mine up with a twist and Joe's is on the rocks with olives. We both love bluecheese stuffed olives and sometimes use them as our appetizer and salad combined.

If it's really cold out, I love a good Rob Roy, up, perfect with a twist and double olive.

Stoli - I keep a bottle just for me in the freezer.
A few years ago, I discovered Jager-Meister! It is an acquired taste - Kept a bottle in the freezer along with frozen shot glasses, of varying designs just to add some class LOL- oh that was a fun summer!!!

We don't drink cocktails but one summer on my birthday my son-in-law made the most wonderful Watermelon Margueritas from a recipe found in the local newspaper. We all fell in love with this drink and had him make them over and over again long past the birthday:

Missing from the pic is the slice of lime on the edge of the glass and the watermelon wedges.
They are sooo refreshing and not at all too sweet.

WATERMELON MARGARITA

2 cups cubed, seedless watermelon, cut small
2 oz tequila
1 oz orange liqueur, such as Grand Marnier or Triple Sec
1/4 cup fresh-squeezed lime juice
4 lime and 4 watermelon wedges for garnishing

1. Freeze watermelon on a plastic wrap-lined plate until frozen solid
2. Place in a blender with the other ingredients and blend until smooth and light
3. Pour into a well-chilled glass, garnish with lime and watermelon wedges and serve immediately.

If you're near a Trader Joe's, they have both an Italian grapefruit soda (not too sweet) and sparkling pomegranate juice. Both are great with vodka.

Served this several times, over the holidays! Everyone enjoyed and no one turned down a second!

Caramel Apple Cocktail

6 servings
1 tablespoon cinnamon sugar
1 lemon wedge
1 1/2 cups apple cider
6 tablespoons butterscotch schnapps
1 (750 ml) bottle sparkling wine, chilled **I used sparkling apple cider
6 maraschino cherries

Spread cinnamon sugar onto a small plate or saucer. Run the lemon wedge along the rim of 6 champagne glasses, then dip the rims into the cinnamon sugar.
Combine apple cider and schnapps in a measuring cup.
Divide evenly among prepared glasses. Divide sparkling wine among glassses.
Garnish with cherry.

One of my favorites is Bloody Caesar, sometimes just called "Caesar". I recently learned that it is the national drink of Canada - according to some Canadians in Toronto. It's basically Vodka, Clamato juice, Worcestershire sauce, and a few drops of hot sauce. In Canada it is served with a celery stick, but I don't always bother with that. An ex in North Van always used to serve it to me that way, however.

I also like Vodka with a mixture of diet grapefruit soda and concentrated cranberry juice. I've been buying R.W. Knudsen "Just Cranberry" juice, which is more concentrated that other cranberry juices and is unsweetened. I add Splenda or Equal for sweetener - I have to avoid sugar in drinks, especially high fructose corn syrup, which is used in some cranberry juices. Sometimes I use diet Sprite instead of diet Grapefruit soda (Shasta is my favorite brand, followed by diet Squirt).

For a somewhat sweet drink, I like Vodka with orange juice and Cointreau. I also like Margaritas but seldom make them.

Last night I dreamed that I made a drink (or maybe guacamole) with avocado and Tequila. I wonder if I should try that. In my dream, it was delicious.

My favorite is a margarita or mojita.

But after being in South American in January the caipirinha is a new favorite, in fact I ordered four bottles of cachaca today. I really didn't know you could order alcohol over the internet.

Sharon, I am going to try the watermelon margarita this summer, that looks so good!

My favourite right now is an oddball combo of flavours but if you like lemondrops, you should most definitely try this!

Amalfi Dream

1 oz vodka
1 oz limoncello
1/3 oz lemon juice
5-6 mint leaves

Shake vigorously with ice and strain into a glass. Little bits of mint should make it into the glass as well and float on top of the drink.

A Washington Apple martini!!!

1 1/2 oz. Crown Royal
3/4 oz. Sour Apple Pucker
1 1/2 oz. Cranberry Juice

My usual drink is also a grey goose martini (dry, straight up, with olives). But probably my favorite drink is a mojito. I also like my own frozen margaritas - made with fresh lime juice (a little frozen lime juice concentrate), good tequila and a splash of triple sec.

A drink I love but haven't seen around in ages is a Ramos Fizz. I can't remember all the ingredients offhand, but it's often a brunch drink - more easily obtained in San Francisco (and perhaps NY). I seem to recall gin, bitters, orange peel (or some form of orange), egg white and sugar - like a grown-up, less sweet, alcoholic orange julius. I keep telling myself I'm going to have a brunch and make these.

I love to sip on cognac.

On the rare occasions that I find myself in a bar, I might order a Tanqueray and tonic with a wedge of lime. For a summer party we like to muddle up some limes and cachaca and serve Caipirinhas.

Lars, go easy on those avoquilas. I woke up in a tree after drinking one of those in my dreams... and they're fattening!

We lived in a dry county for so long that I've all but stopped having anything but a rare glass of wine. I did learn to appreciate good bourbon though, so I'm content with a really good bourbon on the rocks.

I am currently on a retro kick.... Sidecars are my drink of choice!

The Original from Harry's Bar - Paris

1 1/2 oz. Brandy or cognac
1/2 oz. Cointreau
1/2 oz. Lemon Juice

Combine all the ingredients in a shaker filled with ice, shake well and strain into a cocktail glass that has been rimmed with fine sugar.

2 jiggers good vodka
2 jiggers Chambord
2-3 lemon slices
crushed ice
sugar or salt

Crush the lemon slices, vodka, and Chambord in a sturdy large glass (or shaker), strain into a sugar or salt lined martini glass.

I like Vodka martini's, very dry with olives! Vodka and 7up lately, but I also love Chambord and champagne and now we also have enjoyed Kir Royale, Creme de Cassis and Champagne

A local bar that served a Sunday brunch with their transvestite show used to serve a cocktail called 'Sex & the City'; don't know if this was something they made up or if other bars serve it, too. Basically, it's a mimosa made with pineapple juice instead of OJ, & champagne. Then you add a shot of vodka to it. For a brunch, I usually make ice cubes of pineapple juice with a maraschino cherry & put them in a pitcher with the juice & vodka & let everyone serve themselves, then top off with champagne.

The rest of the time, I drink wine or gin & tonics with lots of lime.

I most often tend to drink my distilled spirits neat or with a little ice, I don't generally do mixed cocktails. However, once in a great while (especially during hot, hot weather) a vodka & grapefruit (must be fresh squeezed) with a splash of cranberry is both pretty and refreshing. Sort of a backwards Seabreeze, which is a vodka & cranberry with a splash of grapefruit (also very good).

Ramos Fizz

Juice of 1/2 lemon
one egg white
1 t powdered sugar
2 oz gin
1 T light cream
1/2 t triple sec
Shake with ice and strain into highball glass oer two ice cubes. Fill with carbonated water and stir.

At the restaurant where I worked for many years, we used orange flower water as a float on top.

A nice, refreshing martini-glass cocktail is an old fashioned Gimlet. One oz of fresh lime juice, 1/12 oz gin and one t powdered sugar, shaken with ice and strained. I actually prefer to use a simple syrup instead of the powdered sugar to keep the drink crystal clear or, if I have no lime juice on hand, use Roses Lime and leave out the sugar.

A Manhattan is my drink of choice. Two giggers of 15 year old Evan Williams Single Barrel Kentucky Straight Bourbon Whiskey, one gigger of Tribuno Sweet Vermouth, two dashes of Angostura Bitters, two long-stemmed marachino cherries with a tsp. of the juice. All is carefully stirred over ice and drank from old fashion glass. As you can see, I take my Manhattans very seriously.

This is a slightly altered version of an Americano. Half red vermouth, half white vermouth and a big squeeze or two of lemon, on the rocks.

A true Americano is made with red vermouth, Cinzano and topped off with a splash of club soda. I've only had the first one.

I like a Stohli and soda with 2 lime wedges, squeezed. That is my all time favorite. Very refreshing, but for some reason when I drink it, my face breaks out. Weird.

I also love a shaken margarita on the rocks with salt...preferably made with Patron Tequila (any of them).

I think I could very easily be persuaded to have one of TexasRedHeads Manhattans though. I haven't an idea what some of the stuff is, but it is described really good. :)

My son-the-bartender (but not for money!) believes in the cocktail shaker, and the other night, I made myself a "James Bond"...very dry Bombay martini, shaken not stirred....and Oh my...was it ever good!
Cocktail shakers are a good thing...I recommend a shaken cocktail!
