Got a better way to de-cake powdered milk?

Last night I made a sponge that uses powdered milk. I'd forgotten what happens when you sieve it to break up the lumps -- and ended up breathing in clouds of fine milk dust. Since I'm already sick, this was not good.

I could do it in the processor, but then when I open the processor the particulate cloud would still get me. Same for bashing it in a Ziploc bag. This stuff is much worse than powdered sugar. Hoping somebody has a clever idea that I'm not thinking of.

I use a blender....and wait for the dust to settle before opening.

Mix it with a little water before you add it to your sponge, let soften, and stir well to mix.

No need to sieve it at all.

Jude, the frosting is grainy for me too, but I kind of like it that way! So, you aren't doing anything wrong, that's just the way it is or at least the way it's always turned out for me. Julie, the frosting/cake combo wasn't my idea either, another poster (Cindyny) had a teenaged daughter who liked that frosting and so she used it to frost the cake. Yup, another idea I appropriated, LOL. As for the wedding cake, that's exactly what I did, I just made round layers, 3 tiers worth. The cake is "substantial" enough that it stacked nicely and the lower layers didn't crumble under the weight of the top layers. Pixistix, your Grandpa was right. As for that Kitchen Table, well, I guess taste is subjective, I know a couple of people who just thought it was too "plain", but I love the stuff. Good, it's just more for me! Annie

Wintercat, there was a little bit of protein in addition to the goldfish, at least they made the sandwiches from my own grassfed beef. (grin) Oh boy, time does fly, doesn't it? It doesn't even seem possible to me that she's in kindergarten. And taking over, of course. I don't remember having birthday parties when I was a child, or graduation open houses or a lot of other parties that are customary now. Birthdays usually included a cake after supper with the family and a couple of gifts. "Important" birthdays, like turning 13 and being a teenager or starting school might include a sleepover with a couple of friends, but that was the complete celebration. This is more fun, LOL. sleevendog, my Grandmother used to make rabbits out of pear halves, I still remember those! Lars, Ashley's favorite color combination is turquoise with chocolate brown, she decorated her bedroom with those colors. Much better than my Mother's kitchen when I was young, the "hot" color scheme then was turquoise and pink! Annie

Martha, you're right, we always had a ton. But first we had to get the outside hull off, and that would stain your hands for weeks. We tossed them into the gravel driveway and ran over them with the car until the hulls came off, then went and picked up the nuts. I'd then sit on the porch with a piece of 2X4 that Dad had made a hollow indentation in. I'd put a nut in the hollow of the board and whack it with a hammer until it broke, then Dad would pick out the nut meats and store them in a jar in the refrigerator. It was messy, time consuming and generally a huge pain. Now I pay the kids to pick them up in buckets and dump them on the back of the property, as a couple of windows have been broken by the projectiles black walnuts become when they are hit by a lawnmower. The squirrels appreciate them far more than I do. My Mother loves the things. Me? Not so much. They are OK, but definitely not worth the work to me. Maybe I could pay the kids to crack and pick them....hmmmm.... Annie

Powdered coconut milk

I freeze yogurt, cottage cheese, maple water, coconut water, and all cream based products. Butter, goat cheese, cheedars, parmesan, mozarella, gorgonzola, ---i only buy sour cream and ricotta during the holidays for a tiny side dish and freeze the remnants. Freezing without air pockets by adding some olive oil on top keeps them fresh enough for cooking recipes. *I'm just refering to your first post... I asked on a previous thread (that I can't find) if all powdered coconut milk contained a long list of additives. Apparently it does. Best to steer clear. They do not 'all' contain a long list of ingredients. Like i said, a quick search finds many that only have coconut, and that is in powder form as well. I'm just pointing out that a few emulsifiers and thickeners are added often for those suffering from celiac and other allergies. Don't blame the victim and say any additives are 'gross'. They are in most gluten free breads and baked goods. These sensitivities can happen at any age and especially during pregnancy. Cancer recovery, etc. Many with dairy and gluten problems need the thickeners and emulsifier for a creamy texture ---like i said, are in gluten-free flours and baked goods. I don't purchase these products. I like toasted coconut, and fresh whole coconut for the water and fresh flesh in smoothies. We don't care for it in cooking preferring Japanese curries not using coconut. I just prefer these 'influencer' you-tubers to educate and not pronounce to stear clear. Educate label reading. So simple. The best do that.

I made copious amounts of homemade hot cocoa mix in November, and like you, it gets everywhere when I sift it. I take a large food-safe plastic bag and attach it to my flour sifter with a jumbo rubber band so the sifted ingredients are contained in the bag, and much of the powdery residue. You could also place a bowl in the bag to catch the sifted powdered milk.

Word of caution... If you are mixing INSTANT non-fat dry milk powder in a blender, be sure to measure it BEFORE you pulverize it, because the milk powder will be in smaller particles and won't measure the same.

Helpful Hint: When you have a recipe that calls for NON-instant milk and all you have is INSTANT, you reduce the size of the INSTANT milk particles in a blender, then you can use INSTANT milk powder measure-for-measure in a recipe calling for NON-instant.

First, never sieve powdered milk (or flour) near an open flame. It can be explosive.

Yes, I have solved the problem sometime ago:

Get an artist roller, roll the powdered milk in between two sheets of silicone baking matt.

Never any dust in the air.

I put the powdered milk for part 2 of the recipe into a Ziploc bag and just pressed it smooth with my hand. Worked pretty well. Larger amounts would be harder, maybe.
