Comments (11)Evaporated milk is never sweetened....condensed milk is. you can use this recipe and substitute a can of evaporated milk and enough water to make 2 cups, for the 2 cups of milk called for.. 2C Scalded Milk, cooled to warm temperature 3T Shortening or Butter, Melted 1/2 C Sugar 1 t salt 2 eggs, beaten 2 pkgs yeast (or 1T bulk yeast) 1/3 warm water 4-5 cups flour Dissolve the yeast in the warm water (about 105 degrees) with a teaspoon of the sugar, wait until it foams. While waiting for the yeast to foam, mix the milk, butter, remaining sugar and salt. After the yeast foams, add the yeast mixture to it, and the two beaten eggs to the mixture. Either by hand or in a stand mixer, blend in flour a cup at a time until the dough is soft and fairly sticky. Turn onto a floured board and knead just until the dough is no longer sticky, but is smooth and satiny. Let rise until doubled, punch down, knead a little, then shape into rolls. Makes 3 dozen small dinner rolls or 8 big sandwich rolls. Bake at 350 until golden.About 15 minutes for small dinner rolls, 25 to 30 minutes for very large sandwich rolls. May brush with egg wash or butter and sprinkle with sesame seeds. Also good rolled in butter and cinnamon sugar. Comments (8)jenn, I wouldn't bother to reduce the milk or the amount, I think it's fine, but I don't think it would hurt to swap some milk with butter either. I often switch skim and whole milk, use milk instead of cream, evaporated milk in place of regular milk, etc. I do get a better texture in things like cream soups or ice cream with the higher fat alternatives, but in candy and baked goods I use whatever I have on hand. Things like Ann T's scones are better with cream, of course, but they are entirely acceptable with milk too. I think your cookies will be fine but I also don't think more butter is ever a bad thing. Comments (20)Here's my basic vinaigrette; I've made it for years. If you like tarragon, go for it: Tarragon Vinaigrette Dressing 6 oz Olive Oil (see note) 2 oz White Wine Vinegar 1 tsp dried tarragon 1/8 to ¼ tsp salt (preferably kosher) generous grinding of black pepper 4 to 6 dashes of Tabasco about ¼ tsp of Dijon mustard Put all the ingredients in a container and blend well with a fork or whisk. If you want it a little thicker, put an ice cube in it while blending it, removing the ice cube prior to dressing the salad. It can be made up earlier in the day and stored in a glass container, covered, in the fridge; just whip it up again immediately prior to dressing the salad. Makes about one cup. Note on olive oil: this recipe is only as good as the oil you use. DonÂt use cheap olive oil (or--horrorsÂÂlite olive oil.) Use a good green "primavera" extra virgin oil, no blends. Bertolli is fine. If you can find a French oil like Hilaire Fabre or James Plagniol, get it; itÂs fantastic. Variation 1: use walnut or hazelnut oil instead of the olive oil. Variation 2: for the vinegar, use half vinegar and half lemon juice. Comments (25)Yes, I had a very long talk with my allergist last month and we discussed my "allergy" to perfumes, colognes, fabric softeners (smell on other people), soaps. So yes, I would say it is a chemical issue sjerin. I already take shots for dust, dust mites, cats, dogs and fall ragweed, doc said there is no shots for these allergens, drat! Matthias, since we have snow here right now, my van will not warm up. What sun? We are headed to Florida soon and I will air it out when we get there, for sure. DH may put me on the roof!!! Patriciae and Nickel, I will be talking to the dealership next week and will ask them about any sprays, although it is too late if they were used!
