It depends on the cabinets. If they are in good condition and have been installed the usual way with screws that can be unscrewed and then the cabinets are just removed and movable, no problem at all. We're re-using/re-purposing most of our lower cabinets just as you are thinking about. None have been damaged by removal. Of course, if your cabinets are in poor shape, were installed in a different than usual way, or are built-ins (meaning there is no back wall of the cabinet), you will be in an entirely different situation.

Yes you can retrofit, if you have clearance. I installed a pot light near the edge of the house (hip roof) and it came close to not fitting. I agree with ICAT cans. Otherwise you would have to get in the attic and spray foam around the entire can to make it air tight (leave electric box accessible). Having air tight pot lights in an unconditioned attic is very important. Not important if the pot lights are between floors in the conditioned space.

I just did that. I had a quartz top on a 30" vanity. He did not glue it to the cabinet at all because we were moving it in a few weeks. I had a vessel sink, and we did have the sink firmly siliconed to the top. When we removed the vanity, the builder doing the work (a really flexible, thinking guy who knew the plan) disconnected the plumbing (drain, hot and cold water) and with his son, picked up the top, sink, faucet, drain, and all, and carried it over and set it down in a pre-planned spot, went back and pulled out the vanity. I did this because I had not really been planning on doing the half bath. My contractor was coming to do the full bath. But the half bath had no storage at all, I had changed my design for the full bath and now had a new sink and faucet to use in the half bath, and so I bought a new vanity to use there. I had planned to use the yucky old half bath as our only bathroom until AFTER the full bath was done, then design what I wanted for the half bath. My contractor thought it was better to do the half bath first, so I scrambled to put it all together in a few weeks. I had to install the vanity twice because I wanted to have the plumbing moved to fit the new vanity and get the vanity working while I waited for my contractor to get done with his previous job and come to ours. I wanted to be ready when he got here. He then put in a new subfloor in the half bath, put in the tile floor, put in my few improvements, wallpapered two walls and painted, reinstalled the toilet and new vanity, and moved on to the big project. So we had some drawers and an nice cabinet space for our stuff while we "lived" out of that half bath for two months. Sometimes you have to take some time to figure out what you want to do with a bathroom. You might want to investigate materials, learn about methods, and decide what is right for you and for your budget. It is far better to do this than to quickly throw things together and spend the next 30 years looking at things you don't like or that don't work well for your family.
