Wolf 30' Range - All Gas or dual Fuel ?
Comments (4)The burners are a little different but have not cooked on a Wolf AG so can't compare. We have a place we can go close to my house and actually cook on Wolf ranges. Do you have anything like that? Some think the simmer runs a little higher with the AG burners, but I guess you could always use a simmer plate. The BTUs listed do not tell the whole story and the simmer will depend on the pan-what it is made of and size. I would prefer the semi open burner in some ways. The flame may be a little more straight up but it would be nice to look at and see for yourself. As far as the oven goes, with the DF, the biggest advantage is being able to direct the heat. The roast mode brings more heat from the top to brown and it great for roasted chickens etc. The baking mode brings the heat from the bottom which I like for pies and quiches to get the bottom crust nice and done. There is also a convection setting that uses the element around the convection fans. I haven't used that as much. I am not sold on the necessity of that third element. Maybe I will find something that I like to use it for. on the other hand The AG has the infrared broiler which is great for steaks but doesn't cover as much area I think some have said. I mostly use my broiler to brown the tops of something I made or sheets of appetizers so I like the element to cover a large area. I do my steaks either in a cast iron skillet inside or grill outside. Some feel that the AG is better to bake bread because it is a moister heat. You can always buy a thermometer with a probe that beeps when it comes to temp, and some feel this is a better way to go because it is much cheaper to replace it than the one that comes with the oven. Comments (6)andiswife-I have a GE Cafe dual fuel range, and I love it. It has a huge oven and I have not had any problems with any of the burners. Yes, there is an oven fan that comes on, but to me anyway, it not that annoying, and it has never blown out the back burners. This range also sat in my garage for over 1 year before it was installed and it has always worked perfectly. I love the power boil and it simmers and I truly mean simmers. The thing with the griddle is that to use the griddle, you have to take off the grate. I tried to cook on the griddle with the grate on and I did take forever and did not heat up very well, but once I read the owners manual and it said to take off the grate, it was perfect. I have seen on this forum and on the kitchen forum complaints and boasting about every appliance manufacturer, so I guess you should just take everything with a grain of salt. Yes, I would buy a GE Cafe range again. I also purchased the GE Cafe vent hood, and I must say it is very quiet on low and med low. Does start to get loud on med hi and hi. If I decide to buy a duel fuel range, I would hire an electrician to add a 220V outlet first. I bought the house recently, I had the whole house remodeled except for the kitchen because the seller had it remodeled 2 years ago with new cabinets and counter top. The salesman recommended GE cafe range. Is GE cafe a good brand for range? For GE cafe, I can choose among the following three models: GE cafe freestanding duel-fuel range with baking drawer C2S985SETSS GE cafe freestanding self cleaning double oven convection gas range CGS990SETSS GE cafe freestanding gas range with baking drawer CGS985SETSS I noticed consumer report has better reviews on the compatible GE profile range than GE cafe which is a higher end product line than GE profile (GE PGB950SEFSS--71, GE PGS920SEFSS--73). GE cafe duel fuel was rated only 51, its double oven 57 , and its gas range with baking drawer: 61(baking: good). I don't know if it's still good to choose GE cafe, which looks better and is a higher product line than GE profile. It sounds like that except for the heat venting out into kitchen, gas and duel-fuel ranges have about the same effects for baking cookies, cakes, and meat. In that case, I would choose the gas range, since I save the work of hiring someone to install the 220V outlet. So is GE cafe a good brand for range? Comments (5)The Wolf gas range does not have the blue interior and does not have the chipping. We bought Wolf for their supposed "great service" but were very disappointed. There are definite differences in gas and electric ovens. Of course you can bake in both of them, but some people might have a preference for one or the other. Gas ovens produce water as a byproduct of combustion but they have more ventilation so moisture from combustion and what you are cooking vent out so gas is more drying heat. You also will get more heat and moisture dumped into your kitchen. Electric heat does not produce moisture but tends to hold onto humidity from what you cook so are more humid. This will have some effect on what you are baking. The added moisture promotes starch gelatinization so may allow a little longer rise in things like bread or cakes. It also affects the crust. The electric ovens will hold onto added moisture that you might add while baking bread. You can use a cloche to keep moisture around your bread in a gas oven. A gas oven because it is drying promotes the Maillard reaction and therefore browning. This is why many like it for roasting. Drying is also good at the end of baking so that you get that browning which contributes to flavor. If you have an electric oven with convection, you can use the fan when you need the drying effect of more air movement. Electric ovens are as freidajune says can be more complex. They might have additional elements that can direct the heat, more from the top(for roasting) or bottom and may have elements in the back that are in theory supposed to provide more even heat when the oven is full. Some ovens have a variable speed with the fan but very few actually mention this in their manuals. They can also have little oddities in the way they work. You might consider the broiler. Some gas ovens have an infrared broiler which can be very small. I tend to broil trays of things so like a wider electric broiler.
