I am having the 24 inch deep tall cabinet (existing, to be modified for the new ovens) pulled out 5 inches from the wall to match the 29 inch deep run of cabinets that I am considering having custom made for that wal. That should allow plenty of space behind that cabinet. Which leads me to another question for gizmonike. Does the supply and plumbing run in the back of your cabinets? My potential cabinetmaker said he would make deeper drawers to go with the deeper cabinets, but perhaps I should just use 24 inch cabinets and pull them out to leave a 5 inch space behind for plumbing between the steam oven and the sink? How much depth is needed for the plumbing? I believe that there is probably 2.5 inches between the back of the drawers and the back of the cabinets; is this enough for the plumbing to run inside the cabinets?

We're building a new house and the placement of the appliances is pretty much fixed at this point. We didn't have any idea of how tricky this would be. Speed oven, Steam oven plus 30" convection oven and induction cooktop. Where to put them all? And how to decide which manufacturer so that they all match, without breaking the bank? We're thinking that the 30" Convection oven will be the one we use least. The Miele Steam seems better than the Bosch, but that means we have to make everything Miele to match. Miele 30 " convection is a lot more expensive than the Bosch. And how many of you have a Speed oven and what do you use it for? Currently, we use a Microwave to heat a bowl of soup, or warm up coffee, or reheat leftovers. We roast a lot of chicken and use a Convection oven..same with fish. We're a retired couple so it's mostly the 2 of us, and wonder how often we'll have a crowd and use everything at once. Plus, we're moving to FL and will have a good grill with a rotisserie, so will have that option too. Also wondering about a plain Microwave +Combi Steam+ Convection set up. But we're thinking that for resale value, we should have a Speed Oven. Can any of you tell me which appliances you use the most and do you have any experience with Bosch cooking appliances? And has anyone out there ever installed a wall oven under a cooktop, rather than buying a slide in or built in stove?

The combi steam is particularly great for breads that you bake and want to add steam to the early stages such as lean doughs like sour dough. It also aids in the rise process for yeast breads. For example I do my second rise to top of pan then put in my combi steam using the below program - I converted to Fahrenheit for my oven: 40˚C 100% humidity 8min 50˚C 100% humidity 4min 180˚C 50% humidity 10min 180˚C 0% humidity 15min at the180˚C 50% humidity stage. Dough has risen way beyond the tin. My rolls get far more rise than not using steam. I made a batch of rolls once and got almost no rise as my yeast was pretty much dead. So I made out the rolls and let them rise for 30 min - which was not much and then baked with the above program and they turned out almost as good as with good yeast. I was pretty impressed. Both the wolf and miele have auto programs for bread which can be useful. Miele details in their user manual what the stages are for their programs so you can start with theirs and tweak if desired.

I just got the wolf speed oven and so far so good. I just did a partial kitchen remodel and got the 36 inch all gas wolf so wanted a smaller electric oven for a 2nd oven or for smaller meals. I also was happy to ditch my countertop microwave. I had space in my cabinets to put the 24" oven in without a lot of carpentry needed. The24" seems to be the same interior size as the 30" model, only the outer casing is different. At first I was a bit thrown off by the fact that the microwave turntable turns even when using convection mode but I've found that with the low riser its great for cakes and pies. They rotate as they cook very evenly. I haven't tried any of the microbake or microroast settings yet and the "gourmet" modes seem sort of silly, mostly just plain microwave.
