Unknown perennial eater

Hello,

I've been putting some new plants in my perennial gardens (who hasn't?). I noticed the morning after planting some violas that one looked droopy and limp. I lifted it to see what was happening and the whole plant came up. It had been cut at the base! A few days later a newly planted lupine looked wilted. I noticed soil disturbance and a hole near it. The entire plant was cut off at the base and roots were gone. Who would be doing this? Do chipmunks cause this type of damage? What about moles? They seem to be selective regarding which plant to attack. How do I go about preventing this in the future? We have a certified wildlife habitat, but I would prefer things co-exist not destroy each other :) We also try to stay as organic as possible.

Any help would be appreciated.
