Newbie! Just made my first jam ever last night!

I made it in 2 batches, good thing because I almost doubled it and I find now that that isn't a good thing lol. The first batch is gelling nicely, while the second one still seems a bit syrupy. The only thing I did different was use 2 different brands of pectin, but both with the same ingredient list. It was Ball original and Sure Jell original. Do you think that could have been a problem? Or is it not really a problem and I just need to wait a little longer?

The good news is all the jars sealed perfectly! I was scared when I heard all that popping, I didn't know if it was a good thing or a very bad thing! An internet search told me it was good, so I went to bed with less stress, lol.

Also, one more thing. Head space, is it from the bottom of the mouth of the jar, where the thread starts, or is it from the very top, to the height of the lid? I did it to the thread and it settled to about 1/4 down from it.
