Pickling green cherry toms, w/o canning

Haven't tried to pickle or make a relish before. Every recipe I find calls for canning. I just want to prepare the mix but not go the canning route. Should I just follow the recipe for cooking and then pour the mix into clean containers and refrigerate? How long before they would reach max flavor? How long would I be able to keep 'em in the fridge? Since some are now turning orange/red can I use these too or just stick with all green toms? Have over 10 lbs, hate to just toss them. Thanx, Carl
