freezing green beans

Hi all --

This summer DH and I grew and then froze lots and lots of greenbeans. Before freezing, we blanched them in boiling water for about 3 minutes a batch. Lately I'm finding when I defrost them, some of them are "slimy" -- as though they have a outer layer that is kind of peeling off. They taste fine, but looks are not so appealin g...

Would freezing without blanching have been better? Should I be blanching for less time -- maybe only a minute?
