storing potatoes in the ground .... eastern washington state

i looked in the archives, put this in the search engine, but, alas ... nada, nothing, zilch ....

the winters in yakima/selah washington are not particularly cold and icy (however our springs are *supposed to be* warm and nice -- this year was not -- finally got the tomatoes in about late may/early june!), so the weather here in yakima/selah, wa is, apparently not predictable and is *ify* at best ....

anyway, how do i store our bounteous crop of red potatoes in the ground .... do i cut off the tops, hack off the tops, forget the tops ... bury the plant, tops and all in straw?

i'm stymied and need some guidance, please ....
