Making homemade Kahlua question

Hello all, Long time no talk.

Here is my dilemna. My husband is seriously allergic to vodka. Like throw up when he kissed his ex girlfriend who had a drank some a few hours ago. Yeah i dont want to repeat that when i drink my homemade kahlua. So we bought some rum. I have been told that would not work and would taste icky because rum has a distinctive taste. Has anyone tried it? Can anyone think of why it wouldnt work? Please send me some advice.

How about staying with the thread about liqueors? There is another very recent thread here that talks about this same subject and other home made liqueors.

Thank you Al. I looked at the ingredients and it listed calcium and less than 2% Mg. It was the closest thing to dolmite I could find at the time and I dont see where is says hydrated lime. its just called pulverized limestone as far as I can tell. I am using your mix so that means I should probably use dolmite and epson salt? BTW, I have read somewhere you say the mix you made is kinda general and we should tailor it to our specific needs if we know what they are. I ask because my wife wants me to dig up 4 roses that I planted last year (sentimental value). Is there something I should do for the roses that would better than just the 5:1:1 mix. Also, how do I know whether to use one part perlite or 2 parts for tomatoes and roses. I will probably use the oildri for the roses since I'm not sure if they will be in a container for 1 year or 2. I've made apple pectin for the first time last August. From what I had read, you want unripe apples to get the best pectin. So that is what I used - unripe apples from my old apple tree. When I get my bushels of apples in the fall, and am making tons of apple sauce, I save the peelings and cores and I make apple syrup. Here is the only Recipe for Kahlua you need In a large pan mix 3 cups granulated sugar with 2/3cup hot water on high heat until it boils, reduce heat to medium, stirring constantly for 3 min. In a small pan mix 1/2 cup instant coffee with 1 cup hot water, bring to a boil, reduce heat and stir 2 min. mix VERY SLOWLY(to prevent volcanic eruption)the coffee mixture into the sugar mixture, on medium heat, stir 2 min. LET COOL TO ROOM TEMPERATURE(to prevent evaporation of alcohol) add 1 pint pure grain alcohol. 1 tablespoon vanilla mix, it will turn a caramel color and then a chocolate brown, mix thouroughly for about 3 min. pour into a large kahlua bottle($35 bottle)(or similar size) fill to top with water, shake well let sit for 24 hours ENJOY !

Thanks everyone. The pie was good... rather tart the first day, but afterwards it got much better. Less tart at least! The whippe cream held up well for 3 days. It was still fine, but I froze it anyway (thanks for the link, Lisbet, saying it was OK to do so). I did whip it stiff (with immersion blender whisk, not enough to do in stand mixer), and I think that helped. I used powedered sugar because I was afraid granulated might give it a gritty texture... I didn't even realize there was cornstarch. Duane... I want to lose a few pounds too. But I haven't baked something in such a long time that I just HAD to... especially after watching that show with Julia Child.

Real Kahlua uses rum(s), so in terms of the "real thing" rum is closer. However the trick would be finding the right balance of rums and that could be time-consuming and difficult. Vodka offers the advantage of being flavorless, so basically the result is a simple coffee liqueur.

The thread Ken mentioned has a recipe for a "Kahlua" that calls for rye. You might take a look at that.

I forgot to mention that Kahlua has a more neutral base, so that would mean a light rum like Bacardi (which is probably why so many homemade recipes call for vodka). The darker rums definitely would have a more pronounced flavor. Which kind did you buy?

How about grain alcohol? Is he also allergic to that?

We bought just some cheaper rum. After finding the liquer posting and your answers about Kahlua originally made with rum we figured we will try and make it tomorrow night. Grain alcohol was another option but i already had a bottle of rum on hand. I will have to let you know how it turns out.

Oh and my DH would like to know how you make the cream liquer.

I have a recipe for Kahlua and you use brandy, will that work??

Kahlua
4 cups granulated sugar
2 oz instant coffee (1/4 cup)
1 pt water (2 cups)
Bring to a boil, making sure sugar is dissolved. Add one vanilla bean cut into four parts. Cool to room temperature. Add to cooled mixture 1 pt brandy. Pour into 1/2 gallon jug, shake well everyday for eight days or more. At the end of 30 days, remove vanilla bean. It's ready to drink!
